We ate already--dinner is early on Sundays. I tried to replicate the cod dish we had out on Friday, so we had oven roasted cod and tomatoes with olives, and garlic pasta, arugula salad with walnuts and parmesean, and crusty bread with rosemary dipping oil. The pasta was a little too oily (I think I should have added some stock to the sauce) but otherwise it was allright. Maybe the fish could have used a minute less in the oven.

Lindsay I'll be trying your stoup within the next few nights. I'll let you know how it goes.

Tonight we're having chicken patty melts with waffle fries and probably fruit for dessert.
 
Benga, hey I forgot to tell you. I substituted mushrooms in the recipe for celery. You can use any kind, I prefer the portobellinis (mini-ports). Or you can chop up 2 celery stalks instead.

I think 45 minutes is reasonable. I also think I should be able to clean up in 15 minutes, so anything too messy is not likely to get tried around here again. I just don't have the patience for much more than that.

On the other hand, I'll spend hours baking and make a huge mess and it doesn't seem to bother me :confused3

Anyway, now that my morning sickness (which should really be called all day sickness) is gone I'm trying to get back in the habit of cooking. Y'all keep the ideas coming :goodvibes . I'm looking for things that are different than what we normally cook.

Morning all! I'm off to my second day at my new job. I'm kinda excited. Hopefully I won't have a "stress headache" like I had last week. Oy!

We are having chicken parmesan tonight. It's a simple recipe. I think I got it from the back of a spaghetti jar or something. If anyone wants the recipe I will post it.:)

No clue yet! :confused3 I'm trying to get us ready for a trip to the IL's on thursday for about a week, so dinner's the last thing on my mind right now!

nucpharm29 ~ You're welcome. I think I put a little too much ginger in mine last night. It didn't come out as good as it usually does.

I have beef stew cooking in the crockpot for dinner tonight. DS10 will probably have a fried chicken Kid Cuisine. He said he'd try the stew, but he probably wouldn't like it. :rolleyes:
 
We have bible study tonight so we're having meatless chicken sandwiches. **The meatless chicken is frozen patties made by Morning Star** We put them on really nice wheat buns. It's simple and tastes pretty good.
 
Well, tonight we could eat last night's dinner if I wanted to. Right before plating evrything up I started to feel totally sick :crazy2:, so I just went to bed with no dinner at all!

However, I think I am going to make pizza instead, and we'll just eat with the TV. We've still got Desperate Housewives on the tivo from Sunday, and of course American Idol is on.

The cod dish is easy. I make it two ways, depending on how much time I have, and you can vary the ingredient amounts depending on how many people you are feeding.

Cod Pomodoro weekend way:

Blanch and peel 2 1/2 lbs. of plum tomatoes, scoop out the seeds, and place in large glass roasting dish. Toss with olive oil, salt and pepper and roast in 300 degree oven for 90 minutes, until soft and just starting to carmelize.

Remove the pan and turn oven to 400.

Pour about 1/2 cup white wine and 1/2 cup chicken stock into the roasting pan (you could use all stock if you don't like wine).

Sprinkle over tomatoes about a cup of olives, pitted (I like a mix of kalamata and picholine), about 1 tbsp. capers, and then place cod filets (I get the thick "captains cut" ones) on top of tomato mix. If you like a little heat, add some red pepper flakes.

Season well with salt and pepper, top with butter, sprinkle with herbs (I use a mix of parsely and basil).

Roast until just cooked through, about 10 minutes, and serve on garlic pasta, making sure that everybody gets some of the pan juices.

For the pasta, I just saute some roughly chopped garlic in olive oil until golden, cook some linguini until al dente, and then toss together with enough of the pasta cooking water to make it saucy, season with salt, pepper, and more parsely and basil.

Cod Pomodro the fast way:

If I don't have time for roasting the tomatoes, I just saute about four cloves of garlic in olive oil in a big skillet, then add in and fry the olives, capers, parsely, and red pepper flakes briefly. Add in a 28 oz can of diced tomatoes and their juice (in juice not thick puree), a splash of wine, and a handful of rough chopped basil. I cook this for just a few minutes and then nestle the seasoned cod into the sauce, dot with butter, cover the skillet, and cook over med-low heat until just cooked through, again about 8-10 minutes. Sometimes I add in a little anchovy puree when I make it this way. You can't taste the anchovies specifically, but it gives the sauce more depth.

OK, here's the link to the original recipe but I made some changes to mine.

I left out the carrots (I don't like them cooked!) and added baby corn and water chestnuts. I doubled the rest of the recipe since we have a large family (left the amount of broccoli the same since I added 2 other veggies) and I replaced the ginger with red pepper flakes.

It is so tasty ~ best new recipe I've tried in quite awhile! :sunny:
