What's for dinner? Was it "budget"?

Tonight we are having boneless skinless chicken tenders on the grill with BBQ sauce, a box of Stouffer's mac and cheese (same stuff they serve at Liberty Tree Tavern :love: ), buttered peas, and pickled beets.
 
I am so glad this was resurrected...I can't wait to hear everybody's meals when it's hot....it was so dang humid here (hovered between 50 and 89%) that I can't imagine making anything and it's supposed to get up to almost 100 this weekend....BLECH!
 
we had leftover food from my nephews grad party.
-meat
-rice
-beans
-salsa

We had carne asada(BBQ's flap meat) I cut it into small pieces and added lemon pepper and warmed it up . We made mexican tacos with the meat, lettuce, shredded cheese and salsa. sides were rice and refied beans yum!


I'll just list everything because i might not have time to do it each day

family pack of chicken breast -will make 3 meals:
meal 1-chicken taquittos with guacamole
meal 2-shish ka****s, rice o roni rice pilaf and corn on the cob
meal 3- need ideas

beef chuck roast 2 maybe three meals
in crockpot. seasoned with grinded pepercorn, garlic salt, meat tenderizer, chili california made into a paste, fresh garlic and water. it will cook until it shreds

meal 1- shredded meat, rice and beans
meal 2-sopes topped with refied beans, meat, shredded lettuce , cheese and salsa
meal 3- shredded meat, beans and cheese burritos

Porkchops
seasoned (any ideas/tips)
with side of scallop potatos, green beans and a salad

ground beef
hamburgers with fresh homemade fries

also bought stuff for sandwhiches, juices, breakfast:french toast, waffles, eggs a, juice plus bread and milk a few extras too.
 
Our local grocery store chain (Jewel-Osco) usually has at least one meat on a buy one, get one free sale each week, and since my husband is on a low-carb, high-protein diet, we use a lot of meat! This week it was boneless, skinless chicken breasts, which he cooks on the stove in a covered pan with a little oil -- very tender and juicy compared with baked, but not as bad as fried. So we've had those twice. They also had Butterball turkey burgers BOGO, so I am going to put those on the grill tonight. We'll see how that goes over. I'm guessing that the almost-3 year old will like them, the 13 year old will complain that they look funny, and the grown man will whine about them. But they were BOGO, so we're eating them anyway! :P
 

Tonight is homemade lasagna. Not terribly economical, but everyone enjoys lasagna, and homemade is tastier and better for us then the frozen in the box kind.

I am going to guess-timate costs: About $4 for ground meat (tonight ground beef, but can also use ground chicken or turkey or sausage... have even used veggie meat replacement hamburger-substitute), about $3 for spaghetti sauce, $2 for a container of ricotta cheese, $5 for mozzarella cheese (SO spendy :( ) and about $2 for a box of lasagna noodles. So about $16 for a big pan, and we'll have lots of leftovers. That's do-able. :thumbsup2
 
Ohmygod! Dinner was delicious! I made shrimp with sugar peas and mediterranean couscous. I made a glaze(soy sauce, apple juice, sugar and honey) and tossed in the shrimp and sugar peas. Then grilled it and served over the couscous. I was absolutely delicious!

$7 frozen shrimp
.50 mediterranean couscous
$0 sugar peas(from my brother's garden)
$7.50 total
 
It is pasta night for us and super cheap too:thumbsup2

I am roasting cherry tomatoes (out of my garden) in the oven with garlic, basil, and oil olive until they pop. I'll serve this over whole wheat pasta with grated parmesan cheese. I think there is some frozen garlic bread in the freezer. I know there is leftover angel food cake and berries for dessert.

Tonight we are having stuffed peppers. Probably not the cheapest meal, but it sure is yummy and DH will have lunch tomorrow.

My boys and I went to lunch at the Japanese Hibachi restaurant. We used a gift certificate that my DS9 won there when we went for his birthday. (he got to spin a wheel to win a gift, and ended up winning the best gift on the wheel...a $30 gift certificate!!!). Lunch came to $42 with tip, so only $12 out of my pocket for the three of us, and we are STUFFED! No dinner tonight...maybe some cereal or a pb&j if they get hungry.
 
Last night we had pot roast, potatoes, carrots and onions in the crock pot - $16 total for everything.. we have enough for leftovers tonight.. so $8 each meal for 5 of us is pretty good I think.. and its yummy!!
 
All the ideas here sound great! Does anyone here have a recipe to make tuna patties/burgers? :stir: I know I read it on one of these boards, but can't remember which one.:surfweb: Thanks in advance. Keep the good ideas coming!
 
We are grilling another of the $1.99/lb London broil steaks we stocked up on last month - it is a 2lb+ slab of meat that cost us just over $4 and five of us will eat royally tonight and have leftovers for salads or wraps tomorrow. I'll throw on some Minute rice and open a can of corn and maybe a bag of salad, and all of us will feast for less than $7 :)

tonight is BBQ chicken sandwiches. I put two frozen chicken breasts in the crockpot this morning with some BBQ sauce...($3.00 for chicken /BBQ sauce .79)
Nice loaf of fresh french bread $1.00
coleslaw for topping for the sandwich $1.50
bag of potato puffs (dh and I love these! ;) ) $2.00 seasoned with onion powder, garlic powder & seasoned salt.
chilled pickled beets $1.00
 
I have been off my "weekly menu" so tonight we had grilled chicken breasts, rice/chicken broth, and creamed corn. We are also having a movie night w/make your own sundae:

$7.00 w/chicken left over for a lunch this week. This is the kids last week of school so its a challenging one for us!

Do you marinate ( i cant spell) your chicken in anything before you grill them? A friend told me about putting them in itallian dressing for a couple hours.

When do your kids go back to school?
 
I try to marinate my chicken. I used to use italian dressing, but I got bored of it really quickly and found that it wasn't all it was cracked up to be. I often do a mixture of soy sauce, teriyake, pepper, garlic and onions. Sometimes I do a bbq rub with a little bit of olive oil.

This past weekend, I did a marinade with fresh herbs, like a fresh italian seasoning mixture.
