What's for dinner? Was it "budget"?

Shhh. I did it! I made the meatloaf and added pureed cauliflower (from last night). No one knew! Shhh. I modified a hamburger patty recipe from "Deceptively Delicious", with my meatloaf recipe (in my head). I couldn't taste the cauliflower either! Yea! I know the kids got some veggies. I'll tell DH later, but he loved it! He said it was possibly the best I've made. Hee hee. :laughing: He won't care. But I'm not telling the kids for nothing!
 
Pretty cheap last night and tonight.

Monday night - black beans and rice with sausage

1lb. sausage $3
black beans $1
rice .25 cents

Total = $4.25

Tonight - spaghetti with meatsauce

1 jar ragu $1
1/2 lb. ground turkey .50 cents
1 box smart pasta $.66 cents
DH and kids ate fresh veggies out of the refridgerator.

Total = $2.16 cents

Also took leftover bean and pasta and mixed with 1lb. ground turkey and 1 can diced tomatoes and chili powder and cumin for leftover black bean chili for lunch for me and DH. That cost $1.75 counting all spices.:banana:
 
I am feeling very blessed right now....a friend brought over dinner for my family just cuz.:goodvibes

pork chops with potatoes, apples and steamed broccolli....all healthy also!!

Tonight we're having Italian chicken (made in the crockpot) over egg noodles and a side of green beans. Should cost less than $5.00 since I got everything B1G1 free.
 
Tonight is chicken drumsticks (I have some shake n bake in the cupboard), and probably baked potatoes and a veggie (frozen). My DS8 loves this particular meal...and since my oldest eats at church on Wednesday nights, it's DS8's night to choose!

baked potatoes: .75?
veggie: .50?

3.25 for 3 people, with leftover chicken legs I'm sure.

We're having chicken in the crockpot too. I just seasoned mine and put it in with a little chicken broth and some green beans. I love our crockpot. Dinner is set! :banana: Don't know what else we'll have with it, but the sides are easy.

Campbell's® Cheesy Chicken & Rice Casserole
Nutrition Information
From: Campbell's Kitchen
Prep: 5 minutes
Bake: 50 minutes
Stand: 10 minutes
Serves: 6


Ingredients:

1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 1/3 cups water
3/4 cup uncooked regular long-grain white rice
1/2 tsp. onion powder
1/4 tsp. ground black pepper
2 cups frozen mixed vegetables
4 skinless, boneless chicken breasts halves
1/2 cup shredded Cheddar cheese

Directions:

Stir the soup, water, rice, onion powder, black pepper and vegetables in an 11 x 8-inch (2-quart) shallow baking dish.

Top with the chicken. Season the chicken as desired. Cover.

Bake at 375°F. for 50 minutes or until the chicken is cooked through and the rice is tender. Top with cheese. Let casserole stand for 10 minutes. Stir rice before serving.



VARIATIONS (after you've tried the original):
Try It Alfredo: Use 1/4 cup grated Parmesan for Cheddar cheese. Add 2 tablespoons Parmesan cheese with soup. Use broccoli flowerets for vegetables. Top chicken with remaining Parmesan cheese.

Trim It Down: Use Campbell's® 98% Fat Free Cream of Chicken Soup instead of regular soup and use low fat cheese instead of regular cheese.

Mexican: In place of onion powder and pepper use 1 teaspoon chili powder. Substitute Mexican cheese blend for Cheddar.

Italian: In place of onion powder and pepper use 1 teaspoon Italian seasoning, crushed. Substitute 1/3 cup shredded Parmesan for Cheddar.

we take leftover baked chicken warm it up with taco seasoning and water.

put a layer of enchilada sauce on the bottom of the pan.

place warm chicken and a handful or so of cheese in a tortilla and wrap it up.

place in pan and repeat step 2 till full.

another layer of enchilada sauce and a layer of cheese

in the oven for about a half hour in a 350 oven.

We use green sauce in a can...usually can get 2 meals out of a can. I also will put onions in the cheese sometimes. If it's just cheese enchiladas I put taco seasoning in the cheese.

We have some petite sirloin steaks for tonight, probably on the BBQ.
I never made potato cakes with the leftover mashed potatoes the other night, so definitely going to do that tonight. I think we will have some fresh steamed asparagus to go with it. :)

Hi guys,

I'll jump in with a couple of delicious meals that my kids have loved since they were babies.

My Italian MIL taught me this:

Broccoli with Garlic and Oil

Being Native New Yorkers with strong ethnic backgrounds (Italian/Spanish) We love olive oil, so I never skimp on it. We use the Goya Olive Oil - Consumer reports tested all different kinds from the cheapest to the most expensive and Goya had the best.....

Put a pot of water on and bring it to a boil.

In another saucepan, take a bag of chopped broccoli and steam it until it's to your likeing. Put that aside.
When the water is boiling, add the type of macaroni that you like. Linguine is good with this, but so is the rotini, or any squiggly shaped macaroni - it holds the chopped broccoli well.

Now for the "sauce". I don't know measurements, I just know how much I use. What I do is I put about 1/4 to 1/2 inch of olive oil into a regular saucepan. I heat it up on a low flame and then I add fresh chopped garlic (we love that, too). I use about half a head of garlic, so I guess that would be about maybe 10 cloves? So you fry that up. It burns quickly so you have to watch it. When it is just beginning to turn brown, add the broccoli and let that fry for a minute in the garlic and oil. Before the garlic turns a dark brown, you add one and a half (1 1/2) to 2 cups of water. Right away the garlic will stop frying.
Hopefully by now, you've added your macaroni to the boiling water. When that is cooked, drain it, put the macaroni in a nice big dish (or back into the pot like I do!) and then add the hot broccoli/garlic and oil mixture. Serve with A Lot of grated cheese and garlic bread.
I usually add grated cheese when I mix it all together in the pot before serving, and then everyone piles on the cheese when they get it on their own plates.
My MIL adds the Crushed Red Pepper (the kind you put on your pizza) but I don't like that and neither do the kids, but you might like it if you want a little zing.

1 pound of macaroni - $1 - $2.00
1 bag chopped broccoli - $ 2.50
8.5 oz. Goya Extra Virgin Olive Oil - $4.00 (you're not using the whole bottle)
1 head of garlic - $ .50
1 loaf of garlic bread - $1.99

Now that's a budget meal! Muy Delicioso!

A delicious summer "salad"
1 pound elbow macaroni
1 can Goya pink beans
1 can Goya garbonzo beans
1 or 2 cans of Tuna (in water)
Salt, Pepper and Mayo - add to your likeing

Boil elbow macaroni. Put into a bowl. Open and drain both cans of beans. If some of the "juice" is left, that's okay- it's flavor. Open and drain the tuna and add to the beans and macaroni. I normally add maybe about a half cup of mayonaise, salt and pepper. Put it in the fridge and serve when it is cold.

I usually cook this up in the morning so we can have it for lunch or dinner with sandwiches. I could eat this on my own if I didn't have to share it with the kids - they love it, too. This is a great summer salad and it's cheap, too!
