I've made chicken spaghetti before. All I do is brown some chicken thighs and then simmer them in sauce. We have that instead of meatballs sometimes.
Thanks, that sounds good. I am always looking for easy ways to make the same thing taste different. Does that make sense? Do you remove the skins from the thigh, or leave it in place?
