The WW bbq pork recipe: 6 pts total..and totally yummy!:goodvibes
serves 4

1 lb lean pork loin
3 TBL bbq sauce of your choosing (i like sweet baby ray's original)
4 light rolls
4 cups coleslaw mix
2 TBS reduced fat mayo
1 TBS white vinegar
1 tsp H2O
pepper
1/2 Tbs scallions


spread 2 tablespoons of bbq sauce all over the pork loin, roast for 25 min ( or untill it reaches 160) at 400 degrees.
While the pork is cooking mix together mayo, vinegar, water and coleslaw mix scallions and salt n' pepper to taste..set aside.
After the pork is done let it sit under an aluminum foil tent for about 10 minutes..slice into 20 slices ( 5 per serving)...place the sliced pork on the light roll and drizzle 1 tsp more of the sauce on top..top with coleslaw mix and top bun.
 
Hi everyone! I kinda disappeared for a while. The boys were out for Spring Break and we took them to the beach, then I played catch up at work for a week. Anyway, we are back on schedule and tonight's dinner is Key West Chicken, Rice, and a salad. We have our annual island trek in 3 months and I've got a little weight I'm trying to loose, so it's all healthy eating until then.

Sure it's simple. Mainly a marinade. I usually double all ingredients except the soy sauce and baste while grilling.


Key West Chicken
3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon lime juice
1 teaspoon chopped garlic
4 chicken breasts

Wow! Ask and ye shall receive. This looks wonderful!!!
 
LOL, I'm a regular johnny on the spot today. It's delicious my family loves it. We've had lots of nice days lately so I've been grilling a ton, I'm always on the lookout for new marinade recipes.

OH SURE. You ask for the chickpea recipe. My reputation for cooking prowess is coming to an end here.

Ready?



1 can chickpeas, rinsed and drained
1/2 cup purchased green olive tapenade
1 shallot, minced
a handful of parsely, chopped

Stir everything together. Eat.

Thankfully they broke up in early March, but things never got resolved between us. Unfortunately Scott still has to work with her and he absolutely hates it.

We discovered that Robin is a bit of a sociopath. No kidding and not exaggerating.

I've had a rough Monday already and it doesn't seem to be getting any better. We have a meeting tonight that is going to be tense (again) so I'll be eating whatever is here at work. I had a BIG lunch at my favorite El Salvadorian restaurant (I know I butchered that) so I may not be that hungry.

DH is on his own. I'll be lucky to get home by 11.
 
Had no computer this weekend, seems like lots has been going on. After being sooooo bad Friday night and Saturday I had a really good dinner last night. But Friday I had the best thing. It was asparagus wrapped in Prosciutto. I have never had something like that and it was soooo good. It was just blanched asparagus wrapped in Prosciutto. :love: Don't even want to know how many points that was.

Dinner last night was Turkey Meatloaf and roasted veggies. I took beets, potatoes, butternut squash, spring onions and chives, sprayed with olive oil and baked at 400 until tender.

Those roasted Veggies sound REAL yummy! May have to try that this week, thanks for sharing

You're welcome. It was the first time I made roasted beets. I actually had them in a salad at WDW. I was at Whole Foods and they had the loose beets for a good price and got three, two gold and one purple.

The veggies were in there for about 45 min. and the beets were not "tender", they still had a bit of a crunch to them, but they were soooooo good! :love:
 
Hey all! No time to post over the weekend--was working. I had DH get the Italian Creamy Crockpot Chicken recipe from, I think Glynis or Lindsay, ready on Sat. night--and he did surpringsly well. It was really good! Tonight we're gonna have Kathy's bolognese and spaghetti--smells so good simmering away ont he stove

Dinner tonight was my summer veggie soup and yogurt. It was good. Buddy ate :confused3, he said soup is for winter :sad2: oh well, more for me ;). Risa had the American chop suey.

The girls lost more weight this week than before so they are sticking with the CORE program another week to see if it works again. I weighed in and weighed more than I wanted to think I did :headache:, but I am going to stick with this for awhile. The is a man who has lost 315 pounds in our area! Good for him! Marisa had told me about him and I guess there are meetings all over the place who are hearing about his progress and cheering him on.
