Morning Y'all,

Alexis went back to school today. I think she'll be fine, she complained after eating yesterday, but as soon as her Mom walked in the door. She asked her if it was "Doughnut Thursday" ! (something special Chris does with her once a week). She said she had been wanting a doughnut with sprinkles all day! :confused3 :laughing:

Kathy, Sorry you're feeling sick! :hug: As soon as I finished the antibiotics on Mon. my throat started hurting again. Ugh.

I started really late on dinner, so I used boneless skinless chicken breast. And since I used less chicken, I had a lot of sauce. I had already started turnip greens for a side dish. So decided to just go with Southern spin on it & served it on top of Grits, topped with cooked greens & topped it with Curry Roasted Sweet Potatoes. It was delicious!

Sorry if I missed anything, I'm feeling under the weather & backed up on laundry & cleaning from babying my girl the last 2 days!
 
Lindsay, I forgot to mention that I'm happy you found a gym!:goodvibes Not to mention one with accessible equipment! That's surprising & very good to hear.

Aimee, I have a baked orzo and cheese recipe I got from Beck that I like a lot. It's easy too. I'll post it after this.

A played all but 1 inning tonight...they lost 8-5...and he struck out 3 times...:sad1: No real action for him. he played mostly left field, 1 inning right field and 1 at 2nd. Thanks for all your well wishes!

Lauren, I wouldn't worry about the strikeouts. It takes kids a while to get used to other kids pitching to them. He'll be fine. If not, he can adopt my Little League strategy...don't swing and hope for a walk. :laughing:

I do have one request. Anyone have a good, easy recipe for fish tacos? I tried one for the first time last summer in Gulf Shores, and I suddenly have a craving for them again.

Baked Orzo and Cheese

1/2 lb orzo
Salt
6 tbsp butter
3 tbsp flour
2 c milk
2 c extra sharp cheddar cheese, grated (gruyere is also yummy)
1/4 tsp pepper
1 1/4 breadcrumbs (I like to make fresh ones just by cutting up firm white bread into small pieces)
1 1/4 parmesan, grated

Preheat oven to 375.
Cook the orzo in boiling, salted water until al dente. Drain.
Meanwhile, melt butter in pan over med-low heat. Whisk in flour and cook, stirring constantly, 3 minutes. Whisk in milk and bring to a boil, stirring constantly. Reduce heat to low and cook five minutes, whisking often. Remove from heat and stir in cheese, salt to taste, and pepper. Add cooked orzo then transfer to a shallow baking dish.
Mix breadcrumbs with parmesan and sprinkle over orzo.
Bake until bubbly and lightly browned...20 minutes.

Fish Tacos
Makes: 4 Servings
Total Time: 30 Minutes

For the Mango-Avocado Salsa—
Combine:
1 ripe yet firm mango, peeled, diced
1/2 cup grape tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, minced
1 T. jalapeño, seeded, minced
1 t. sugar
1/4 t. cumin
Juice of one lime

Before Serving, Stir In:
1 firm yet ripe avocado, pitted, peeled, thinly sliced
2 T. coarsely chopped fresh cilantro

For the Creamy Chipotle Sauce—
Stir Together:
1/4 cup plain lowfat yogurt
1/4 cup reduced-calorie mayonnaise
2 t. sugar
1 -2 chipotle chiles in adobo sauce, minced
Juice of 1/2 lime

For the Fish Tacos—
Marinate in Lime Juice:
4 4 oz. fresh tilapia fillets, halved

Blend; Coat Fish in:
3 T. all-purpose flour
3 T. yellow cornmeal
1 t. chili powder
1 t. kosher salt
1/4 t. cayenne

Spray, then Oven-Toast:
8 7" corn tortillas

Serve with:
3 cups napa cabbage, shredded
Mango-Avocado Salsa and Creamy Chipotle Sauce







Fish tacos sound strange, but try them. It's easy to see why they're so popular on Mexico's beaches.
Preheat oven to 500° with racks on the top and bottom levels.

Combine mango, tomatoes, cucumber, onion, jalapeño, seasonings, and lime juice in a large bowl for Salsa. Let stand 10 minutes to blend flavors.

Before serving, stir in avocado and cilantro.

Stir all ingredients for the creamy chipotle sauce together in a bowl and adjust seasonings to taste. Let stand at least 10 min. to allow flavors to blend.

Marinate tilapia fillets in lime juice for 10 minutes, turning to coat. Place a baking sheet on each oven rack and preheat 5 minutes.

Blend flour, cornmeal, and seasonings in a shallow dish. Coat marinated fish on both sides with flour mixture. Remove a hot pan from oven and spray with nonstick spray. Place fillets on hot pan and roast on top rack 5 minutes.

Spray both sides of tortillas with nonstick spray. (Meanwhile, carefully turn fish over and return to oven 3–4 minutes.) Oven-toast tortillas on the second heated baking sheet after turning the fillets over. Toast tortillas just until they’re lightly crisp around the edges, 2–3 minutes.

Serve fish and tortillas with shredded cabbage, mango salsa, and chipotle sauce.
 
ETA: If you guys recall, I used to have a personal trainer. She had a baby last fall and I quit the personal training studio (NO ONE was as good a trainer for me as she was and it was a lot of money to fork out to not get the same quality of training). Anyway, I spent some money and bought the things I would need to work out at home.

Never happened. Apparently I don't have the discipline. There are way too many distractions here at home.

Long story short, I have joined The Rush. It is an awesome place and believe it or not, they have some accessible machines!! That sold me!!

Anyway, I just had to tell someone. I'm really excited.

Good Monring all,

Haven't been around in a while and just caught up on all the posts (phew!) lots going on!

Last night for dinner was Haddock with onions, butter flavor cooking spray, black pepper, and a pinch of garlic powder, put it all in a cast iron pan and cooked it on the woodstove. Made Rice Pilaf and staemed broccoli to go with it.
Over the weekend I made the chicken enchilada recipe on this board, yum! Boyfriend didn't seem to care for it, so I was FORCED to eat all the leftovers myself.

Tonight is pork sirloin cutlets marinating in a cheriaki (sp) sauce, to be cooked on the grill. Still not sure what I am going to be having with it. Any ideas?

Can you do some kind of noodle dish? Lindsay posted a recipe on the old thread for some hot and sweet noodles (I think). If you want, I'll post it here for you.

Fish Tacos with Chili Lime Mayo
Serves Four

1 1/2 lbs fish (this recipe calls for red snapper, but I've made these with tuna, swordfish and striped bass)
1 garlic clove, minced
1/2 tsp ground cumin
1/2 tsp chili powder
1/2 tsp dried oregano (I've never used this)
1 tbsp fresh lime juice
2 tbsp olive oil
salt, black pepper
4 -- 8 inch tortillas
1 avocado, diced
2 tbsp cilantro leaves
chili lime mayonnaise (recipe follows)

Combine garlic, cumin, chili powder, lime juice, oregano (if using), and olive oil. Brush on fish. (I usually increase the amount of this mixture and use it as a marinade and let the fish sit in it for a half hour or so.) Grill fish (or cook on a grill pan on the stove). Sprinkle with salt and pepper when done.

Meanwhile, warm tortillas, 30 seconds per side. Cut fish into pieces and divide among the tortillas. Top with avocado and chili lime mayo. Fold in half and serve hot. (I also usually put some crunchy lettuce into my fish tacos.)

Chili Lime Mayonnaise

1 fresh green chili, seeded and finely chopped (you can substitute chili powder if you prefer...or you can be like me and add both :thumbsup2 )
1 tbsp finely chopped cilantro
1 tbsp lime juice
1 1/4 c mayonnaise

Combine all ingredients. Add salt and pepper if desired.
 
Ross has late karate tonight so supper will be something with the ground turkey I have out.......along with stuffing and a veggie....WOW other then stuffing who knows what we are eating, lol!!

I don't have a recipe, but I think either Laura or Becky does. I think they posted it on the old list. Hopefully it will get posted again. I just tried my first fish taco the other day, and I'm hooked!

I make fish tacos both grilled and fried. They both are good but fried is my favorite! I'll come back with a recipe in a bit.

Tonight I am making Asian noodle soup bowls with lots of veggies...bok choy, tofu, cilantro, scallions, etc.

Dinner tonight will be an orange beef stir fry. I'm in the mood for something Chinese! Alan is working all day and half the night tonight, so it will just be the kids and me. I'm sure that they'll hate the dinner, but they know where the peanut butter and jelly are kept!
 
Becky- my chicken never looks like that :confused3. It tastes good but I will never win a presentation category :lmao:

Lindsay- Good for you for finding a gym! I have tried to exercise at home but it never happens, I get distracted by things like TV or cookies.

Thanks for asking. We are in a period of transition. Many people are leaving, so we're scrambling to cover SS classes without teachers and such. But, some people are coming too. Boss man has reverted back to many of his old ways already and I was on the receiving end of that last week and cried for two days :headache: We have hired a professional consultant to work with us. It's going to be a looooooong road. I was back at my alma mater on Monday and 2 people asked if I wanted to leave because they had churches that are looking. I told them no, it's not time yet.

Fortunately no, it is at a nice restaurant called the Lafayette House in Foxboro, Ma.. We are having 80 people, 40 are just immediate...my brothers and their families. It is nice that we can all just be waited on and enjoy the night...and no clean up!!!!! Ann

Here is the recipe you wanted along with the one for the stroganoff sandwiches.

Stroganoff Sandwiches
8 servings

1 1/2 pound ground beef (I used 2 lb. ground turkey)
1 medium onion, chopped
6-8 bacon strips, cooked and crumbled
2 garlic cloves, minced
2 Tbsp flour
1/2 tsp. salt
1/2 tsp. paprika
1/8 tsp. nutmeg
1 can cream of mushroom soup
1/2 C. sliced fresh mushroom (I didn't use these. My kids don't like them)
1 C. sour cream
8 hamburger buns, split

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add bacon and garlic. Combine the flour, salt, paprika and nutmeg; gradually stir into beef mixture until blended. Stir in soup and mushrooms and sour cream (mixture will be thick). Bring to a boil. Reduce heat; simmer uncovered, for 4-5 minutes or until heated through, stirring occasionally (do not boil). Serve on buns.


Orange Beef and Broccoli Stir Fry
4 servings

1/4 C. beef broth
1 Tbsp soy sauce
1 Tbsp lemon juice
2 tsp cornstarch
1 Tbsp vegetable oil
1 pound top round London Broil, cut into strips
1 (10 oz) pkg. frozen broccoli spears, thawed and patted dry
1 Tbsp grated orange zest
1/4 C. fresh orange juice
Salt and pepper

Whisk together broth, soy sauce, lemon juice and cornstarch in a bowl; set aside. Warm oil in a wok or large skillet over medium-high heat until hot. Add beef, turn heat to high and cook, stirring constantly, until no longer pink, 2 to 3 minutes. Add broccoli and cook, stirring, until warmed through, about 2 minutes. Stir in reserved sauce, orange zest and juice. Cook, stirring constantly, until sauce is thickened, about 2 minutes. Season with salt and pepper.

I thought I had the fried fish taco recipe on my desktop, but I don't. I'll post it later this afternoon if I have time to type it all in! It looks like the grilled version is pretty well covered.
 
Well, I was over on the food porn thread and I think I am gonna make a quick bolognese sauce instead of tacos...there were a couple pasta dishes and now I am craving pasta.

I have been buying ground beef and frying it up and freezing it and it certainly comes in handy.

I really also liked marinating chicken and pork chops in a ziploc and freezing them flat on a cookie sheet. That was really a space saver in the freezer...you can stand them up if need be.

Thanks again for all the support for Andrew. He did have a ball and was excited to play under the lights. That was a first. he didn't seemed phased by his playing. Alot of other kids played the same. I will continue to work with him though...might not benefit though...Not sure if I ever told you guys, I run like a duck and have no great athletic ability. I did play sports while growing up but just not the best...I have lots of arthritis to show for it. ;)

Now if I can get those darn white pants clean! I guess I gotta go get that brown soap Mother always swore by.
