I didn't actually make it, a friend of mine made it and gave me a couple of jars at Christmas. She says it's just peeled and pitted peaches with a little ascorbic acid added to keep them from turning a yucky colour, processed in the food processor so it's still a little chunky, and then canned (in a water bath). I have also seen jars of peach puree or sauce at Trader Joe's which would probably be very similar.
It's good on ice cream too but we mostly use it in baking.

I am SO over it... I can't remember when we have had such a long run of rotten, cold, wet weather during the spring months. And my poor kiddos were supposed to have a 1K run, a picnic, and a carnival at school today to celebrate the end of school.
Sunshine is predicted by Saturday, we just have to make it till then. *sigh*
.. OK, that's a tomato, but there is no snowball-throwing smilie.
