Thanks, that sounds good. I am always looking for easy ways to make the same thing taste different. Does that make sense? Do you remove the skins from the thigh, or leave it in place?
 
Tonite will be whatever I can put together this afternoon. I have a huge pile of mulch to move onto our new planting bed, and then over onto the new beds around the front of teh house. DH will be at the farm if he gets out of work early enough. Dinner has to be simple and fast.
 
Another busy day here, so I'll make an easy dinner of sloppy joes (yuck but DH's favorite meal :rolleyes: ), fries and some kind of fresh vegetable.
 
Tonight I am making mango island chicken, coconut rice, and fried plantains.
 

Last night I had chicken pot pie using the recipe on page 3 as a guide. I added to the recipe though and it turned out great, so yummy.
 
hmmm... I posted yesterday and saw the post, but now today it's not here. What's up with the boards? EDIT: I don't know what's going on. Page 57 was not there for me a minute ago.

Anyway, I made grilled teriyaki skirt steak, peanut butter noodles, and steamed broccoli for dinner last night. The noodle recipe was awful and I will never make it again. YUCK! The steak was great though.

Tonight I'm making pizzas, one regular with pepperoni and mushrooms and one Mexican. I've never made a Mexican pizza before, I hope it turns out ok. I'm going to use pre-made crust, taco sauce, taco meat, Mexican 4 cheese blend, chopped tomatoes, and sliced green onions. I might top it with shredded lettuce, salsa and sour cream at the table.
 
Today I am putting a roast w/ carrots and potatoes in the crock pot. I am getting my hair cut/colored today and didn't want to have to cook when I got home :)

Today, I've invited the inlaws over for a belated b'day celebration for SIL.

We're probably having Argentinean beef with Chimichurri sauce-the kids love that. I'll do my usual home fries and some fresh corn and a big salad.

Today I'm making fresh salmon stuffed with a prepared crab stuffing and I'll do a lemon dill sauce to go over the top ~ some parmesan and romano noodles on the side and a mixed green salad :sunny:

I think the girls and I will make some fresh peanut butter cookies for dessert (I don't have to go to work today and I'm feeling very homemaker-ish, LOL) :teeth:
 
No cooking for me tonite. We can't set plants tonite because of the rain, so DD and I are heading out to take advantage of some coupons at the Disney Store! DH will find something in the fridge.
 
I got home from work late yesterday to find that the chicken I had planned for last night's dinner wa still completely frozen, so we had sausage subs instead. If the chicken is finally thawed, then I am making last night's menu tonight. If not, I am making pasta with roasted grape tomatoes, basil, and parmesean.
 
Easy dinner tonight because the in-laws are coming to visit soon and I have major cleaning to do. Since DS has been home from school I've been putting off housework for fun stuff.

BBQ pork chops, mac & cheese, and corn.
 
I didn't get to post yesterday because the server was busy each time I tried. Last night, we had grilled chicken wings, broccoli and rice.

Tonight, DS is eating at my in-laws, while I take DD skating. DS is supposed to have baseball practice after that, but it's raining, so I am guessing it will be canceled. Either way, I am planning sandwiches for me and DD...either fresh mozzarella, tomato and basil or curried chicken salad for me and probably ham and cheese for her.
 
Tonight we are having hamburgers and steak fries. I need something quick and that is a bit of a comfort food tonight :)

My roast was so good last night. I fished it out of the Crock Pot to slice it and it fell apart!! It was so tender!! :)

Tonite we are having a gamelli pasta with fresh tomatoes, garlic, spinich and chicken. Some sort of salad with it.
 
I'm going to be on a field trip with DD8 all day today so no real cooking here. DH can pick something up for himself after work and I'll probably just make a big pot of mac & cheese for the kids and me when we get home. :sunny:
 
Citrus grilled shrimp, cous cous, corn and asparagus.

Citrus Grilled Shrimp

Shrimp
Lemon juice
Lime juice
Basil
Salt
Pepper

I put the shrimp in a bowl with a lid, then I add enough lemon and lime juice to cover them. Add the basil, salt and pepper, put the lid on and shake to mix everything up. Then I marinate overnight and grill them until done. Because of the juices it doesn't take long.
 
It is STILL raiaing here. We are going to float away! Tonight I am continuing to use up stuff from the freezer: turkey meatloaf with sage gravy, macaroni and cheese made with whatever last bits of cheese I can dig out of the cheese drawer, and honey-glazed carrots.
 
The rain did stop briefly this afternoon, and I was contemplating grilling. However, as soon as DD and I got down to the bus stop, without the car, it started raining again. DS got off the bus and asked, "Mom, why didn't you bring the car? It's raining." As if we didn't notice.

No grilling. I made pizza.
 
Tonight is NC Beast's birthday so I'm making crabcake sandwiches, mixed veggies and broccoli. I made an upside-down pineapple cake for dessert.
