My parents are coming over this afternoon for DS's baseball game. I am just grilling hamburgers and hotdogs, maybe a sausage for DS. I think I will make corn on the cob too.

We're headed over to WDW again to meet friends for dinner. Tonight's my first time at Cape May, woohoo!

Bengalbelle: you take care of yourself! My DD was at risk for gestational diabetes, so her diet was restricted. She actually has hypoglycemia, but that was diagnosed after the baby was born. I think the Dr said that sometimes happens after a pregnancy so please take care.

I don't think that I am cooking this weekend. I want to work in the yard, and have been visiting nursuries today. Now I'm too hot to cook, I want chinese.
I shopped and bought different grilling meats, so I think I will leave the menus for Sunday and Monday to my DD and DSIL.

We liked the stuffed pepper recipe, so I'm posting it for everyone else. The recipe came from foodnetwork.com and is from Paula Deen. Next time I make it I'll half the peppers instead of quartering them because the stuffing wanted to fall out.

BTW, I used green peppers because that's what we had at home.

4 large red bell peppers
3/4 pound ground chuck
1/2 pound ground pork
1 medium onion, chopped
2 garlic cloves, minced
2 teaspoons beef bouillon granules
2 teaspoons House seasoning, recipe follows
1 cup cooked rice
1/2 cup jarred cheese and salsa
1/2 cup sour cream
1 cup diced tomatoes
1/2 cup chopped green onion tops
1 tablespoon soy sauce
1 cup hot water

Preheat oven to 350 degrees F.
Start by cutting the peppers in half lengthwise, leaving the stems intact, and halving them also. Remove the seeds and ribs inside the peppers.

Using a hot skillet, saute the ground beef, pork, onion, garlic, 1 teaspoon of bouillon granules, and house seasoning together. Saute until onions become translucent. Drain the fat off. Add the rice, cheese, sour cream, tomatoes, green onion tops, and soy sauce. Mix well and stuff the mixture into the peppers. In a small bowl, mix the hot water and the remaining bouillon granules. Pour this mixture into a shallow casserole large enough to hold all of the peppers. Place the stuffed peppers in the dish, cover with foil and bake for 25 to 35 minutes. Remove the foil and spoon the juice from bottom of the casserole over the top of the peppers. Bake for an additional 10 to 15 minutes.


House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months

Hoping to grill out today, some burgers and dogs. :sunny: The weather here is beautiful; need to run out and get some charcoal!
 
We're going to my cousin's graduation party today. I think we're having ribs and chicken wings along with the usual salads and stuff.
 
We got bumped. DD and SIL were going to grill steak with corn on the cob and whatever else they thought of, but they were invited to a cookout. DH and I told them go and we would find something.
 
My home computer is hooked back up, whoo-hoo! I am surrounded by boxes and lots of dust, but I don't care!

Last night DH grilled himself a dry-aged ribeye (he did not get the one I had planned for Friday, because it rained and we could not grill), and grilled me a piece of chicken marinated in honey-soy-garlic and brushed with a praline mustard glaze at the end. We also grilled some corn and rubbed it in plurga (super fat butter, yum), and had a riff on mac and cheese with a garlic-alfredo sauce. Plus, asparagus.

Today's linner was PDG (pretty darned good) if I do say so. We made three different types of fish: spicy masala swordfish, arctic char marinated in lime, cilantro, and olve oil, and scallops marinated in a lime-chili-paprika sauce. Dsis grilled and she did a great job. With the fish we had an avocado-mamgo salsa, Mom's famous eggplant sticks, a summer squash-zucchini saute, some crusty rolls, and an orzo salad. DH brought the wine and it was awesome--Alban Vineyards Viognier. Yum!
 
We had the usual Sunday linner at my parents' house. Today, DSis and I took control and it was mixed seafood grill. We had swordfish, sea scallops and Arctic char. We marinated the swordfish and scallops in a spicy chili mix and the char was marinated in lime juice and cilantro. We made a mango/avocado salsa to go with everything. Mom made an orzo pasta salad and her famous eggplant sticks and some sauteed squash. Everything was yummy!

DSis, liamsaunt, is still without her computer, so she asked me to post her dinner from yesterday. I am sure I won't get everything right, since I wasn't there, but her DH had a grilled dry aged rib eye steak that he said was delicious, but DSis couldn't look at because it looked gross. DSis had grilled chicken. She also made grilled corn and a pasta dish that was sort of like alfredo pasta, but she tweaked the recipe and added a few things. She said she added too much garlic. I know there was something else, but I don't remember what it was. Maybe DSis can add it when she is back at work on Tuesday.

My partner has a very limited number of things he can cook, but he is making one of them tonight; we're having a big batch of Spanish Rice.
 
We grilled burgers and hot dogs here ~ had homemade fries and giant dill pickles on the side :sunny:

What's your Spanish Rice recipe? Is it like paella? I love paella but I am the world's worst rice cooker. Do you have a recipe to share?

Memorial Day family get together at our house today
We had hotdogs, hamburgers and sausage on the grill
apple salad, pepperoni pasta salad, baked beans, deviled eggs, banana pudding, and honey bun cake. Yum
 
Kim, this thread is not going to be killed. I was just worried people were losing interest in it :)
 
We had sandwiches tonight. Tomorrow is grilling, and I'm pulling out some raspberry pork tenderloin for that. Have to hit the farm stand for some corn and potato.

Happy Memorial Day!!!

Today we changed our plans. It is soooooooo hot and humid here that we decided not to go to Fall Creek Falls for the day. Instead we are going for an early lunch at the Macaroni Grill and seeing "Poisidon."
