:surfweb: I will really be reading through all these posts this week and next! I am trying to cut our grocery bill in 1/2 for the next 2 weeks until we leave for Florida!! We will certainly be scrimping and scrounging, eating out of the freezer and cupboards for a bit. :p We figure we will eat like kings while we are at WDW, and the kids are prefectly happy with PB&J and cereal for dinner any night anyway!! All the more money for our vacation!! Which is less than 3 weeks away I might add!! :banana:
 
Leftovers from the fridge tonight.. free! The kids will be whining for sure, and to make it worse, I am making them heat it up themselves..:cool1:! One bad Momma today:lmao:.
 

Hi guys,

Thurs. night we had a cold plate for dinner. Nice change. We had chicken salad on a bed of lettuce with tomato slices, coleslaw, and cottage cheese. Friday night, we had sloppy joes, coleslaw, and kidney beans. I'm thinking about tonight's dinner, but nothing is coming to mind right now. It's early. Time for the second cup of coffee!
 
Last night I cooked Hamburgers and Chicken on the grill, then added a big old Salad to go along with it. It was so yummy...
 
I typically throw in at LEAST 2 new recipes a week in my menu. Most of the time when the kids ask what we're having for supper I say "we're having yuck-I-don't-like-that". :lmao:
Last night was a HIT!! I was trying to think of what to make with what I had on hand and I came up with this. The recipe itself isn't that original but the spicy thai chili tuna added the kick! My kids and hubby absolutely loved it!

2 boxes of deluxe mac n cheese
1 can of cream of mushroom soup
1 can of the new bumblebee tuna (Spicy Thai Chili)

I can't tell you how much everyone raved over it.:cool1:
 
I used to eat tuna casserole all the time as a kid, but my family won't eat it so I don't make it.. Sounds yummy..:love:
 
Last night was leftover chili...dh and I had ours on a baked potato, and DS12 had his over leftover rice. DS8 doesn't "do" chili, so he had chicken tenders and fries from the freezer.

Tonight I'm not sure. I'm thinking that I might get one of those roasted chickens at the store. We all have plans tonight, so I need fast and easy.

Tomorrow I'm making Apricot Glazed Pork Roast in the crock pot. It's a new recipe, so hopefully it will go over ok.
 
Tonight is Roast, Mashed Potatoes and Carrots. I also made homemade rolls, they are rising as I type..
 
Tonight we are doing individual foil packets on the BBQ.

I have some boneless skinless chicken to cut up, and some smoked sausage to slice up as well. Each can choose what meats he or she wants, or be meat free. I also have an assortment of veggies, some fresh, some frozen; broccoli, cauliflower, carrots, potatoes, asparagus, snow peas, and mushrooms. When each has chosen what he or she wants, we layer it all on a piece of foil and season to taste. For seasoning, we have butter, olive oil, fresh garlic, S & P, herbs, and lemon or lime juice. Seal the foil up tightly and toss it on the BBQ grill.

How long to cook is kind of a trial and error thing... it depends on how hot your grill is, how big your ingredients are cut, and how large/full your foil packet is. Take off the grill, be VERY careful in opening (especially since the steam inside will be REALLY hot) and if your bits aren't quite done cooking, re-seal and toss back on the grill for a while.

When the packets are done cooking, open them up and dump each in a bowl, and serve with crusty french bread to soak up all the yummy juices. :)
 
Tonight we're having steak, baked beans, and steamed veggies. Ice cream for dessert. :)
 
tonight was terriyaki chicken, rice and green beans.

have no clue on the price but the only thing that hadn't been on my shelf forever was the chicken so probably 6 bucks.

Tommorow I am going to do krautburgers. YUMMY!!:goodvibes
 
We split a can of Progresso soup ($1.20) and DD had Ramon noodles since she hates soup and it was (.17). We ate Oyster crackers too, probably 1/10 of a box and the whole box was 1.00! Very cheap and totally unplanned but we had a big lunch and wanted something light.
 
Tonight we're having grilled chicken that has marinaded in Italian dressing, summer veggies in a cheese sauce (frozen), another veggie and some black cherry jello with Cool Whip.

I've got a pot of cabbage soup on the stove simmering now. I'm modifying a friend's recipe to what's on hand. I've used 2 cans of Del-Monte's Zesty Chili style diced tomatoes, about 1 1/2 cups of water, and about the same 1 1/2 cups of Prego spaghetti sauce. I put all of that in a large stock pot. I added about 1 1/2 lb. cooked & drained ground beef, a can of drained & rinsed light red kidney beans, a can of drained & rinsed black beans, and about 1/2 a head of cabbage finely shredded. Smells great. We may have this for dinner tomorrow. I have enough for dinner and a few lunches. I'll let you guys know how it turns out. I modified it a bit as I don't want to make a grocery run, (it was great as it was) so I'm hopeful. If smell is any indication, it's a winner!!! :)

Sorsha, the BBQ foil packs sound great! I'm going to keep that on file! Thanks for sharing. :)
 
We had burgers on the grill with whole wheat buns, corn on the cob from the farmers market and homemade french fries. Total is about $7.00 to feed 3 people. It feels like a hot summer day today so grilling was our best option.

You are killing me here! I made a pot of chili today since the weather is so yucky. I can only dream of going to a farmers market. Now I know why my mother left Ohio and moved to Flordia:)
 
1/2 a box of Barilla Plus Spaghetti - $1
Meatballs - $2
Spaghetti Sauce - $1.50
Green Beans - $0.50
drinks/spices: $1.10

TOTAL: $6.10 (5 servings (3 dinners, 2 lunches), so $1.22 a serving).
 
DH has been bugging me to make some club sandwiches, so I plan on making them tomorrow night. I have some leftover ham frozen & everything else is items on hand that I use for the kids lunches, so I have to say my cost is going to be $0. I'm just using up some condiments and excess items! Plus it's easy to make.

I got a beef....why is it I went and did my grocery shopping last night and my refrigerator is emptier than before???
