What's for dinner? Was it "budget"?

we have had it odd here in the west...that weather is coming here tomorrow:( ....after 90 today (it's actually supposed to be about 60...but still!!). I hate the extreme weather changes and can not wait for it to even out!!

No snow here, but lots of rain and very cold wind.....I think you don't have to go very far up in the mountains to hit the white stuff.

The craziest dang weather I've ever seen. My kids had their last day of school today, needless to say they had all of their activities indoors.....:(

We are having corn dogs and mac and cheese. Not at all nutritious, but warm and filling AND budget (the corn dogs are the big box from Costco) The fact of the matter is, we have been too busy to grocery shop and now we are kinda waiting on my next paycheck, so we've been combing the cupboards and freezer pretty deeply, LOL! When we hit wall, we'll know we have to go shopping!
 
DD13 has a softball game at 6:00 today so no time to cook.
We will have left overs from earlier in the week:
1/2 pizza, salad
2 brats, potato salad, salad
Spaghetti with hidden veggies, salad, garlic bread
First come first serve!!

Things are a little better here today. We still have snow on the ground, but now its raining instead of actively snowing. Still cold, 38°, and there is a nasty wind blowing. Here's a couple of pictures taken in my yard yesterday afternoon. Ignore the date on the pictures, the date function on my camera is messed up and I'm not technologically-advanced enough to figure out how to fix it. ;)

To make this post slightly on-topic, I am making hamburger-vegetable soup for dinner... nice and warm and comforting.
 

Last night we had:

Chicken Tenders- 3.00
Mashed Potatos- free w/q
Carrot sticks- .50

Total-$3.50

Tonight:

Pasta Salad - .49
Strawberries- 2.00
Corn on the cob- 1.00

Total- $ 3.49
 
Spaghetti made with the remaining half pound hamburger from yesterday's tacos.,

garlic bread from buns beginning to get stale.

should be about 2.00 for at least 6 servings!

I live in Eastern Washington, and the weather is so insane!!!!!!!
It has been cold, no snow here just pouring down rain at times. On Monday while I was at school it was raining so hard you could hear it pounding on the roof!!!!!!!!!
Mind you, I live in the desert (well amost, we are the desert oasis lol) and I want my dry 100 degree weather!!!!!!!!!!!!!
Yesterday it was 55 WTH?? It would normally be a 96ish or higher by now.
At 3 am i turned on my heater, yep you heard right. I turned on my heater in June.
 
Sorry so many people are having weather woes. Extreme temps are no fun. :(

Tonight we're having pancakes and bacon, with apples and yogurt dip on the side. I may make some banana pancakes (I have some bananas in the freezer). I have a head ache that won't quit. Hoping the tylenol will do the trick before too long.
 
Last night we ate out.

We went to Jason's Deli (LOVE that place with their free muffins, crackers and free ice cream!)

I had a free kid's meal ticket, so DH and I shared a large meal and we got 2 extra kid's meals. No adult drinks.

Total was $13 for a family of 5. :thumbsup2

We don't normally do that but we were out running errands and it was already 7:45.

Tonight is chicken from the crockpot and rice and salad.

I made meatballs today, so part are for tonights dinner and I froze the rest..

Salad or Fresh fruit - leftovers

Dinner for 4 $4.50 w/ leftovers for 1 lunch...
 
I have a bit of running around to do tonight, so I hope I'll be able to make what I had planned on making: zucchini and red onions, sauted with garlic and olive oil, and tossed with bow-tie pasta and feta cheese. If I don't get to it today, it will be dinner for tomorrow!
 
Tonight is enchiladas with spanish rice.

I"ll make one pan of bean enchiladas for DH and one pan of bean and cheese enchiladas for everyone else.

I'm not sure what it breaks down to.. but, probably around $4-5. There will be leftovers.
 
I have a bag of frozen meatballs and have no idea what to make.
Can I get some suggetsions?

I like to make spagetti and meatballs, and meatball subs. Just heat up the meatballs, mix with sauce, and put on some bread (or in with some pasta). YUMMY!
 
How about meatballs in the crockpot with BBQ sauce? Swedish meatballs (add a can of cream of mushroom soup and cook in crockpot, serve with rice or noodles).

Those are my favorite ways to use meatballs as well, although when I do them in BBQ sauce, I usually do them in the oven instead of the crockpot. I just like how they turn out better; the BBQ sauce gets a little more concentrated and carmelized. Also, when I cook the meatballs in the cream-of-mushroom in the crockpot, I stir in some sour cream right before serving... I like the added sour cream flavor and richness. My family also like me to add some extra mushrooms to the mix while cooking - the are all fungus freaks and think there aren't enough mushrooms in the soup. Bleh - I am not much of a 'shroom fan, but I usually suffer through for them. ;)

Another favorite in my house is to mix the meatballs and spaghetti sauce with some cooked pasta, usually ziti, and a LOT of cheese, then bake in the oven. Last time I did this, I mixed the spaghetti sauce, pasta, and meatballs with some mozzarella cheese and put a layer of that mixture in a dish. Then I mixed some ricotta cheese with some herbs and one beaten egg and layered that over the pasta mix. I put the rest of the pasta mixture on top of the ricotta mixture and topped the dish with more mozzarella and some parmesan, then baked it till everything was hot and melty. Turned out really well, kind of lasagna-ish, but easier. :)
 
No it wasn't budget. Had a batch of turkey stew ready to go.

DD and her boyfriend (soon to be fiance) were trying to choose a restaurant. We got into the discussion and ended up inviting ourselves to join them and pick up the tab. So, it was dinner for four at a local favorite he'd never eaten at.
