What’s for Dinner Tonight?


Starting tonight, we have nearly a week of celebration dinners...

Tonight - my boys and I are taking my wife out for a retirement celebratory dinner, as today marks her unofficial last day of work for her career (technically, she works Monday, but really won't have much she needs to do).

Saturday - dinner out with my best friend (and the family). It's our annual Christmas tradition of Straight No Chaser in concert.

Sunday - Christmas dinner in PA with my side of the family. My mom will make an Italian feast

Monday - Christmas dinner at my BIL's house. I think they're also making Italian, so we'll be carb'ing up for a couple days :teeth:

Christmas Eve morning - brunch at our next door neighbor's house. I need to make Monkey Bread in the morning for that.

Christmas Eve dinner - Prime rib dinner. We invite the same next door neighbors over for the night. :)

Christmas Morning - French toast casserole and sausage egg casserole.

Christmas Night - Turkey dinner - once again, we invite others who don't have elsewhere to go. This time, good friends of ours who's kids are out of town.

December 26th - food coma and let the diet begin ;)
 
How do you bring the heat? My daughters have taken to using sriracha, but it's not my favorite combo.
I mix in hot giardiniera instead of pickles. We have some really chunky stuff right now, so I chop it smaller. I've also used chopped up pickled jalapenos and juice before I tried the giardiniera. A dash of Hot Shot (red & black pepper blend from McCormick) is pretty good, too.

And the cheese crackers are just Deluxe American cheese broken into smaller pieces and microwaved for 1 minute (on parchment paper or a silicone mat). They get nice and crunchy. Great in tomato soup or with chili, too.
 
Making homemade French Onion Soup. Onions are carmelizing now and they smell sooo good! Perfect because it is snowing outside too.
You just reminded me that I’ve been wanting to make French onion soup! I’ll definitely have to do it this week.
 
I’m headed to a holiday party. I know the host is making a Turkey, ham, and Mac and cheese. Others will bring food so it will be a fun variety. I made a cookie platter and peppermint whoopie pies.

I knocked out the dough for the almond raspberry thumbprints, made the white chocolate chip oatmeal cookies and finished the buckeyes today.
Dinner was Mississippi Pot Roast made in the crockpot since I had the oven occupied. We put it on kaiser rolls and had corn as a side. Honestly, I was just going to serve chips as a side, but apparently, everyone in the house finished the bags we had here! 🙄

Just a sampling for the family. They were complaining that they never get to eat any of the cookies until Christmas Eve. 😂

Tony Chachere's and Crystal? Are you from NOLA? I used to love driving by the Crystal factory- such a good smell!!

Today I am making french onion soup. It wasn't planned, but I found a big bag of garlic croutons on sale at Walmart, and they had beef rib bones for $2.65 a pound, so onion soup it is. I'll roast up some of the rib bones for stalk (and lunch, I love beef ribs) and get the onions started. I'll do at least 4 pounds of onions, so there's some peeling in my immediate future, I guess. I also might make pasta e fagioli. We are all mostly home, most of the week, so it'll be good to have some go-to soups ready for lunches or quick dinners.
