What's for dinner? Was it "budget"?

I didn't actually make it, a friend of mine made it and gave me a couple of jars at Christmas. She says it's just peeled and pitted peaches with a little ascorbic acid added to keep them from turning a yucky colour, processed in the food processor so it's still a little chunky, and then canned (in a water bath). I have also seen jars of peach puree or sauce at Trader Joe's which would probably be very similar.

It's good on ice cream too but we mostly use it in baking.

We're having sausage, broccoli and cheese quiche, with banana bread and red grapes. :) I'd guess it was around $10 total.

Oh and Limeaide to drink! I love the stuff! I got the concentrated freezer lime drink (.99) and added double the water. Still sweet enough for us and so refreshing!
 

I am having leftovers of the pork tenderloin from last night (I told my family they would see it again! LOL!:rotfl: ) in tortillas with salsa and cheese with black beans. DH is taking DD7 to see Kung Fu Panda after dinner while I am at my book club meeting so I guess they will be having popcorn for dessert!:lmao:
 
Boy did DS9 and DS1.5 love the scrambled eggs with SPAM!! DS9 ate 2 helpings! DS5 ate his fare share of eggs w/o SPAM of course, but he ate 5 sausage links himself!! I can only imagine what breakfast will cost me down the road - 3 kids under the age of 9 polished off 9+ eggs, a package of breakfast sausage and a can of SPAM with nothing to spare!! DH is working late, so he will have to fend for himself when he gets home!! Defrosted pork chops on the grill for him and leftover pasta salad from my parents anniversay party yesterday - married 40 years!!! Thats impressive... :thumbsup2
 
I haven't posted in awhile but tonight the girls had english muffin pizzas and I did the great red beans in the sloppy joes leftovers...it was scrumptious:goodvibes

Tonight we had:

Quesadillas made with chopped tomatoes, sauteed onions, and a spread that I made by mixing together 1 can of black beans (drained and rinsed) with a mostly-full jar of black olive tapenade and pureeing it in the food processor. (An idea I got from a vegetarian cookbook I borrowed from the library and thought I'd try since I had the tapenade in the fridge and I always have cans of black beans around.) I have one of those panini presses so I put the quesadillas in it and they came out nice and crispy. The spread was very tasty and I have plenty left over to use as a dip for snacks the next few days.

Spicy sweet potato fries (just slice sweet potatoes like french fries, mix in a large bowl with a little olive oil and spices - I used black pepper, cumin and coriander, when my son makes them he adds a little curry powder) then bake on an oiled cookie sheet at 425 for 20 minutes, turn, and bake 20 minutes longer. These taste great and are much healthier for you than regular fries.

Plus salad - mixed spring greens, cherry tomatoes, celery.

We were too full for dessert. Maybe we'll have some fruit later.

Hey just FYI.

Make sure that you are washing your produce well. They've linked a samonila outbreak to large tomatoes (roma,plum and large red). They are investigating the source, but even McDonalds and Walmarts (neither of which were the source of the bad tomatoes) have pulled them.

They basically said avoid lagre tomatoes (grape and cherry ones were okay), and to stay away from salad bars for a while till they identify the source.
 
Ha! I'm immune to salmonella, so bring it on...

(It's true, I am. I was raised on a farm where we had a lot of chickens - free range chickens - and later was in a study where they were studying children in rural communities. They found that 100% of us who had chickens had high levels of antibodies against salmonella. So I worry about e.coli and stuff like that, but salmonella.)

Hmmm..that must be why DH couldn't get tomatoes on our Subway subs last night. He said something about a health warning sign in the window.... Ah, well. They still tasted good!
 
Tonight we had marinated grilled chicken breasts, sliced and served over salad. I also made a fruit salad. It's been so terribly hot here, nobody really feels like eating anyway! Light dinner was the way to go!

Tonight we're having chicken and cheese quesadillas (cooking the chicken in the crockpot). I'm following Marcy's lead and making a fruit salad to go with it.

We are also having a heat wave. Don't want to cook or eat!
 
It is 10:20 AM on June 10th. 10 days till the official first day of summer. 25 days till the 4th of July!! And it is snowing. :scared1:

35° and snowing!!! Snowing HARD! The snow is STICKING! I went into WalMart this morning, came out an hour later and had to clean an inch of snow off of my car!! :cold: I am SO over it... I can't remember when we have had such a long run of rotten, cold, wet weather during the spring months. And my poor kiddos were supposed to have a 1K run, a picnic, and a carnival at school today to celebrate the end of school. :(

I don't know what we are having for dinner tonight... I am too disgusted to care. I took out some chicken breasts, so I will cook them somehow... maybe just in the oven with BBQ sauce, that's the kids' favorite way. Maybe some parmesan noodles or alfredo noodles on the side, and a veggie. Probably a salad too, as I have some produce I need to use up.

Tell ya what, let's make a deal... I will do my best to shoo some of the cooler weather your way (look out, I'll be the one throwing snowballs :duck: .. OK, that's a tomato, but there is no snowball-throwing smilie. :rotfl: ) and in return, you fan some of the heat up our way... we could sure use it!

Omgosh! I wish I could bottle our weather and send it to you! It's like 97* here, with the heat index up over 100*....it's HOT HOT HOT!!
