Your dinner looks great. Chipotle is my new best friend, I bet it made the sweet pototoes out of this world.
I love chipotle too, but I learned after tonight, that I should use a little less. The sweet potatoes were HOT!
Oh, and I meant to respond to your request for recipes for appetizers to serve with your fried wontons. I posted a recipe for shrimp seviche a while back that would be great...unfortunately, I can't make it anymore as DS is severely allergic to shellfish. I miss it though.
Here's the recipe for the sweet potatoes:
Mashed Chipotle Sweet Potatoes
3 lbs sweet potatoes
1 cup light cream
4 tbsp butter
2 tbsp chipotle peppers in adobe sauce
salt and pepper to taste
Peel and cut sweet potatoes into cubes (I just sliced them and cooked a little longer). Put in pot and cover with water. Bring to a boil, then reduce heat to medium, cover and cook 15-20 minutes until soft.
In separate saucepan, bring butter, cream and chipotle to a boil, then reduce heat and cook for an additional 10 minutes until cream thickens.
Drain potatoes, and mash with chipotle mixture (I would remove chipotles before doing this, unless you like fire in your mouth
