Dinner tonight was going to be Cowboy Chili, but things changed. DH "had" to go fishing for a work assignment yesterday, and brought home a 6 and a half pound rainbow trout. So, that's what we're having tonight. Except for me! I can't stand trout! I love every other kind of fish, but not trout. I think it goes back to the time my grandfather took us all camping. Early one morning he took all the boys fishing, and they caught tons of trout. When they brought them back to the cabin, they dropped them in the sink. I got up for a drink of water, and found the sink full of flopping, smelly fish. Since then, I just can't take trout. It was a really freaky thing to see in a half awake state!

So, I'm not sure what my dinner will be. Probably leftover Tater Tot casserole.

Kathy, here's the Tomatillo Sauce recipe I promised to type up for you. Note it's my EASIER Recipe!:laughing:

I'll try to scan & post the Braised Pork Tenderloin Recipe later, it's soo good! I don't have a recipe for it, but I've also used this sauce to braise chicken.
The amount of jalapenos I use in this differs greatly depending on the heat of the peppers. I had found that jalapenos I'd been getting were very mild, then last week when I fixed this, I had the hottest peppers ever. I used 1 large pepper & it was super spicy, but good!

Roasted Tomatillo Sauce – Sheryl’s Easier Version

1 lb. 10-12 medium tomatillos, husked and rinsed
1-2 large jalapenos
2 tablespoons olive oil
1 large white onion quartered
Small head of garlic
2 cups water or chicken broth
Cilantro 2/3 cup chopped loosely packed or to taste
Salt


Place the tomatillos, jalapenos, onion and the head of garlic on a baking sheet. Splash with olive oil, roll vegetables around in oil to coat. Place baking sheet under broiler until tomatillos are darkly roasted, even blackened in spots. I turn them often with tongs. They should be very soft; Garlic will probably take a bit longer than the other veggies. When all are roasted, let cool. Remove stem from jalapenos. If you like a little less heat remove seeds also. Squeeze garlic from the head into blender or processor. Transfer everything (but one of the jalapenos) to a food processor or blender, being careful to scrape up all the juices from the vegetables. Process mixture until smooth. Adding a bit of water if necessary, to blend. Taste for jalapeno heat, add second jalapeno if needed. Season puree with salt.

Heat oil in large deep pan. When hot, add the puree all at once. Stir until noticeably darker and very thick, 3 to 5 minutes. Add the water or broth, and about half of the cilantro. Simmer, stirring often, over medium-low heat until flavors mellow and consistency thickens enough to coat a spoon (but not too heavily) this will take anywhere from 10-30 minutes. Taste & season with salt, if necessary. Keep warm over low heat. Garnish dish with remaining cilantro.

Serve under Corn Flake Crusted Fish.
If using for a braising sauce for pork or chicken, add lightly browned meat after adding water or broth to pan. For Braised Pork Tenderloin, using an oven safe pan, transfer covered pan to 325 degree heated oven. Cook approx. 30 minutes until pork registers 145 degree on meat thermometer.

Glynis, We don't have rainbow trout around here. But fresh speckled trout is the best fish ever! I wish I could come to your house for dinner! I'd gladly eat your portion of the trout!:goodvibes
 

Kathy and Sheryl--Ok, ok--here are some details!;) Friday was just airport food. We didn't get to our hotel until 12:30am, so not much time to enjoy the Disney food. On Sat. we headed to the race expo over at WWoS and then enjoyed watching DSIL's boyfriend's team win a softball game. We then headed back to the pool (we were at All Star Sports this trip). Since we were just at the pool, we got food court burgers--not the best--but easy. Then we headed to DTD to meet up with some Diser's. It was time for dinner, so we decided to try Raglan Road, no.1 b/c we hadn't eaten there before, and no.2 b/c you didn't need a ressie to sit outside. They have a nice selection of Irish beers on tap as well as a neat specialty drink menu. The food is authentic Irish pub fare. Phillip, our CM, gaveus the lowdown on the owners and the history of the restaurant. Per his suggestion, I had the Paddy's Pork. Really yummy--a nice piece of pork on mashed potatoes with leeks. I don't remember what was in the sauce, but it was very good. DH had the portabello burger. It was also yummy and the fries were really good.

Sunday was race day--so it was an early morning. No time for a proper Disney breakfast--after the race we hit the McD's drive through--got to maximize park time. We spent the day wandering EPCOT and MK until the thunderstorm came. As we were waiting out the storm we went into the ESPN club at BW and had some nachos and beer. Pretty tasty, for bar food. Then it was my night at World Showcase. I started with France, a lemon tart from the Pastisseire (sp?) and a Grand Marinier Orange Slush from the wine cart. Let's see, then we walked through most of the countries' shops and ended up in Mexico where we got a fiesta margarita in honor of Cinco de Mayo. Then back to Germany for some true german beer--Love the Spaten Optimator. And then we picked up some Sushi in Japan. We watched Illuminations while chatting with another Diser and then headed to Jellyrolls to round out the evening.

Monday morning we met up with some more Disers for breakfast at Spoodles. I ahd the Italian--it was 2 poached eggs on focacia with Italian sausage, peppers, onions and parmesan. Yummy! Then it was time to head home!
 
Thanks Steph! I've heard a lot about those slushies in France, can't wait to try one myself. Spoodles must have a new breakfast menu, I don't remember seeing that egg dish, sounds really good.

Did you just happen to run into DISers or was it planned? The whole week I was there I didn't meet one and I looked for lime green anything!:confused3
 
Kathy-The meets were all planned. We met a bunch of Diser's b/c of the Minnie Marathon on Sunday. We had all been "chatting" via the WISH board and set up a meet at DTD, Jellyrolls, and Spoodles. At EPCOT I had planned to meet another Dis friend of mine; our plans just happened to overlap that day. Oh, and that slushie was yummy! I didn't share a drop!
 
The weather is beautiful here today, so I am definitely grilling. I picked up hamburgers and sweet Italian sausages at the store, but I haven't decided which one I feel like making. Either one will generate complaints...DS doesn't like hamburgers and DD doesn't like sausage...so I will probably make macaroni and cheese to appease whichever child is offended by my grill selection. Vegetables will be eggplant sticks and salad.

Tonight's dinner is going to be Kathy's pork chop recipe (forgot the name - sorry Kathy); the one with cream of mushroom soup, etc. I'm not really sure what sides, any suggestions Kathy?

That sounds like a great weekend! We wanted to hit Raglan Road on our last trip & just couldn't fit it in. It sounds great and I just love when you get a friendly CM who gives you all of the lowdown. The food sounds really good, did y'all try the beer?

That evening in World Showcase!:thumbsup2 :cool1: Now you're talking my language! I think a snacking, drinking, window shopping stroll around World Showcase is my absolute favorite thing in all of WDW!!! :cloud9: We never miss getting a beer in Germany, we'll always get whatever dark beer they have to offer! But I haven't tried most of the things you had. In the French bakery, I can't pass up chocolate anything. And I really like wine & champagne so I haven't tried the frozen drinks. I really had good intentions of doing just that on the last trip, but I get up there & can't pass of the Champagne Kir!

Ohh, now I really want to go back now!

Tonight I'm grilling japanese eggplant, zucchini and summer squash. To go with the grilled vegetables I'm making herbed basmati rice. (an Ina Garten recipe and so good!)


ETA: Oh my goodness I almost fell out of my chair when I saw the picture of the magic shell and rosa regale above my post! haha! :rotfl2: I love it! :lmao:

DF tends to be compulsive and will study things til he knows the ins and outs of things...kinda like him taking RC cars apart on my dining room table and putting them back together!!!! :lmao: I hate dealing with computers and tend to act really dumb if something goes wrong...then again, I do not have any trouble acting dumb!!!! :) :) :) :crazy2:

All this info from Steph and Gretchen is making me anxious to get to Disney...Lori will be back soon and we'll get some info on the chocolate shell too! :)

I can't wait for DF to come home so I can take pics of my invites...we are going to have pics taken on Friday for a signature pic (its a 5x10 with a large border and guests will sign it at the wedding). I hope I can find a way to post it for you guys...we are having it taken on a rock by the babbling river...:). I cannot believe how close we're getting!!! :)

Well, if I could figure out a way to get it to you, I would send it!

This fish is HUGE!!! It's flesh is quite pink, like a salmon, so I'm going to try to convince myself that it's really a salmon.

Thanks I missed chatting with ya'll! And I'd love to take credit for being the pervert you think I am- but the positioning was purely an accident! Rick was embarrassed at having to hold it for the pic!

And if the bag checker from Epcot ever comes here (I gave him my DIS card so he could find it) thanks for not asking anymore qustions than you did! And the chuckling as I was putting my bag back together got me giggling:rotfl2:

And for future reference- Magic Shell only gets hard on ice cream, not very cold fruit and definitely not on persons.
