What's for dinner? Was it "budget"?

My dad called tonight & said he did "freezer inventory" and had a pork loin that was getting old so he did it in the crockpot last night. He brought most of it over & I shredded it & added a bottle of terriyaki BBQ sauce I got for $.50. Then I made a RiceARoni that I bought for $1.00 but had a $.35 coupon doubled ($.30) and half a bag of Spongebob green beans I got for $1.00 with a $.50 coupon doubled- free! So for $.80 I served a family of 5 pulled BBQ pork, paremsan rice, and green beans. Yippee! Thanks Dad!
 
Tonight is baseball practice night, so we are eating McDonald's so not so budget. Tomorrow we are cooking shrimp and chicken Kabobs on the grill with a side of corn on the cob and baked potatoes. Then Easter Sunday I am making Italian Beef made with beef brisket and homemade macaroni salad..Yummy I will start cooking it tomorrow it takes at least 12 hours to cook.. Not so budget but I am sure we will have leftovers..:lovestruc
 
tonight was fish sticks and mac & cheese....yummy, but neither really cheap or healthy...I needed some comfort food tonight.

Last night we had
Anasazi Beans with ham (.50 for 6 servings (ham was leftover, thereby free)
Jiffy Cornbread and 1 egg .50

Tonight we're having
Ham and Cheese omelets (ham again free) with lots of veggies in them!

Tomorrow maybe grilled ham and cheese sandwiches...

(we have a lot of leftover ham)... *eyeroll*

-stringbeans with pine nuts in pesto (yum)
-Carrot Cake

The meal would be considered budget tonight since it's leftovers, but when I purchased it on Sun. it would be a Budget Buster:rotfl: :confused3
 
We are leaving for Florida this aftrenoon, so we were totally budget the past two weeks! We ate everythng and anything that we had in our cupboards and freezer we possibly could!! We took leftovers home from Easter so we coul get through last night!! We only bought what was needed to get though the week! But the sad thing is I still spent $75 to get through the week!! Better than the usualy $150+.... Grocery prices are getting so out of control!! Pretty sad when yo buy only a few staples, lunch meat and snacks for a family of 5 and its stil near $100.... But thats a discussion for another thread I think!!:surfweb:
 
Tonight is Mediterranean Chicken in the crockpot.
I got this recipe a long time ago, and basically modify it each time I make it to suit our tastes and to use up what's in the cupboard. ;)

Into a crockpot, dump 1-2 cans of diced tomatoes, your favorite flavor. Right now I am partial to the "Fire Roasted with Garlic" ones. To that, add 1 jar of artichoke hearts (either marinated or not, I like the marinated ones cause they add a little ZING to the sauce), one can sliced mushrooms (or fresh, sliced) and one small can of sliced olives (can be the normal black ones, or the green ones, or even kalamatas). Add 1-2 cups chicken broth (or a combination of broth and white wine) to make it as "sauce-y" as you would like it. Season with S & P and your favorite herbs. The original recipe also called for 1 medium diced onion (we don't cook with onions, so I leave it out), 3 tsp curry powder (again, don't like it, so skip it... I also think it would taste funny with the marinated artichokes), and 3 tbsp quick-cooking tapioca (if I think it needs to be thicker, I use cornstarch at the end). Now take enough chicken breasts or thighs (I use boneless, skinless but you can also use bone-in, just take off the skin) to feed your family and poke them down into the sauce so they are submerged. Cook for 7-8 hrs on low or 3-4 on high. Serve chicken and sauce over rice or pasta. I usually serve a small salad and some crusty french bread or garlic toast as well.

tonight was find your own meal....I had thought of doing ravioli with spaghetti noodles for some of us but I ran out of spaghetti noodles and didn't remember:confused3

So we had cheeseburgers and hot dogs on the grill.

Tomorrow is roast and some kind of taters.

Last night we had fried chicken (just had a craving), waffle fries, and green beans. I don't know what we'll have tonight. I'm thinking about it. :upsidedow
 
Tonight is a spaghetti dinner at church my son goes to daycare at, its a rewards program for the kids who attend daycare, tutoring etc. My hubby and middle son will grab something on the way to ball camp.
 
Last night, I made a recipe I saw Sara Moulton make on GMA the other morning. I sauted four chicken breasts in olive oil until they were brown on both sides and cooked through. In the same skillet, I sauted a large chopped onion and one clove of garlic until soft. I added four chopped plum tomatoes and cooked down. Then I added 1/4 cup of balsamic vinegar and cooked down until it was reduced. I added some seasonings to taste (salt, pepper, Italian seasoning). Served this tomato sauce over the chicken. It was really tasty!! I served with a salad. No starch last night...we're trying to cut back a bit (calorie/carbs-wise).

I figure the entire meal was under $8 to make for the four of us. Not bad!!
 
Tonight I think I'm making potato soup. Potatoes, carrots, celery, onion, chicken broth, cheddar cheese and American cheese (a little bit of each). Maybe $3 for a large pot?
 
Last night was Hamburger helper & corn, rolls.
I had a long soccer meeting last night so fast and easy works.

Tonight.
It will be
Mac & cheese .50
buns- free (my friend gave them to me after the BBQ on Sunday)
hotdogs- free (again from the BBQ)
watermelon & veggies - left over from the trays I bought on Sunday for the
BBQ.
So roughly around a $1.00
hmm...I wonder if any other friends have food to give away?:lmao:

But tonight we have both soccer & baseball so I am all for quick and easy.
 
Tonight we are having French Dips with smoky provolone cheese melted on them, and Au Jus for dipping. Also French Fries, and a veggie of some sort... maybe green beans. :)

I'm new to this forum - I spend *lots* of time on the Wedding board (DFTW in just over 10 months - BIG motivator to save $! ;) ) And we just found out that both DF & I need root canals + *new* crowns put on teeth we've both already had worked on! :scared1: When it rains ...

Anyhoo, I've started making a huge pot of spagehitti sauce on the weekends, and dishing it into freezer containers the right size for a dinner for two. Not incredibly original, but you just can't beat the feeling when you don't want to cook that you don't have to get take-out! :idea:

I think I might sound kind'a silly, but I find it empowering. DF & I are working very hard to get rid of a fair amount of debt, and every success is motivating! :woohoo:

Sorry for the long post - dinner tonight is angel hair pasta w/ sauce and a salad.
 
Last night was leftovers from Easter dinner--bbq prime rib, asparagus and fiesta potatoes. Yum. Tonight I think I'm going to make some fish (I have some tilapia frozen), a salad and....? Whatever vegetable is in my freezer.
