It was really good. I had a family pac of bone in chicken thighs with skin.

1 can whole berry cranberry sauce
1 bottle french dressing
2 package french onion soup mix

mix all ingredients together in bowl
I roasted the chicken in a high oven foe 20 minutes to get rid of excess fat, and then poured it off. The directins did not call for this step.

Pour the sauce over and bake at 350 degrees for about 30 minutes.
Now for the pot luck, I added the precooked chicken to a crock pot and topped with sauce. My DD said it was so much better that the oven version as the sauce had penetrated the chicken.
 
Our oven baked chicken parm was delish! I served it with some angel hair pasta. A yummy recipe that was SOOOO easy to fix. Here you go!

[font=&quot]4 boneless, skinless chicken breast halves
1 egg, slightly beaten
¾ cup Italian bread crumbs
1 jar (26-28 oz.) Ragu Old World Style
1 cup shredded mozzarella cheese

[font=&quot]1. Preheat oven to 400. Dip chicken in egg, then bread crumbs, coating well.

[font=&quot]2. In a 9x13 glass baking dish, arrange chicken. Bake uncovered for 20 minutes.

[font=&quot]3. Pour Ragu over chicken, then top with cheese. Bake an additional 10 minutes or until chicken is no longer pink. Serve with hot cooked pasta.[/font]
 
Good morning all!! Today is kind of a sad day. My great uncle passed away over the weekend and today is his funeral. It was really a sad thing. He was only in his early 50s and he went so fast. He found out he has cancer and it just spread like a wildfire.

So I decided I would make some comfort food for dinner tonight so I am making Mac and Cheese with Chicken and Broccoli. I saw it made on 30 Minute Meals and it looked so delish. I will post a recipe later. I am on our laptop and don't have access to my recipe right now.

WFD tonight?

Tonight will probably be a pizza night for us--The kids and I are leaving tomorrow morning for the IL's, so don't want to have to clean up much after dinner! Have agreat week or so, since I'll be out of commission until then!

BTW, I saw that episode, too and it did look very good!! I hope you enjoy it :)

Tonight I am trying yet another new recipe (found it right here on the Dis, over on the craft board under the crockpot thread). It is steak rolls stuffed with a spinach mixture...sounded really good.

I don't know what we're having, but I want to make pork chops.

Tonight's dinner is one of the meals I made at Dinner Done. It's Honey Rosemary Chicken, with couscous w/peas and carrots. yummy.

This week, I'm supposed to stay off my feet, so I'm glad I have all the meals prepped in the freezer.

We are having Corky's ribs that I bought at the grocery, Patti LaBelle's over the rainbow macaroni and cheese, and broccoli salad. I think I might make some cornbread, too!
 
Lindsay, I am sorry about your uncle.

I'm not cooking tonight. DH has to take clients out for dinner, so I am going to my parents and eating with them.

I don't feel much like cooking today, so I took out 2 of the fat pork chops and found some steaks. I think I will marinate them and toss them on the grill with some kind of side dish.
 
Roast in the crock pot for the family and I'll probably have some of the meat and a small salad.
 
WFD tonight?? Tonight we are having leftovers from last night. It was really good- Mac and Cheese with Chicken and Broccoli. Here's the recipe:

2 T. EVOO
1 lb. chicken tenders, chopped
Salt and pepper
1 small onion, chopped
1 lb. macaroni elbows
2 ½ cups raw broccoli florets (next time I am adding a lot more- it had the room for more)
3 T. butter
3 T. flour
1 t. paprika
3 cups whole milk
1 cup chicken stock
3 cups yellow sharp cheddar
1 T. prepared Dijon mustard

Heat a medium pan over medium to medium-high heat. Add EVOO and chicken and season with salt and pepper. Saute and couple of minutes and then add onion and cook another 5-7 minutes until onions are tender and chicken is cooked through. Turn off heat and reserve.

To boiling water, add pasta and salt the water. Cook for 5 minutes then add broccoli. Cook until pasta is cooked and broccoli is tender.

While pasta cooks, heat a medium sauce pot over medium heat. Add butter and flour and make a roux. Whisk in milk and stock and raise heat to bring sauce to a quick boil. Simmer until the sauce thickens, about 5 minutes.

Drain macaroni and broccoli. Add back to pot and add chicken to the pasta and broccoli.

Add cheese to milk sauce and stir to melt it in, about 1 minute or so. Stir in mustard and season with salt and pepper. Pour sauce over chicken and broccoli and pasta. Adjust seasonings and serve.

Today is going to be very busy so I think I'll have to grab something pre-made from the grocery store. Maybe a rotisserie chicken and some potato salad :sunny:

The couscous mixture was 1 cup of couscous, a cup of frozen peas and carrots and chicken broth powder(not sure how much). Boiled 1 1/2 cups of water and put it into the couscous and let it sit for 10 minutes. The kids picked out the veggies, but it was good.

DH wants to make the rest of them tonight! That's not happening, because I want the galettes rustica, basically a highbrow pot pie.

Burgers on the grill, baked french fries, canned corn, and baked beans.
 
I have not a clue tonight. My kitchen has been a wreck the last few nights. My cousin is here staying with us doing home renovations. He finally got it done last night and it is really pretty. I think I will just go home and make a pizza, or sleep through dinner I am so tired today.
 
We are having turkey rice soup---2 versions. The first version is just rice, homemade turkey stock, and turkey. The second version is half of the first version, a big can of the 98% fat free cream of mushroom soup, water, broccoli, and mixed veggies. We are portioning out the soup so that NC Beast can take some for his lunches.


We had steak burritos yesterday.
