What’s for Dinner Tonight?

I think some chicken and rice . . . maybe. Either that or a frozen pizza. I was painting some repairs to the outside of the house today and my back and shoulders are sore, so I have no desire to cook anything that I have to stand at the stove and babysit. I want to put it on to cook and get back on the heating pad . . .

Tonight we are having pasta (from the farmers market), sauce (I canned), meatballs (premade before the holidays and froze), salad (greens from the farmers market), and crescent rolls (tube left from the holidays)

3 days in a row of mostly using what I have in the house. I really want to get the freezer cleaned out. Hoping to do an inventory this weekend.
 

We've got a pack of hamburger meat we need to use, but I'm tired of the same old, same old (spaghetti and tacos). So not sure what we'll do with it. It's only 1 pound, so not enough to make a meat loaf.
If you have rice and vegetables… it’s the perfect ingredient for a ground beef bowl Chinese style!
 
Originally we were supposed to have Instant Pot Caldo De Res (Mexican beef soup) from the Skinnytaste High Protein cookbook but it turned out to be a lengthy preparation. I started making it at 3:30 and it's still not done so we pivoted and had salmon, zucchini and potatoes. I will finish preparing the soup tonight and it looks like dinner will be all set for tomorrow! (so much for "instant")...
 
Tonight we had dinner at Terralina at Disney Springs. The food was really good! I have heard it called "Disney's answer to Olive Garden" but we disagree. DH had bolognese and I had shrimp scampi, and both were well prepared and tasty. I think for the prices they should serve a small salad with the pasta meals, but given the location, I guess the prices are to be expected. Two entrees, two cocktails, and one tiramisu came to about $110 with the tax. Glad I had a gift card! All in all, the food was really good and we'll go back sometime.

Thats awesome. I’ve heard good things about it. But we always seem to end up at The Boathouse on our trips.

That said, Olive Garden is about $80 for two entrees, two glasses of wine and a dessert nowadays, if not more, after you leave a tip.

So your price isn’t too bad, and the scenery was probably better being at Disney Springs.

Had a slice of the crustless quiche tonight. Made it in a rectangular casserole dish that I divided in half with a dam made of foil. That allowed me to change the ingredients from one side to another. Had a piece with Gruyère, ham and leek + tomato confit.
