The Creative Boards?!?!?!? Why the heck was our thread moved over there? I hope they don't move this one.
 
Oh good grief!!! What have they done to our thread?!?!? If someone figures it out, please let me know. It's all broken up now. How will we find our recipes????
 
Ok, this is completely off topic, but I need to vent!

My MIL called Alan last night to let him know that she is engaged to a man she has been chatting online with for the last 2 months. She drove, alone, to his home town to meet him on Saturday, and now they are engaged!!! I am just beside myself!!! This was how she met and married husbands number 3, 4 and 5. Those marriages lasted anywhere from 9 weeks to 13 months. I am so sick of it!!! She rushes in, gets disenchanted with marriage to a man she really doesn't know, and then expects her children to bail her out. AND THEY DO!!! I told Alan that this is it! I will not let my children be anywhere near her and this new guy! They have lost so many "grandpa's" that they are really confused about the whole thing. Luckily, Alan agreed. We sent an email to all his siblings letting them know that we will not be at any family gatherings where they will be.

She's completely inappropriate about all this. We even caught her talking explicitly about her "love" life with her teenage granddaughters! That's just not right! I think all of Alan's siblings are pretty fed up with this. Hopefully, they'll all stand firm and not run to her rescue when she decides she's done with this marriage and wants someone better.

Sorry to vent, but I'm really peeved about it!

Change in dinner tonight! Going to get a rotisserie chicken at Costco and have some leftover asparagus and purple potato salad. I'll tell you how that one turns out. And I will make a really great soup with the leftover chicken.

Mexican Chicken Soup:

2 C chopped cooked chicken
1 can Cannelini beans
3 C chicken broth
1 jar Salsa Verdi

Place all the ingredients in a pan and heat through, serve with tortilla chips and sour cream.
 

Jenny, Those clam fritters sound yummy but no matter how many times I've tried, I still can't get hush puppies right! So I probably shouldn't even attempt clam fritters since I wouldn't know a quahog from a cherrystone. Heck, I didn't even know a quahog was a clam! :confused3 :laughing:
 
Hello!! These are my meals for the next two days. I am posting the second one now since I will be working the next few days and not have time. I will prep the Manicotti tonight and just have Hubby throw it into the oven to feed him for the next couple days while I am working.

Spinach Manicotti

Ingredients:
1 carton (15 oz) fat free Ricotta cheese
2 cups (8 oz) shredded part-skim Mozzarella cheese
1 package (10 oz) frozen chopped spinach, thawed and squeezed dry
½ cup reduced fat sour cream
¼ cup dry bread crumbs
1 tablespoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
2 cups tomato juice
1 cup chunky salsa
1 can (15 oz) crushed tomatoes
14 uncooked Manicotti shells

Method:
1. Combine the tomato juice, salsa and crushed tomatoes. Spread 1 cup of sauce in
an ungreased 13x9x2 baking dish.
2. In a large bowl combine the ricotta, 1 ½ cups mozzarella, spinach, sour cream,
bread crumbs, Italian seasoning, garlic powder and onion powder. Mix well.
3. Stuff uncooked manicotti shells with spinach mixture; arrange over sauce in
baking dish. Pour remaining sauce over manicotti.
4. Cover and Bake at 350 degrees for 55 minutes. Uncover; sprinkle with remaining ½
cup mozzarella cheese and bake for 15 minutes longer until the noodles are tender.


Makes 7 ( 2 shells) servings: 341 cals 8g fat 45g carbs 21g protein

Five Spice Chicken with Vegetables

Ingredients:
2 tablespoons reduced sodium soy sauce
2 garlic cloves, minced
1 ½ teaspoons five spice powder
1 teaspoon grated ginger
1 teaspoon dark sesame oil
¼ teaspoon ground black pepper
12 oz thin sliced chicken cutlets, cut into ¼ inch strips.
1/3 cup fat free low sodium chicken broth
1 tablespoon dry sherry
2 teaspoons cornstarch
1/8 teaspoon red pepper flakes
3 teaspoons vegetable oil
6 oz Orzo pasta
½ pound green beans, trimmed
4 medium carrots, cut into julienne strips
3 cups small cauliflower florets
½ small red onion, thinly sliced
2 tablespoons water

Method:
1. Marinate the chicken pieces in 2 teaspoons of say sauce, garlic, five spice powder, ginger, sesame oil and black pepper.
2. In a small bowl whisk together the broth, sherry, cornstarch, red pepper flakes and remaining 1 tablespoon plus 1 teaspoon of soy sauce until smooth. Set aside.
3. In large non-stick skillet warm 1 ½ teaspoons oil over medium heat. Add chicken cutlets and cook. Remove to plate.
4. Warm remaining oil over medium-high heat. Add beans, carrots, cauliflower and onions. Cook stirring for one minute. Add water, cover and cook for 2 minutes until veggies are tender. Stir in chicken broth mixture, then reduce heat and simmer for 1 minute. Add chicken and cook 30 seconds longer.
5. Cook Orzo according to directions on package, divide between 4 plates. Top with chicken and veggie mixture.


Serves 4: 385 cals 7g fat

I can hope, but I'm sure it won't happen. One of the biggest problems, is that she was abused as a child, and never mentally matured past the age of 16. She wants a fairy tale marriage, but when things get hard, she just gives up. Her first husband stayed with her for about 20 years before he couldn't handle any more of her crap. Her second husband (Alan's father) stayed for 26 years. He helped her raise her children, took care of her through multiple surgeries, etc. I was devastated when he died.

With all the rest of the husband's it's been like dealing with a teenager. She wants a big "white" wedding (she claims she's never had one. Well, at last count she's had at least 4 white weddings), complete with gown, veil, cake, reception, etc. She refuses to pay for anything, and guilts her kids into doing it all for her.

The sad thing is that so far, all the men she's married have been really nice men. But when things get hard (financially), she starts screaming "abuse", and leaves. I just know it's going to happen again, and I can't have my kids around that again!

She just emailed me to ask if it would be alright to bring him to Alan's 40th birthday party. I think I'm going to tell her no. I want that night to be about Alan, and not about her engagement. She hijacks family events for herself. At one nephews wedding, she took their wedding photographer away for some engagement photos of husband number 3. And she had the gall to charge the newlywed couple for the photos! She's a piece of work! The stories I could tell!!!
 
Now if I can get those darn white pants clean! I guess I gotta go get that brown soap Mother always swore by.

By the end of baseball season (sometimes by the end of one game), Liam's pants no longer qualify as white. I really try at the beginning of the season, but by the end, it is hopeless. He loves sliding and diving after balls too much. I make him wear black baseball pants to practices.

Ironing- I do it if something is wrinkled that we need to wear. When we were first married, I ironed almost all of our clothes. That stopped after a couple of months.

What's an iron? :confused3 :laughing:

Speaking of recipes, I'm so glad we got our old recipes back! :cool1:

We did have pizza tonight, but I was lazy and got take-out. This has been a completely unproductive day for me.

Dinner changed. I had the peppers all ready to pop in the oven but got sidetracked and that was the end of that. I ordered grinders for Buddy and Jeff, Kady had Burger King and Marisa and I had Taco Bell.

I have given up on the house this week. Good thing Buddy doesn't worry about what I do all day because I would have a tough time explaining myself if he did. He is just glad I don't ask him to do all this running around, he hates it.
 
I can't make heads or tails out of the threads and what pages the recipes are on. I'm feeling pretty bad so I'm going to bed and watch Big Brother and American Idol and hopefully get some sleep. When I get congested and can't breathe through my nose I just cannot sleep.:sad2: Have a great night everyone and chat with y'all tomorrow.

Oh, it's really not a big deal. We're just inviting all his siblings, and my siblings and their spouses to go to dinner with us at a local restaurant. I have reserved the banquet room, and will decorate it with balloons, and bring a cake. He didn't want anything big, but this will be something fun for him. Oh, I also emailed his best friend who lives quite far away, and he and his wife will surprise Alan at the restaurant. I think that will be the highlight of the evening!

Lindsay, I can tell what happened. Basically, they took the old, gargantuan thread, and broke it into as many parts as it took to make each thread comply with the new DIS guidelines--maximum number of pages/maximum number of posts per thread. The old thread was so big that it took them breaking it into four threads to comply with the new guidelines. It also appears that they are going to archive the locked threads on the subboard "cooking" on the creative community boards, while the active thread stays open here on the main community board.

What this means for you is that your old index for the original thread is messed up, because the page numbers don't make sense anymore. The good news is, that as this thread continues forward, and all future threads, the index WILL make sense, because they'll lock it when it is at capacity, rather than continuing the thread and then breaking it into multiple threads (thus messing up the page references).

As far as the four locked threads, I would say there are two choices. Either you could ask the moderators if you could modify the first post of each locked thread, and input a revised index there, or someone could create a master index for the four locked threads, citing the correct page and thread number. I don't know where this would be useful to post though. Are you still working on that blog? ;)

After all that, here is DINNER! A nice, healthy, tofu bok choy poached egg soup:

My stir fry was really good! I used the recipe as a guide but didn't have some of the ingredients so I just threw some things together. It was tasty.
 
Glynis and Nancy glad you liked the recipes! I am always a bit squeemish to jump into long standing threads. Somehow reminds me of trying to sit at the 'cool table' in junior high when I was obviously not cool. :rotfl: Anyway, it is very easy for me to post recipes since I have all my regular recipes saved into documents on my computer. We lovingly call it my archive and it contains all my regular stuff. This archive has been passed on to about 1/2 the people I work with and all the ladies at my hubbies work. It took forever to put together at first but now saves me soooo much time in digging for recipes.

Anywho, didn't end up cooking tonight as Hubby brought home some chop-chop from a local chain called chicken kitchen. Only problem was he forgot the curry sauce (which is pretty much the whole reason for eating there). He then begged me to mess around and try to amke a curry sauce. So after some experimentation we got it down and had the chicken chop-chop with , in his words, a 95% accurate curry sauce.:lmao: Next week I am going to try to figure out the whole recipe since he said he liked the curry sauce so much.
 
Tonight I am making baked salmon, rice, and peas.

ETA: I think I'm just SOL on the other thread. It looks like on all of the "parts" past part 1 we will just have to dig for our recipes. *Sigh* At least we have them.
