I hope everyone had a good Thanksgiving. I did not take any pictures. The food was good though.

I am wiped today too! It's 1 PM and I am still in my PJs. Hooray for lazy Fridays.

Greg went to Maryland early this morning, he is coming back tomorrow so stayed behind. I really hurt my back Thursday night so I think I partially used it as an excuse not to go with all the Cameron stuff going on, I just didn't want to talk about it for 24 hours.

Mom is at work so it's leftovers or me. I took photos of yesterday & will post them later.

Kat, your new tradition sounds like a really good idea.

Janice I have so much turkey left I wish you were closer.

Bethany, enjoy your rental car....

I ended up being really happy I went to my DB's. We ended up having a nice time and the kids had a ball. Emma was a little princess, my DM was holding her so proudly. I have to say I felt very loved, my other five brothers were very supportive and helped me relax...not a tear was shed for a change.

I just finally showered. DS and I packed away all the pilgrims, pumpkins and scarecrows. He is dyiong for the Christmas stuff to go up.

While I'm sorry you hurt your back, I'm glad you found an excuse to get a break. Enjoy your quiet time. I hope your back feels better soon. Looking forward to seeing the pictures. I didn't even take my camera out.

I thought I would share a recent find. 3 hersey flavored kisses in a cup of coffee. almost like starbucks pumpkin latte :thumbsup2 I bet the candy cane kisses are good also.

Tonight is turkey sausage, spaetzel and a salad. Not thanksgiving leftovers but good stuff none the less.

Maria Sorry you hurt your back. Is it really bad or just sore?

Happy day after, everyone! It's been quite a few days, and I'm feeling more exhausted than I thought possible.

Tuesday night, after our first pie night, Alan and I stayed up until 2:00 finishing up the painting and cleaning for dad. He arrived about 10:00 Wednesday morning, and oohed and ahhed over the paint job. Then, he, Timothy and I went to do some Christmas shopping. We went to Macy's and found incredible deals. Dad got a suit for Alan, a leather jacket for my BIL and one for himself, all on sale! The total for all 3 items was less than the original price for the suit alone! After that, Dad found some kitchen gadgets for his staff. Next, a stop at the Disney store to finish up grandkids presents, then we stopped for lunch.

After lunch, we stopped at a grocery store to pick up some last minute things for Turkey day. We also picked up some Stilton cheese with blueberries. It was awfully good! Then, it was home to finish up pies for the second pie night. We made a derby pie, a strawberry rhubarb and a pumpkin with streusel topping. Dinner was tomato soup and then off to pie night #2. It was a lot of fun, and we had lots of yummy pies to choose from!

When we got home from pie night, Alan informed me that he was supposed to bring 4 dozen rolls to work for their Thanksgiving dinner. Of course, he didn't tell me until 9:00 at night! So, I went to work, making dough. Luckily, I have a recipe that allows you to do the first rise, and then put the dough in the fridge for up to 2 days, so I was in bed by 1:00 a.m.

Thanksgiving morning dawned early with a call from Alan's work. They needed him to travel to a cave nearby, where a man had gotten stuck in a passage called "the birth canal". He'd been stuck since Tuesday afternoon, and had passed away Wednesday night. Alan got the "enjoyable" task of interviewing search and rescue, and family members. So, while he did that, I got a head start on some of the things I needed to do. Namely, making the rolls for Alan, starting more dough for our own dinner, and things of that nature.

Dad helped out, and picked up the turkeys he'd ordered. It was amazingly relaxing, not to have to cook the turkey, or make gravy!!! By 3:00 we were ready to eat, so I called Alan to see what his plans were, and he told me to go ahead and eat since he'd be with the family until 7:00. We ate, and had a nice meal! After dinner, the kids went to the basement to play the Wii, and Dad and I cleaned things up.

We crashed into bed around 9:00, and I was so happy to see my pillow. However, I had to set my alarm for 2:30 so I could get the online Black Friday deals. Luckily, before I went to bed, I had bookmarked everything, so all I had to do was fill my shopping cart, and then check out. I was back in bed, asleep by 3:15. Bonus was, that I got everything that I wanted!!! Hooray!!! I may never do Black Friday any other way!

The rest of today was spent relaxing, and getting rid of a raging sleep deprivation headache! I think I'll be going to bed early. Dinner tonight is leftovers, followed by cake and ice cream to celebrate Timothy's birthday today!

DS asked to go to bed at 6:15 tonight. Not like him at all. He sounded a bit stuffy hoping he is not getting sick. His temp was fine. Just hoping he was tired from all the excitement yesterday.

The story is just so tragic! Alan was out there again today. Yesterday, they couldn't get him out because he was stuck so badly. He was stuck around the rib cage. The rescue workers were sent home to be with their own families around 2:00 yesterday afternoon, and came back this morning. Their choices were to cut him out (ick!) or leave him there and blast the thing closed and let it be a memorial. At about 4:00 this afternoon, the family agreed to just leave him there, and the cave will be blasted shut tomorrow during his funeral. I can't even imagine. It's horrible. The really sad thing is that he was in his mid 20's, a medical student, he was married with a pregnant wife, and a 14 month old daughter.

It kind of makes me angry, since it shouldn't have happened. Something similar happened at the cave 5 years ago. It had a happier ending, then, and the authorities wanted to close the cave at that point. However, a local spelunking group fought the closure and won. Tragic!

The year has gone by so fast! I had myself a good cry over it, earlier today. I just can't believe it!

I ended up cooking dinner tonight and tried two new recipes, both of which I would definitely recommend. DH hasn't yet realized he had not an ounce of meat in dinner, either ;)

Spinach Pie with Goat Cheese, Raisins, and Pine Nuts



1/3 cup olive oil, divided
2 cups minced onion (about 1 large)
5 (9-ounce) packages fresh spinach
1/2 cup golden raisins
2 cups (8 ounces) crumbled goat cheese
1/3 cup pine nuts, toasted
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
12 sheets frozen phyllo dough, thawed
Cooking spray


1. Preheat oven to 400°.

2. Heat 3 tablespoons oil in a large Dutch oven over medium heat. Add onion to pan; cook 5 minutes or until browned, stirring occasionally. Add spinach, 1 bag at a time; cook 3 minutes or until spinach wilts, stirring frequently. Simmer spinach mixture 40 minutes or until liquid evaporates. Stir in raisins. Remove from heat; cool completely. Stir in cheese, nuts, salt, and pepper.

3. Press 1 phyllo sheet into bottom and up sides of a 13 x 9–inch baking dish coated with cooking spray (cover remaining dough to keep from drying); lightly coat phyllo with cooking spray. Repeat procedure with 7 phyllo sheets. Spread spinach mixture in an even layer onto phyllo. Place 1 phyllo sheet on a large cutting board or work surface (cover remaining dough to keep from drying); lightly brush with 1 1/2 teaspoons oil. Repeat procedure with the remaining 3 phyllo sheets and the remaining 1 1/2 tablespoons oil. Place phyllo layer over spinach mixture; tuck in sides to enclose spinach fully. Bake at 400° for 30 minutes. Remove from oven; let stand 15 minutes.



Yield: 8 servings (serving size: 1 piece)

Bulgur with Dried Cranberries


Serve this lemony bulgur—an American interpretation of Middle Eastern tabbouleh—instead of the more familiar and expected stuffing.


1 cup coarse-ground bulgur
2 cups (1/4-inch) cubed peeled English cucumber
1 cup dried cranberries
1/3 cup thinly sliced green onion
1 cup finely chopped fresh flat-leaf parsley
1 teaspoon grated lemon rind
1/3 cup fresh lemon juice
1/3 cup extra-virgin olive oil
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper


1. Place bulgur in a large bowl; cover with 2 cups boiling water. Cover; let stand 30 minutes or until liquid is absorbed. Fluff with a fork. Add cucumber and remaining ingredients; toss gently to combine.

Oh my gosh, that's horrible. And on Thanksgiving especially :sad1: Was he just out for recreational purposes and got stuck trying to go through? I can't imagine his poor wife.
