One loaf crusty bread. You can use a baguette, or a boule--just any type of french or country bread that has a good crust on it.
Two large tomatoes, sliced fairly thick
1 or 2 balls of fresh mozzarella cheese
A handful of fresh basil, roughly chopped
A handful of kalamata olives, pitted and roughly chopped
1/2 of one red onion, thinly sliced. You can soak the sliced onion in ice water for about 10 minutes than squeeze dry if you want it to be a little less spicy
Olive oil and balsamic vinegar to taste for seasoning (I usually use about 4 tbsp. olive oil and 1 tbsp. balsamic)
I clove garlic
salt and pepper to taste.
Cut the loaf of bread in half, and then hollow out the center of both pieces, being sure to leave the crust intact. Rub the clove of garlic over the cut surfaces of the bread.
Layer the cheese, olives, tomatoes, onion, and basil onto the bottom of the bread and season with salt and pepper to taste. Pour the olive oil and balsamic over the inside of the top piece of bread, then put on top of the sandwich.
Wrap the sandwich in two layers of foil and then again in plastic wrap. Weight it down with a cast iron skillet or heavy cans of tomatoes, etc. for a few hours if possible, or as long as you can spare if you don't have that much time. Unwrap, slice into serving pieces, and serve.

This evening we are having chicken breast on the grill, marinated in yoshida sauce. I have some leftover potato salad and will serve with veggies and a salad. I am fixing roasted garlic couscous for me as a side.
