What’s for Dinner Tonight?

Red chicken chili is in crockpot right now. We’re watching the Giants play terrible football and nibbling on charcuterie.

I very rarely have a cookie disaster, but I think due to too many family interruptions, I may have measured my flour incorrectly yesterday for my Raspberry Thumbprints. They were…not right. I pitched them and will remake the dough later.
 
Tony Chachere's and Crystal? Are you from NOLA? I used to love driving by the Crystal factory- such a good smell!!
Not from NOLA, but the north part of the state. We've visited NOLA many times and have found the dining there to be the best we've experienced anywhere, anytime - and we've traveled a goodly part of the USA (and some of Europe) in the past several years.
 

Pollo con camarones. It was chicken, shrimp, green beans, and yellow rice in a delicious seafood sauce. The leftovers will be lunch tomorrow. DH and I went out for our annual stocking stuffers and last minute shopping excursion. We end it with a meal at out favorite restaurant. He ordered Arroz con Pollo. The kids were on their own. 😂
 
Tonight needed to be simple to carry to in-laws -- Turkey breast, mashed potatoes, squash, spinach salad with mandarin and pomegranate and chocolate mousse pie for dessert. Kind of the general outline of the meal I had planned to take to them, but seriously slimmed due to MIL's continued hospitalization for a dementia-related episode that started late last week. With everything in flux and DH falling sick and potentially contagious it's now a dropoff only, along with tomorrow's meatballs and herb roasted potatoes with green beans and some buttermilk spice cake.

Just not a good holiday season this year. Prep for everything kind of got started, shuffled, restarted and abruptly on anxious hold all weekend. MIL may be entirely unable to return home and need to be placed in memory care. At this point just trying to make sure everyone's fed and that will just have to be good enough while I tune out my own angry mother's grousing and complaining about how I should have done this and why didn't I make that, because everybody always looks forward to it. Not this year unfortunately.
 
Eve is our traditional sandwich night. This year Port of Subs for most. DD will get hers from Jersey Mikes because they have Gluten free bread.
A variety if chips and cookie tray....also Zebra popcorn.

I normally make baked stuffed shrimp for Christmas Eve but since the house isn’t decorated and the dining room table is in middle of the living room (renovating one floor of the house) we are going out to dinner.
 
french dip sandwiches w/horseradish cheddar cheese (roast in the oven now)
potatos au gratin (will go In the oven an hour before we eat)
pasta salad (completed yesterday so it could marinate overnight)
charcuterie board and spinach artichoke dip (will throw together later in the day)

Sometimes we have to shift to survival mode and get through. If what you can do isn’t enough for everyone, they can contribute. Including your mother. Prayers for you.
 
We had lasagna and garlic bread for dinner. Cookies for dessert. A friend made rum cake so we had that too.
I prepped the sausage/potato bake for tomorrow’s breakfast. And I prepped the twice baked potatoes and the ham puff filling for the apps. The onions for the French onion soup are cooking in the crockpot overnight. I’ll get up a couple of times to give them a stir.

Christmas Eve dinner was Thanksgiving Dinner Leftover Sandwiches. I roasted a 5 pound turkey breast, made stove-top stuffing, and opened a can of cranberry sauce. Everyone raved about how good they were, and I was pleased with how well the turkey breast cooked (and how easy the clean-up was). DD made gingerbread for dessert.

Today... we had berry cobbler with yogurt and bacon for late breakfast. Lunch was grazing... leftover turkey for sandwiches, leftover pasta e fagioli from earlier in the week, shrimp cocktail, a charcuterie tray, and tortilla chips with queso. Dinner tonight is braised short ribs with gravy (DD purees the onion, carrot, garlic, and celery into the gravy and It Is Awesome), mashed potatoes, and steamed green beans. Dessert is lemon meringue cheesecake, leftover gingerbread, and leftover Santa cookies.
 
We had cinnamon rolls for breakfast, charcuterie board, shrimp cocktail, and cookies for snacking. For dinner we had lasagna, a winter salad with greens, apple, pomegranate, mandarin oranges, walnuts, and feta with rolls and cheesecake and cookies for dessert.
 
was supposed to be honey baked ham, my son's 'famous Mac and Cheese' and latkes but both adult kids are crashed so dh and I are JUST FINE eating leftovers from last night (along with some of the ham :teeth: ).
 
Breakfast was the sausage/potato casserole, bacon and chocolate chip pancakes.
We had French onion soup and ham puffs as a light lunch. It was my first time making the soup and I was very pleased with how it turned out.
Dinner was strip steaks, twice baked potatoes, roasted brussels sprouts with bacon, roasted broccoli and corn.

Tomorrow…I’m off. I don’t care what anyone eats or what they do, but I’m not setting foot in the kitchen at all! 😂
