Well, our dinner menu changed. I made the bread, but we are having leftover chicken and pasta and garlic bread. We had a lot of chicken from the other evening, and DD brought home pasta from their dinner last night.

My husband and I can get 2 meals out of the recipe. I'm sure you are twirk the recipe and have it make more than this after you've tried it a few times.

I use plain old tomato sauce, Hunt's tomato sauce. No frills, no thrills :)

It seems like most of you are making pretty elaborate meals every night. I'm guessing you like to cook (I hate it). How long does it take you to make dinner each night on average?
 

Begabelle, the recipe I posted for today took me about 45 minutes from start to finish. Not long at all. I love to cook so I have had a lot of practice making things work for me :) I refuse to spend 2 hours over the stove though.

WFD tonight? We are having leftover spaghetti and meatball stoup. Mmm mmm mmm!! It's even better the next day :)

We are having the ham steaks and roasted sweet potatoes that I didn't cok last night.
 
Something quick and easy unless DH cooks. I have class on Monday nights.
 
don't know yet--I've defrosted some boneless skinless chicken thighs, so I think I'll check out my weight watchers cookbook for an idea
 
Not sure what's for dinner at my house. My cousin has come to stay with us and my mother has chicken thawing. I'm sure that for the next three weeks while he is here (he is doing renovations for several people in our area) I will be eating nice fatty, not so good for you meals. My mothers idea of vegetables is mashed potatoes out of a box and Stoufers spinich soufle. :sad2:
 
Tonight is going to be barbecue chicken, scalloped potatoes and green beans. Easy dinner for a Monday night. :thumbsup2
 
Another vote for easy Monday night dinners. I LOVE to cook and bake but after working all weekend I am whipped! I put a pot roast and veggies in the crock pot this am before I left for work. Dinners Done! :thumbsup2
 
I bought too much cod for yesterday's dinner, so tonight I am taking the rest of it and making fish cakes. I'll serve it with a tartar sauce spiced up with cajun seasoning. I am not sure about the side dishes yet.
 
I'm making spaghetti tonight. The ground bison is defrosting right now. When I get home this evening I'll brown it, toss in the "fire roasted tomato and garlic" sauce and pour it over either penne or bowtie pasta. I HATE to cook...but I like to feed my husband good meals :)
 
Publix has boneless, skinless chicken breasts on sale for $1.99/lb so I'm making bourbon chicken over white rice and broccoli. We'll be eating a lot of chicken this week. ;)

May I ask how you make your bourbon chicken? The only time I've eaten it has been at the mall :blush: I really like it and I think DH would like it as well.

DH asked me if I could make it at home because he liked it so much at the mall foodcourt. It took me a while to find a good recipe. Believe it or not there is no bourbon in it. The recipes I tried that did have it in were awful.

1/4 tsp. powdered ginger
1/2 c. apple juice
1/4 c. brown sugar
2 Tbsp. ketchup
1 Tbsp. cider vinegar
1/2 c. water
1/4 c. soy sauce
*Optional 1/2 tsp crushed red pepper flakes (I leave this out completely)
2-3 Tbsp. olive oil
3 or 4 boneless, skinless chicken breasts, cut into 1 inch cubes
garlic salt
1 clove garlic, minced
1 Tbsp. corn starch
2 Tbsp. water



Heat oil in a large skillet. Sprinkle chicken with garlic salt and lightly brown. It doesn't have to be completely cooked at this point. Remove chicken from pan and cover to keep warm. Add garlic to pan, saute for 2 minutes. Then add ginger, apple juice, brown sugar, ketchup, vinegar, water, soy sauce, and red pepper. Whisk together and bring to a boil, lower heat to simmer. Add chicken and any juices that have accumulated. Stir to coat chicken. In a small bowl mix corn starch and water, add to chicken and stir until sauce has thickened. Serve over rice.

I find it easier to mix the ginger, apple juice, brown sugar, ketchup, vinegar, water, and soy sauce in a small bowl before I cook the chicken. Then I can just dump it all in at once.

This is a revised recipe. The original recipe called for less apple juice, more sugar and more soy sauce. I found that it was too sweet and too salty for us. I added the garlic salt because I thought the chicken needed a little more flavor. Play around with the recipe and adjust it to your taste.
