What's for dinner? Was it "budget"?

You are killing me here! I made a pot of chili today since the weather is so yucky. I can only dream of going to a farmers market. Now I know why my mother left Ohio and moved to Flordia:)

Ditto! I am in NH and dont think we will see grass, let alone flowers or fresh veggies until July!! :confused3 :eek: We cannot evn see our grill on te back patio - its totally covered with snow!!
 
tommorow night is krautburgers

hot roll mix: $2
hamburger: $3 for 2 lbs
cabbage: about $1
onions: 25 cents about


the filling actually made enough for two batches of hot roll mix so I will freeze and do it at a different time.....so $8.25 for two+ meals (this will make probably supper and lunch per batch for 3...youngest won't eat them) definitely budget and yummy!!:cool1:
 
Tonight is Corned Beef and Cabbage, of course!

The corned beef and potatoes are simmering away in the crockpot, and I will give a head of cabbage a rough chop and throw that in about 3:00 PM. YUMMY! :thumbsup2

My aunt lives in NH, and she said it looks like a deep grave where her septic tank is! The snow melted in that area, but it's deep as can be around it!:rotfl:
 

I made chicken corn soup tonight with the leftover roasted chicken I bought on Saturday. Talk about getting the most for your money! The roasted chicken was 4.99...we got three meals out of it! Plus, I now have leftover soup that will cover a couple of lunches. Gotta love it!
 
We had a shrimp stir fry that I got frozen at Walmart for $4.00. Along with it we had homemade bread and oranges for dessert.

Tomorrow (it's 2am, so technically, today) we're having Pork BBQ sandwiches made with BIG1 pork loin. Along with it we'll have homemade perogies. YUMMO.
 
Tonight we are doing individual foil packets on the BBQ.

I have some boneless skinless chicken to cut up, and some smoked sausage to slice up as well. Each can choose what meats he or she wants, or be meat free. I also have an assortment of veggies, some fresh, some frozen; broccoli, cauliflower, carrots, potatoes, asparagus, snow peas, and mushrooms. When each has chosen what he or she wants, we layer it all on a piece of foil and season to taste. For seasoning, we have butter, olive oil, fresh garlic, S & P, herbs, and lemon or lime juice. Seal the foil up tightly and toss it on the BBQ grill.

How long to cook is kind of a trial and error thing... it depends on how hot your grill is, how big your ingredients are cut, and how large/full your foil packet is. Take off the grill, be VERY careful in opening (especially since the steam inside will be REALLY hot) and if your bits aren't quite done cooking, re-seal and toss back on the grill for a while.

When the packets are done cooking, open them up and dump each in a bowl, and serve with crusty french bread to soak up all the yummy juices. :)

seems expensive at about $8 until I took into account the last time we went to McDonald's three out of the 4 of us got icky tummies.

Tommorrow will be build your own burritos...found a beautiful steak, perfect for fajita/burritos for $3 and the rest should probably cost around $3 so $6 for a yummy meal.
 
For a family of four:

Turkey breast cutlets (pan fried) $4.50
asparagus $2.00
mashed potatoes .60
skim milk $.70

Dessert: strawberry short cake w/ fat-free cool whip $3.50

Total: $11.30, but have leftovers for lunch tomorrow for DH and myself.
 
Tonight we're having BBQ pork chops, yellow squash, and baked beans. Maybe pudding for dessert. :)
 
UGH, I'm just getting over the stomach virus, so I had nothing yesterday, and I can't say I'm excited to eat anything today either. DH fed himself and the boys last night. I think they had homemade pizza. As for tonight...I think it's going to be a "free for all"...whatever they can find in the fridge!
 
Dinner last night was practically free! DMIL gave us frozen burger patties and buns leftover from a family BBQ. I made small portions of fries that I had in the freezer that I had gotten BOGO and with a coupon. We had just a lettuce salad and the head of lettuce was on sale for 99 cents and we got 3 meals out of it (this was the last one). So, I'd say it cost about 50 cents!
 
Not sure what we will be having tonight.
Eldest DD is having her best-friend-since-kindergarten over for a slumber party. While I love this child dearly, she is a terribly picky eater. Her favorite (and only) meals are Kraft mac-n-cheese with hot dogs, or pizza. DD says she has been out a few times with this child and her parents at a restaurant and seen her deviate from these foods, but she tends to deviate in an EXPENSIVE way.... she will order filet mignon or lobster tails! So I will have to wait till this child gets here and ask the girls to root around in the freezer and pick something. LOL
 
tonight is bbq turkey sandwiches and mashed taters...it's a quick fix supper as oldest has a 6 PM call time for band tonight.

Our local foo foo grocery store has a midweek mania sale....yesterday was buy one lb get one free of pork and/or turkey bbq....never had turkey so this was a good way to try.

Using 1 lb of the bbq: $2.49
prepackaged (but oh so yummy) fresh mashed taters: $1 and change
bread: 25 cents
green beans: 25 cents

so about $4 for the four of us...I hope the bbq turkey tastes good:rotfl:

Last night, I had toast with peanut butter & jelly and milk for dinner because it sounded good. My husband had leftovers of something I make called Death By Garlic--it's his all-time favorite. Pasta, garlic (tons!), olive oil, a litle butter, salt, red pepper and I threw in some shrimp. I make this (without the meat) about once a week or every 2 weeks--it's fast, easy and inexpensive.

Tonight I'm making nachos. I am still trying to decide if I will use ground beef or a can of chili on top. I'm thinking chili.

Tonight is not really budget, but I had to post anyway:

We have a potroast in the oven that I got 50% off for $9.00. We'll eat half & I'll freeze the rest.
Then I found a Caesar Salad kit at the store that was on an in store special for $1.26 and I had a $1.00 coupon so that was $.26.
Then I bought Pillsbury crescent rolls with a coupon for under $1.00
And I'll make fresh steamed asparagus $1.00

So for my family of 5 it'll be Pot Roast, crescent rolls, caesar salad, and asparagus for $6.75. Not bad for what it is! My dh saw me preparing it this morning and was already excited! He felt like we were getting a big treat.
 
Last night was my son Jeremy's turn to cook. He made portobello mushroom sandwiches. He took a whole wheat baguette, cut it into four pieces, sliced each one lengthwise, spread them with garlic hummus, and toasted them on a baking sheet in the oven. Then he sliced up a couple of portobello mushrooms and some red peppers and onions and grilled them on the indoor grill (he does this on the BBQ when we don't have two feet of snow on the ground!). Took out the toasted baguette slices, put the mushroom and peppers inside, topped with vegan cheese slices and pressed it all briefly in the panini press. Served with a green salad. Very tasty and filling (I couldn't eat all of mine!) and quick, too.

The night before I wanted to use up half a head of cauliflower, and it was just me and Dan at home for dinner. So I put two heads of garlic in the oven to roast (wrapped in foil, tops cut off and drizzled with a little olive oil). When they were nearly done, I boiled together two potatoes cut into pieces, the cauliflower (cut up) and some carrots, and set some broccoli steaming and heated up a can of baked beans. When the first group of vegetables were done, I drained and mashed them with the roasted garlic and served that with the steamed broccoli and baked beans. Very delicious, especially if you really like garlic. And we had leftover mashed veggies that Dan took to work the next day.

Tonight we're having stuffed pork chops with garlic mashed potatoes and green beans. There were will be some leftovers too!! YUMMO.
