Tonight DH and I are going out to dinner to celebrate our anniversary. 9 years!
 
Here is the recipe for the vegetarian pan bagnat, as requested by bengalbelle:


One loaf crusty bread. You can use a baguette, or a boule--just any type of french or country bread that has a good crust on it.
Two large tomatoes, sliced fairly thick
1 or 2 balls of fresh mozzarella cheese
A handful of fresh basil, roughly chopped
A handful of kalamata olives, pitted and roughly chopped
1/2 of one red onion, thinly sliced. You can soak the sliced onion in ice water for about 10 minutes than squeeze dry if you want it to be a little less spicy
Olive oil and balsamic vinegar to taste for seasoning (I usually use about 4 tbsp. olive oil and 1 tbsp. balsamic)
I clove garlic
salt and pepper to taste.

Cut the loaf of bread in half, and then hollow out the center of both pieces, being sure to leave the crust intact. Rub the clove of garlic over the cut surfaces of the bread.

Layer the cheese, olives, tomatoes, onion, and basil onto the bottom of the bread and season with salt and pepper to taste. Pour the olive oil and balsamic over the inside of the top piece of bread, then put on top of the sandwich.

Wrap the sandwich in two layers of foil and then again in plastic wrap. Weight it down with a cast iron skillet or heavy cans of tomatoes, etc. for a few hours if possible, or as long as you can spare if you don't have that much time. Unwrap, slice into serving pieces, and serve.

This evening we are having chicken breast on the grill, marinated in yoshida sauce. I have some leftover potato salad and will serve with veggies and a salad. I am fixing roasted garlic couscous for me as a side.
 
Grilled shrimp, asparagus and leftover cous cous with cantalope as dessert.

What is yoshida sauce?
 
It was hot and sticky here today and my AC isn't in yet, plus DS had a birthday party to attend, so DD (all better) and I just had takeout. I had fried clams to make up for the bad ones I had earlier in the week and DD had a chicken cutlet sub...plain. No sauce, no cheese, no anything. She is one of those kids who can't have foods touching each other.
 
We are going to my grandmother's for dinner tonight. We are having pork chops (I rarely eat pork), home grown green beans, and potato salad. I am taking a lemonade cake. MMM!!!

It's some kind of flavored soy sauce that I get from Cosco. It reminds me of a teryaki sauce, but a little lighter. It is great on grilled meats.
 
Tonite my family wants Chinese takeout. It is probably a good idea because my SIL refuses to stand under an umbrella again, and we are supposed to get more rain. LAst night the chicken was perfect, but he was soaked.
 
Last nights dinner was called on account of the hurricane we had. :rotfl:
It poured so badly as I was driving home that by the time I got there, even though it had almost stopped raining, I just didn't have the energy to grill my shrimp. I made it with black bean sauce instead.

Not sure about tonight, my plans are still up in the air.

Well, right now the plan is to grill sausages and serve with tomato-mozzarella-garlic bruschettas and grilled corn on the cob, but the sky is dark and there are thunderstorms predicted, so I might be moving to plan B. I just have to figure out what plan B is!
 
I haven't been able to check in here for a few days because my internet's been out ~ now I have to go see what you've all been cooking this week ;) .

I didn't cook today ~ my sister was in town so we went to Lonestar and I had the Delmonico sandwich, garlic mashed potatoes and that yummy bread. :sunny:

Yesterday I made tacos with all the fixings...they were so yummy that I ate 3 of them, LOL! :eek:
 
Today my hubby and I are going out and having a Jack Daniel's steak from TGI Fridays. MMMMMMMM!!! I want that sauce so bad! :)

Today I'm going to grill some burgers and make some hash browns and salads to go with them. :sunny:
