Your dinner looks great. Chipotle is my new best friend, I bet it made the sweet pototoes out of this world.

I love chipotle too, but I learned after tonight, that I should use a little less. The sweet potatoes were HOT!

Oh, and I meant to respond to your request for recipes for appetizers to serve with your fried wontons. I posted a recipe for shrimp seviche a while back that would be great...unfortunately, I can't make it anymore as DS is severely allergic to shellfish. I miss it though.

Here's the recipe for the sweet potatoes:

Mashed Chipotle Sweet Potatoes

3 lbs sweet potatoes
1 cup light cream
4 tbsp butter
2 tbsp chipotle peppers in adobe sauce
salt and pepper to taste

Peel and cut sweet potatoes into cubes (I just sliced them and cooked a little longer). Put in pot and cover with water. Bring to a boil, then reduce heat to medium, cover and cook 15-20 minutes until soft.

In separate saucepan, bring butter, cream and chipotle to a boil, then reduce heat and cook for an additional 10 minutes until cream thickens.

Drain potatoes, and mash with chipotle mixture (I would remove chipotles before doing this, unless you like fire in your mouth :scared1: ) Season with salt and pepper.

Tonight we had the big salads again. Dh actually made the dinner so we never had the roasted corn. He wrapped them in saran wrap and put them in the microwave.

The other night I made up a Spicy Chicken Alfredo with fresh veggies dish and thought of this thread. But I need to try to get a recipe together to post it for you. I took Tyler Florence's Alfredo recipe from the Food Network website and used some spice rub my boyfriend came up with on the chicken. The veggies were frozen peas, fresh broccoli and fresh asparagus. They were picked from the garden the morning before. The dish was amazing.
 

Kathy -- I used the Goya brand chipotles in adobo sauce. They came in a can. I found them in the Spanish foods aisle in my grocery store.

If I have any other pretty meals before DSis returns, I'll post more food porn. However, I am not promising anything. We are having a sundae party next week for the neighborhood kids so I could probably get a good hot fudge sundae picture. Maybe. They might eat it before I get the photo.

Hey Kathy! Check out the ethnic aisle. I'm sure whole foods has them, and prolly save-a-center and world marketplace. If not, A&P gets them in every now and then. But they sell out fast here!

Lindsey- How are you feeling today? I hope you are not as sore as you were yesterday from your fall the other day!!

Kathy- It is a great first step in figuring out that you are suffering from depression......that is the only way to get better is to realize you are in it.....I know, I speak from experience..... If you don't mind a little background, I had a pretty rough life growing up,(other then my grandparents who were the most amazing people, well my grandmother still is but GF passed 7 years ago) and then I dated a guy for 4 years that beat the crap out of me physically and emotionally (the emotion part is so much worse then the physical), I then got the strength to get out of that, and started dating dh (we had dated before in high school years ago and met up at a friends house and started out as friends for a year before we dated). Thought I was ok until I had ds and then I got hit HARD with ppd....I was lucky that my dr saw the signs right off and got me on zoloft and it did wonders for me, took me about a year, but the fog did clear. (Looking back I realized that I was suffering the whole time, it just took the pregnancy hormones to make it so I was unable to hide the unhappiness) I suffer from a bit of anxiety depression at times still and carry ativan for when that hits. Not often, but once in awhile.
There is no shame in depression, it is an illness just like any other, society I think is finally (I HOPE) starting to realize that.
Go and talk to your Dr, it will be the best thing you do for yourself and your family....life is to short!! I send you big hugs from Maine!

Today is lunch and a movie! We are going to the American Cafe (loooooooooove their spinach con queso!) and going to see Fracture (or at least try to). So no cooking for me!

Kathy, the can is small, like an 8 oz tomato sauce can and is in the mexican section usually near the green chiles.

How do you get him eot cook? DH thinks he is cute and says he can cook, but if he is in charge of dinner he calls DD and she picks up Chinese or pizza :confused3

Lindsay- I thought we agreed that you need to take it easy and heal. Don't you know that your WFD friends are feisty women and we are just looking for an excuse to swoop down on your house with some smothering and some "home remedies" and you know what we prescribe...........

Really- take it easy and let yourself get well. You had a bad fall and your shoulder was not healthy yet. Have fun at the movies, and let your Sweetie pamper you.
 
Okay, I was too busy talking so I forgot dinner. I did not cook last night and we never went out to eat. I got in late and had leftover roasted potatoes and chocolate ice cream. I'm Irish so it was so good! I never di ask what DH had :confused3

Today is going to be a busy day if I can move away from the DIS. I think something simple on the grill maybe.

Thanks Wendie and all of you for sharing your stories with me and the rest of us here. I don't feel as alone as I did, realizing the possibility that I am facing this disease. Hugs to you all.:grouphug:

I was planning on doing Nancy's pork roast, but we decided last night to upgrade our family from a one desktop computer home to a two laptop family. This will be a birthday present for DS, so my computer whiz girlfriend & I will be computer shopping today! My Omaha steak package came in so I'll try some of that for dinner tonight.

Lindsey-Nancy is right, we will all be on your doorstep if you don't take it easy on that shoulder!! Now go enjoy your movie and don't lift anything heavier then a bag of 40 dollar popcorn!!

Kathy- I am looking for a laptop as well, so let me know what your computer friend has you go for, I am lost as what to get. (also glad that you are not feeling alone on the ride of depression.....remember it is just downhill at the moment, but in time you will be going back up again and we will all be riding right along with you!!)

liamandcaili- that picture was just what we needed on here, it looked delish!

Glynis- HAPPY ANNIVERSARY!!! (and remember as Lori found out for all of us...magic shell should will only work on the ice cream for dessert;)

ds and I are going to be busy running an errand then to the movies (he doesn't know yet but he needs a fun thing as dh is working all weekend and ds is such a good sport about it) to see Shrek.
If we don't grab something out (though we might as quizno's is right next to the theater and we love that) I will prob make either Haddock something or Steak tips------I have both out to use this weekend--- I have no idea what the sides will be either--------so maybe I should just say,

It's Cap'n Jack for me tonight! And Morton's wedges and cocktails. We won a $100 gift certificate for Morton's last night at the Hamster Derby and it's right by the fancy-schmancy theater that shows foreign films and documentaries that is infestered with Pirates... So a couple apps and wedge salads with yummy blue cheese and a couple martinis then the movie with sodas and popcorn! I know that sounds like alot of food, but dang! the movie alone is almost 3 hours long! I already told Rick- don't get po'ed at me for having to miss part of it to potty...I always have to do that-even for a regular length movie!

Thurs. Evening my sis-in-law ( Alexis' Mom ) brought us dinner from Whole Food. :banana:

Yesterday, DH took off & we went see Pirates! It was good Jack & Will are hotter than ever!

Then we went to a Honduran/Mexican rest. we loved Post-K & it just reopened this week, almost 2 years later. It was packed, but the food was delish!!

Can't decide if we are going to go check new homes at the Home Show or go to the NOLA Wine & Food Grand Tasting. We're both fighting sinus issues, so lots of wine drinking might not be the best idea.

Lori, Two great Steakhouses in one weekend! That's livin large!:banana:

I've used them for several years now and have always been satisfied with my purchases. I think Dan Murphy was the one who told me about the site, I know for certain it was here on the CB I learned about it years ago. You can sign up to get their daily email of deals.

Let me know if you want info on some of the specific deals I've gotten through them or if you want me to forward you the email I got today. I just checked it and there are a few laptops listed.

Tell me about it!! I remember going to see Lord of the Rings when I was 7 months pregnant with the twins. I didn't want to miss any of the movie, but I was needing to go so badly!!!! I almost made it, but not quite. I had to leave during the final battle!
