What's for dinner? Was it "budget"?

My marinade is a quick marinade - Only needs 2 hours, never used for more than 4 hours though...

1/2 cup olive oil
1/2 cup low sodium soy sauce
2 tbsp spicy brown mustard
2 tsp garlic powder
1 tsp black pepper
1/4 cup lemon juice
2 tbsp liquid smoke

(6-8 boneless skinless chicken breasts)


Chicken is a wonderful golden brown!!::yes::
 
Tonight is Meatless Monday here, so it's Black beans, rice and salsa. I made this one day on a whim and my dh loved it so much its all he talked about for weeks, it really is nothing special.
 
I wanted to post a few recipes that my family enjoys and they are inexpensive. I know several of you post that you have leftovers for the next day. Sometimes we do but other times we do not do yall make double for that reason. My family consists of myself, dh, dd(13), ds(18) dh works nights so he is not here for our supper time but I fix him a plate and he has leftovers when he comes home.

Taco Soup
1 lb ground meat
1 (15 oz) can of ranch style beans
1 (15 oz)can of whole kernal corn (I use mexi-corn either one is fine)
1 (15 oz) can of stewed tomatoes
1 (15 oz) can of hominy
1 pkg of taco seasoning (any one orginal, mild or hot)

Brown meat and drain; add remaining ingredients. Simmer 30 minutes to 1 hour until hot.

I them make a pan of cornbread this makes extra for anothers days meal or can be doubled and frozen.

Hamburger Macaroni
1 lb. ground meat
1/2 cup light miracle whip
large jar of spaghetti sauce(any flavor)
7 oz. package of macaroni ( or any type of pasta will work)

Brown meat until done and drain, cook pasta as directed. Add pasta to the meat mixture, mix in spaghetti sauce and miracle whip, cook until heated then you can top with grated cheese.
Serves 4-6 people

My dd does not like this to much when she found out about the mayo she says yuck, but you cant taste the mayo ( i cant) it gives it a creamy texture.

Almond Chicken
4 chicken breast or you can use the boneless skinless chicken breast strips
1/2 cup sour cream
1 pkg. ritz crackers ( crushed)
2 cups cooked rice
1 can cream of chicken soup
1 can cream of mushroom soup
1 stick butter
8 oz. package almonds(opt.)

Cook the chicken until done them break into small pieces. Mix the chicken with soups and the sour cream. Cook the rice and cover the bottom of a 9 x 12 dish. Spread the chicken mixture over the rice, top with the crushed crackers and almonds. Melt the butter and pour over the top of the crackers and almonds. Cook at 325 for 40 minutes.

My dh, and kids do not like the almonds so I usually just put them on one half of the dish or do not put them at all.

I hope yall will enjoy these recipes :) I am not sure how much they break down as far as cost but I dont think they could be that expensive most of the ingredients are items I think most of us have on hand normally.
 
Do you marinate ( i cant spell) your chicken in anything before you grill them? A friend told me about putting them in itallian dressing for a couple hours.

When do your kids go back to school?

I like to use Good Seasons Italian dressing mix. But, any italian dressing would work fine. Especially a bottled dressing, no mess or mixing required. I put the chicken in a ziploc bag and pour the dressing in making sure to coat the chicken. Don't let it marinate for more than two hours. The acid(vinegar or lemon juice) in the dressing will kinda cook the chicken. If it is marinated for too long, the chicken breaks down and becomes mushy.
 

Tonight we are each having a huge salad, mostly greens with a splattering of cheese, croutons, and grape tomatoes, and grilled chicken breasts (salad, croutons, and chicken all bought in large bags at Sam's Club). My total is about $6.00-$7.00 for the whole meal, depending on how much cheese DH eats. Not bad price wise, and good eats as well! :goodvibes
 
Turkey Pot Pie here. It's still cool enough to use the oven. Turkey is leftover from Easter(last 2 cups), 2 potatoes, 2 carrots and topped with pillsbury crescent rolls. Total cost $6.00 for the 6 of us. Also made banana bread for dessert and school snacks, 2 more days!!
 
Tonight is my stand-by dinner, nobody has complained yet....

Mock Stroganoff
Garlic Mashed Potato
Rice
Green Beans
Mandarin Oranges

Total around $4.50 family of 4....

Last night we had roast in the crockpot. I just use a packet of Lipton Onion soup over the roast, and a little water . Let it cook all day on low or (if it's big I'll put it on high for a few hours and cut it back to low for the rest of the day). Delicious every time! I added potatoes and I usually add green beans too. I forgot the grean beans yesterday. So we had baked beans instead.

Tonight we had leftovers and I added corn on the cob. Finishing up the blackberry dump cake with vanilla ice cream tonight too. Yummy! :)
 
Tonight was:

1 pkg Little Smokies @ 2.67
1 5 count can Grands Biscuits @ 0.85
1 can Baked Beans @ 0.98
1 can Corn @ 0.47
1 quarter watermelon @ 1.25
(I added a small amount of shredded cheese to the biscuit rollups - with Little Smokies inside - and a small amount brown sugar and ketchup to the beans).

Total = 6.22 - Not bad for four people! :yay:
It's not my husband's favorite meal but my kids sure loved it!
 
Tonight is baked chicken drumsticks cooked in just a little butter and some Johnny's seasoning salt. Baked potatoes with all the toppings, and a couple of cans of corn. Also probably will serve some raw baby carrots with ranch.

One of my eldest DD's best friends is spending the night tonight and she is a VERY picky child. This is one meal I know she will actually eat.::yes::

Hello All! Its been a looong time since I have made a post... The end of the school year is always sooo stinkin crazy! This is the first night in 2 weeks that we havent had anything going on - but only because my softball game was rained out!! :cool1: I am soo ready for summer vacation! School is out tomorrow!! :thumbsup2 Yippee!!

Anywho - we had sub sandwiches tonight for dinner. Dh is coming down with soemthing and I just wasnt in the mood to cook a big meal. 1/2 lb baked ham - $3.00 1/2 pk Bulkie Rolls - $1.50 some lettuce, pickles, a few squirts of mayo, and tomatoes - maybe $1.50 .... about $6.00 for 5 of us. So I would say thats pretty budget!!? and stll enough left for a nother meal this week or for lunch!!??
 
Tonight's dinner was scrambled eggs, toast and a ham slice(for DH).

.50 eggs
.50 cheese and onions
.25 toast, butter, Mom's homemade strawberry freezer jam(yummmy)
1.00 ham slice

2.25 total
 
Well, DH had scrambled eggs and bacon. I made myself a BLT.
Eggs- nothing; we have 8 hens!
Bacon- 2.00 (Food Lion store brand-thick sliced)
bread- thrift store- probably 5 cents worth
tomato- free- garden kicked in this week!
ice tea- 5 cents? I make a gallon of sun tea daily with 3 family size teabags. Oops- use Splenda to sweeten. No clue but that definitely ups the ante!

Well it didn't start out budget as I spent about 40 bucks this weekend. I fired up the grill and as long as I'm grilling I like to do lots then freeze them for upcoming meals.

Sat was steak or chicken, rice a roni, grilled zuchinni, and beans.

Night before last was burgers and (left over) beans.


Last night was hot dogs (Hebrew National low fat) mac and cheese and (leftover) baked beans or chips.

Tonight will be steak and chicken or a burger and veggies since we skipped two days of veggies.

We did hamburgers for lunch yesterday and hot dogs for lunch today.

There is also in freezer two packs of steak and one of chicken.

Gee talk about protien overload....I'm thinking spagetti or spinache enchiladas for the latter part of the week. LOL
 
Tonight we had kick *** cheeseburgers on the grill, cheese-brocolli rice and rio grande vegetables.

$2 burgers(soy sauce, minced garlic, garlic powder, salt, pepper, minced onion, parmesan)
.50 rice
.50 vegetables
$3 total and there is a leftover burger for DH's lunch tomorrow
 
Tacos with black beans and corn

Meat - 2.50
Cheese - 1.00
Taco kit (tortillas, salsa) - 2.00
Black beans - 1.00
Corn - 0.75

Total - 7.25 for the 3 of us but there will be tacos left for DDs lunch tomorrow.
 
Not tonight. :(

I packed all day today. I am exhausted. We went to McDonald's after dropping off the dogs for *their* vacation.
