Hi everybody! :wave: Time for me to fess up. I've been sneeking in here and snagging recipes from you guys and didn't even have the decency to thank you. THANK YOU! :guilty: I'd like to stick around and join in with my own recipes from time to time if it's all right. :)

I had my first meeting with my Board of Directors today since my employee left and I was absolutely stunned to find out that she'd been complaining to them for the past 5 years about how much time I had to take off to take care of my parents. They told me that her complaints meant nothing to them and they told her that repeatedly. I am having a hard time understanding how someone could be so cold hearted.:sad1:

That is SO ridiculous!

How long can a rotisserie chicken stay in the fridge? I bought it on Sat for a recipe but I won't be able to make the recipe until Thurs.

It hasn't been touched since I bought it. Think it'll survive until then?

Hmmm...that seems long. You could pull the meat off the bones and freeze it until you can use it though.

Well, unfortunately the train crash rumors turned out to be true, there were about 150 people injured. The good news is that many of the injuries were minor, and nobody died. It souds like lots of broken noses and head gashes, stuff like that. The accident was caused by a runaway boxcar that somehow was traveling on its own down the track the commuter train was traveling on. Luckily the conductor saw the boxcar and was able to stop the train before the collision.

Guess what I am trying to make for dinner tonight? You guessed it! Pea soup and shrimp, take three! If it does not work out tonight I am giving up on it!

Did you read where my rum extract disappeared and I used Grand Marnier instead? Mmmmmmmm!!

Barefoot Contessa Meatloaf- Lindsay style

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions) I just used one big yellow onion
1 teaspoon chopped fresh thyme leaves I'm out of thyme, lol, so I omitted it
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce 3 seemed like a lot, so I just used 2
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean) I used 1 pound each of ground beef and ground pork
1/2 cup plain dry bread crumbs (recommended: Progresso) All I have is Italian, it worked fine
2 extra-large eggs, beaten Just large, not extra-large
1/2 cup ketchup (recommended: Heinz) I didn't bother to measure, see below

Preheat the oven to 350 degrees F.

Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.

In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense. This is SO true!! It made such a difference in the loaf! Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. I did not do this- I just made a regular loaf and squirted ketchup along the top. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. I made a loaf in a 9x13 casserole dish and baked for 45 minutes. Serve hot. (<---duh!)

***I also added a diced red pepper and a garlic clove when I sauteed my onions.***

I did read about the Grand Marnier! Glad it tasted good! Way to substitute!

The meatloaf sounds great! Mine turned out good too. I'll post the recipe as soon as I get down to the kitchen for the magazine.

Dinner tonight will be Herbed Tuna Sandwiches, dill pickles, and salad.

WFD tonight...i believe i will be grilling boneless skinless chicken i will marinade in our fresh herbs and some olive oil...i think i will do a nice salad and some grilled zuchinni along with it...nothing like greens ;)

I was planning to make fondue tonight, but after our beefy meal last night, I'm not sure I want that. I haven't come up with any brilliant alternatives yet, so for now, I'll just say I'm making fondue.
 
Tonight it's leftover meatloaf, smashed potatoes, and roasted broccoli. I tried a new meatloaf yesterday and it rocked!!!!!!!!!!!!! I stole it and semi-adapted it from the Barefoot Contessa. Recipe below.

I don't cook on Wednesday nights because Ron is not home. So I am going to try this meatloaf tomorrow night. I took my meats out to defrost.

I always wing my meatloaf with whatever is around onion soup mix, peppers, etc...some come out better than others. This one sounds good, thanks Lindsay.

Morning Y'all,

Don't know what were having for dinner. After having steak with cream sauce 2 nights in a row, we need something lighter & healthier!

You could use them in a salad. Lettuce, avocado and grapefruit sections..

I wish I could send them to you! They are very ripe & it only took one to get enough juice for 2 drinks & salad dressing. So only 14 more to go!

I want some zucchini!!! I can't wait for our garden to start producing!!! We tilled up our ground last weekend, and are waiting for a "safe" time to plant! I'm thinking mid-April is when it will happen!!!

Alan usually plants me a "salsa" garden: peppers, onions, tomatoes. Then he'll also plant zucchini, summer squash, cucumbers, carrots and pumpkins. Those are for the kids. They love the idea of growing their own jack-o-lanterns. Unfortunately, we've never been able to use any of the pumpkins. The deer love them, and luckily for me, they only eat the pumpkins, not any of my other plants!

That! Actually it's the *cheapest* piece of meat I can find at a discounted grocery...meat has to be cooked that day for safety! Anyway this is what I fix each Sunday for the Tag Fairy. I pour a jar of gravy all over the top and dump on a plate. Don't even bother with any seasoning. TF *adores* it!!! That's how I got my tag. :cutie:

Don't know if any of you like spicy foods but I do. The following recipe is one of my favorites and it uses simple ingredients you can find in any grocery store. Hope someone here is brave enough to try it! :)

Spicy Szechuan Noodles

1 lb. ground pork
1 Tbsp. soy sauce
2 Tbsps. Sherry

Mix ingredients together and brown in a pan on stove top.


1 Tbsp. fresh ginger
2 Tbsp. fresh minced garlic (I triple the amt.)
¾ tsp. red pepper flakes (I triple the amt.)
Dash black pepper
2 Tbsp. soy sauce
2 Tbsp. oyster sauce
4 Tbsp. Skippy peanut butter
1 ¼ cup chicken stock
2 Tbsp. rice wine vinegar

Whisk these ingredients together until creamy. Add to pan and simmer 45 minutes. Add 1 Tbsp.sesame oil just before serving.

Serve over a bed of noodles topped with sliced green onions.

I'm Nita and cooking is my stress reliever. Tonight's dinner was Rigatoni with cheese and Italian Sausage. YUM-O it's a family favorite. I'm looking forward to getting to know you all and sharing my favorite recipes with you.

I have been getting some really great ones this year, nice and ripe and juicy.

Dinner tonight is turkey burger and green beans and potatoes. Usually I just use regular white potatoes but tonight I am using up some confetti potatoes I have. It's a bag of purple, red, white and Yukon's that I get from Trader Joes.



Green Beans and Potatoes

1 bag frozen green beans
4 large potatoes cut in big chunks
1 onion sliced
Couple pieces of leftover ham cut up
Salt and pepper

Place in pot, put in enough water to cover all. Bring to a simmer and cook until the potatoes are tender. Salt and pepper to taste.
 
2 nights in a row of lazy cooking for me. I took big hot dogs and pan fried them..I sliced them down the middle and put cheese and diced jalapenos in them. They were really good..Tomorrow is prime rib with a garlic -horseradish rub..It's so big I will cut it in half and cook the rest this weekend

I'm Glynis, a SAHM to 4 kids. I started cooking seriously about 6 years ago, and have found I really like it! This thread is one of the best things that has happened to me. Not only am I getting some incredible recipes, I feel like I'm gaining a whole new family! These ladies are some of the best in the world! We're glad to welcome you to it, Nita!

Okay, lazy for me would have been putting the hot dogs in the microwave. :laughing:

I just wasn't excited about the fondue today, so I just had the leftovers (what little remained) from yesterday. I made chicken nuggets and macaroni for the kids. They were thrilled.

I meant to add, the recipe doesn't call for seasoning the actual meat before mixing. I would add a pinch of salt and pepper. It needed a little sprinkle at the table.
