Morning Y'all,

Having trouble sleeping thought I'd come find out what's I've missed all weekend!

Happy Belated Birthday to Jenny and Minnie!!!!!!

And a Belated Happy Anniversary to Sandy!!!

I cooked my bootie off this weekend, did the long version of my chicken enchiladas for DD's 25th bday. I also made spanish rice, beans, guacamole & salad. I fixed sangria & made a wonderful super rich Tres Leches Cake with the 3 milks sauce that the cake is soaked in. The sauce is: sweetened condensed milk, heavy whipping cream & evaporated milk. Topped the cake with homemade whipped cream. Unbelievably rich but yummy! Wish I would have taken some pics, but I was too worn out to think about it!

liamsaunt, Again I am amazed with what comes out of your kitchen!

Gretchen, I know the food review is for Kathy but I'm loving it too!!!:laughing:

I am running a million errands today, also have to give ds a ride to and from school all week as he can't get up and down the bus stairs on crutches. that all being said dinner must quick and easy!

dinner tonight will be cheese tortellini with a super easy and yummy cheese sauce, served with a salad and some garlic bread.
 
Good Morning All! This is a glorious day in New England! It has been years since we had a real Spring, I'm hoping that the weather this weekend and for the next few days is an indication taht this year is the charm ::yes::

We are having a repeat of yesterday's meal. I don't know how to make small amounts of anything so we have plenty. I am making some chicken soup. I cooked the chicken and made the sock yesterday so today it will be easy. Good thing too because my little Angel is home with an upset tummy today. Soup may just fit the bill for her.

DH took enchiladas for lunch, so I guess that will be my lunch too.

I guess dinner is going to be Chicken Taco Salad. I have no idea what else to do with this stuff?.... Yesterday, I'm making this huge batch of enchiladas, I had already made about 18 enchiladas. The first batch using a fresh pack of tortillas, the second batch using a pack of tortillas that were in the freezer (who knows how long?!). While I'm filling & rolling I'm noticing a strange smell. The frozen pack just didn't smell right!! :scared:
You know, that old funky freezer smell.:rolleyes: So I had to figure out where I started with the frozen ones & pull them out & save the filling. Luckily I had plenty enough with the first batch of 12 & didn't have to run out for more tortillas.
But now I have shredded chicken with onion & cilantro & mexican cheeses all mixed up together! I can't think of anything else to do with except salad. I guess I could make more enchiladas & freeze them but I definitely have to wrap them a lot better than those tortillas were!!:lmao: eek:

Nancy, Glad you're having great weather! Sorry that grandbaby is not feeling well! Nana's soup should help!

You could turn them into quesadillas or you could make a kind of pie. I put two wraps onto the bottom of a pie plate, and then add a layer of refried beans, white rice with some scallions ,salsa, another layer of refried beans, cheese and top with the wraps. If you used your filling you could make a yummy version!
 
Good morning, everyone! It's a beautiful day here in Utah. The sun is shining, and the sky is clear. A far cry from the snow we had on Saturday!!!

Dinner last night was so yummy! The maple cranberry chicken was a big hit with all my kids. I'll post the recipe for that, and for the coffee cake. Both were "keepers" to my family!

Tonight's dinner will be Tater Tot Casserole (since I've got the hamburger in the fridge and it's got to be used!), green salad, and ice cream sundaes for dessert!

First things first: the coffee cake recipe!

Raspberry Swirl Coffee Cake

2 C. flour
3/4 C. sugar
2 tsp. baking powder
1/2 tsp. salt
1 egg
1 C. raspberry yogurt
1/2 C. butter, melted
1 tsp. vanilla
1/2 C. chopped almonds, toasted
1/2 C. seedless raspberry preserves, divided
2 Tbs. sliced almonds, toasted

In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg, yogurt, butter and vanilla until blended; stir into dry ingredients just until moistened. Stir in the chopped almond. Pour into a greased 9-inch springform pan. Drop 1/3 C. preserves by tablespoonfuls over batter; cut through with a knife to swirl. Sprinkle with sliced almonds. Bake at 350 degrees for 40-45 minutes or until a toothpick inserted near center comes out clean. Cool on a wire rack 10 minutes; remove sides of pan. In small saucepan, heat remaining preserves until melted; drizzle over serving plates. Top each with a piece of coffee cake.

Day Three (Part One)
Breakfast was again doughnuts in the villa, with DD once again having hers in the Jacuzzi. As I like to tell people, she’s autistic, she’s not stupid. She was certainly smart enough to figure out how to have her Daddy feed her while she soaked in the tub with the jets going full blast. If she would only tell me how she did it. :confused3

Lunch was at Tusker House in AK. I love that place. It is one of my favorite counter service locations in all of WDW. DD had the chicken sandwich – well actually, she only ate the chicken, leaving the bun, and refused to touch the fries. Because of the importance of a complete review, I tasted one just so I could report to you that the steak fries were really, really, good. They were cooked perfectly, crispy on the outside and semi-firm on the inside.

SIL and DH both had the rotisserie chicken with mashed potatoes and vegetables. I didn’t taste his, but DH said the chicken was juicy and had a really good flavor. I ordered the salmon with jollof rice and green beans. The salmon was good but not as good as I the rotisserie chicken I had eaten the year before. However, I really liked the rice. The flavors and textures made it a wonderful side for the fish. The green beans were crunchy and surprisingly good for a counter service restaurant.

DN ordered the chicken drumstick which she really enjoyed and split a cheesecake with SIL. They said the cheesecake was ok, but nothing to write home about. The desserts were a big disappointment for me. Last year, the dessert was a slice of cake, too large for a single portion, but an actual slice of an honest-to-God, real cake. This year, the desserts were the same type of pre-packaged round cake-like things in all of the other CS restaurants. In protest, DH and I refused to order a dessert (and because we were saving room for our dinner at ‘Ohana).
 
Day Three (Part Two)
Dinner was a much anticipated trip to ‘Ohana. We had never eaten there before and since it had some mixed reviews, we were a little nervous. However, we had a great time and were only half-way through dinner when DH proclaimed that we were definitely eating there again. Our server, Elena (hope I am spelling that correctly) was wonderful. She asked almost immediately if the girls would be eating from the normal offerings or if they would prefer something different. DN decided to go with the skewers, etc., but I ordered chicken strips for DD. Elena told me if DD wanted to try any of the other items, she was welcome to do so.

The first courses were brought to us very quickly. We thought the wonton chips were just ok and didn’t really care for any of the dips provided. However, DH and I decided the peanut dip was fabulous on the turkey that was served later.

The salad was good, nice and crisp with a good variety of greens. But the dressing itself was amazing. Even knowing the “good stuff” hadn’t arrived yet, I couldn’t stop myself from eating that salad. I wish I could have taken a bottle of that dressing home with me.

The sweet and sour shrimp were also a big hit. Normally I am not wild about peeling my own shrimp when I go out, but the flavor of these shrimp made the effort worthwhile. DH really enjoyed these and went through the first plate pretty quickly. The second serving was delivered very soon after our request.

The chicken wings were a mixed success. DN and SIL really enjoyed them, but I thought they were just ok. The flavors worked well together, but I thought they should have been cooked a little more. They were done on the inside, but I prefer my wings to have the skin sort of crispy so you really get the flavor of the sauce. DH had no opinion as he was too busy with the shrimp to even try a single wing.

The stir fried veggies were good and the scalloped potatoes were out-of-this-world. I looked again at the recipe for those potatoes to check the ingredients and let me tell you, every single one of those calories was worth it. We cleaned the plate on both servings of those potatoes and didn’t want to order another because we were afraid we would eat those too.

We were full before the meat even arrived, but in the interest of a thorough review, we decided to sample them anyway. The turkey and sausage came first. None of us really cared for the sausage. It seemed dry and had very little flavor. The turkey, however, was the best of all of the meats. It was tender and moist and while good just as served, was phenomenal when eaten with the peanut sauce.

When the pork and steak were served, we were too full to try both, so DH had the pork and I tried the steak. DH said the pork was good and I thought the steak was good as well, if a little more done than I prefer.

For dessert, Elena brought the girls plain vanilla ice cream with sprinkles and brought us the typical bread pudding with bananas foster sauce and ice cream. I will preface this part by saying I am normally not a fan of bread pudding so I didn’t really plan on eating dessert. However, when I saw the look on DH’s face after his first bite, I asked for a taste. I cannot describe how good this was. The bread pudding was firm but moist, the ice cream had just begun to melt, and the sauce was sweet and rich and made me wish I had saved room for more than just a bite. :cloud9:

We left feeling “Thanksgiving Day” full with every intention of returning on our next trip.
 
Tonight is going to be a low carb version of Glynis Pizza Meatloaf Cupcakes. Gotta run and stuff invites...I will check bake with my DIS friends later. Have a great day!!!
 
Gretchen- I have the dressing recipe and have made it at home. It is so good!
'Ohana's Honey lime Dressing
[FONT=&quot]Ingredients[/FONT][FONT=&quot]

1/2 C honey
1 tsp dry mustard
1 tsp salt
1/2 C cider vinegar
1/4 C lime juice
1/4 C diced onion
1 C canola oil[/FONT]
[FONT=&quot]Method:[/FONT]
[FONT=&quot]Place all ingredients except oil in food processor and blend until
smooth. Slowly add oil until it is well incorporated into the
dressing. Makes 2 Cup[/FONT]

I make the potatoes and they are yummy as well. They are the only thing that I know I am making on Wednesday.

The bread pudding is outrageous as well.
 
I have a question. I just checked the recipe for the bread pudding and would like to make it for my DDIL birthday on Wednesday. The sauce calls for rum, which I know that I can leave out, but it also says to flambe the sauce and that it will slightly turn to a candy. DO I need to do this step if I choose not to? I do not want to ruin my flame free success rate by setting the kitchen on fire. I have never made a caramel sauce before so I am not sure if I can take it to the proper stage without the flambe process.

Nancy, I've made caramel sauces before, and I never needed to set it, myself or the kitchen on fire. It probably calls for the flambe to burn the alcohol out of the rum. You just have to cook the caramel slowly in a heavy pot so it doesn't burn, and once it starts to thicken, take it off the heat.

Tonight I am having the leftovers from our Cinco de Mayo dinner Saturday. DSis always makes too much food, and my refrigerator is filled with goodies...including a huge container of guacamole (which I admit, I dipped into last night). Since Caili has skating practice tonight, I am glad to have a yummy, quick meal to come home to after hanging up my chauffeur's hat.

WFD? Grilled teriyaki pork chops, fried rice, and the usual broccoli. I wish I could get my kid to eat some different veggies.

Nancy without the rum it won't flame up. The sugars should carmelized some though. Just cook it a little longer in the pot you make the sauce in.

Thanks for posting the Ohana dressing, I was going to go look it up! Also, thanks for the idea on the "pie" it's sounds yummy. Since I just had enchiladas & Alexis is asking for cake (hey, if I have to get it out for her, I'll have to have small piece!) I think I'd better go ahead with a salad tonight! Even the salad's going to be fattening, I was pretty heavy on the cheese!

Sandy, My enchilada recipe isn't posted. It's one I've had for years written by hand from a friend. I'll have to get it out & type it up for y'all.

I'm guessing Gretchen, because I very seldom weigh anything. The potatoes are filling, I would think at least three people per pound. I doubled the recipe and sliced what I thought was about 2 lbs and with 4 adults and 1 child we had leftovers.
