What’s for Dinner Tonight?

A light dinner tonight. Christmas Eve dinner was at my Sister's family which was Steak n Sausage with mashed potatoes, puff pastry and veggies.Then lunch today was filet roast with potatoes, cold shrimp & veggies at DH's brother's home . So we did scrambled eggs, salad , cold leftover ham & toast tonight.
 
Sometimes we have to shift to survival mode and get through. If what you can do isn’t enough for everyone, they can contribute. Including your mother. Prayers for you.

Thank you. Unfortunately my mother is another branch of the elderly parents in failing health tree we live in these days. She's miserable because she's completely immobile and in assisted living. She has not come to terms with her situation and instead has shifted into the thought process wherein I should be there with her 24/7 to take care of her every whim, and to be her whipping post. It's become toxic and honestly unbearable.

My MIL is having a bumpy go of it and now we're down to the professionals crossing all the T's and dotting the I's to crystalize the situation for my FIL and BIL that placement in a memory care unit is absolutely necessary. This crisis has started to erode the progress FIL had been finally making in stabilizing his own health after a bumpy couple of years. Just a tough convergence of circumstances.

For Christmas Eve I prepared a couple turkey breasts with mashed potatoes, squash and salad. Christmas Day was mostaccioli, meatballs, roasted potatoes with green beans and salad. Just ended up being meals eaten in shifts as everyone had time, certainly didn't feel like the holidays. A weird year best forgotten.
 
Santa brought me pink eye. Went to the walk-in this morning. I was planning to grocery shop today but my big outing was to cvs drive thru pharmacy to get my eye drops. Dug around to see what we had and landed on tortellini Alfredo with Cesar salad and some frozen rolls.
 

Met a friend and took a drive to hit a couple of bakeries we have wanted to check out. They are about 90 minutes from us. They were all closed. I guess after the Christmas rush. We had a good laugh. We stopped for a late lunch. I had fish and chips.

Headed to NYC with two friends for a few days. We have no food plan but I am sure we will eat some great things! Seeing Phish at MSG tonight and tomorrow so our city adventures will be during the day. Hoping to dodge the rain. I’m already excited for all the amazing food that city offers!
 
I really don’t know. We had lasagna the past three nights, so that is gone now. My guests are gone now too, so it is just me. I may just have a peanut butter sandwich and some Christmas cookies and call it a night.
 
Just got back from Florida this morning. Unpacked the car (clothes, toiletries, Christmas presents and the shopping we do down there because prices are so much cheaper than Philly) so had a disaster in my house. Need to whip the guest bedroom in shape for New Years Eve. Which means we had take out pizza for a late lunch and will eat leftovers for dinner. Grocery shopping on the to do list for tomorrow for sure. I'm exhausted.
 
DD made braised short ribs for Christmas dinner, and while we ate them all, there was a ton of gravy left. This is not ordinary gravy. DD uses a healthy amount of red wine when making the gravy, and then purees the veggies that were part of the braise (carrots, celery, onion) into the gravy. It's stupendous, and yes, I kept the half-gallon that was leftover! Anyhow, tonight she made meatballs and braised them in the leftover short rib gravy, cooked up some spetzle, and sauteed carrots and green beans. It was marvelous! I am going to miss her cooking when they move to their new house! (gonna miss her, too, FAR more than her cooking!)
