We're going to a movie tonight so it's going to be a quick dinner. I think just grilled cheese and salad...it's a Friday in Lent so options are limited....
 
Not sure, I am going to my Dsis house in VA tonight. I had Chipotle for lunch today and am still full so I may just wait till I get there and grab something at a drive thru.

It's Friday, so we're going out to eat. Tonight we're going to Salsarita's, it's a fresh mexican cantina. I love their nacho's :) :)

Can you share the address? We just ate lunch at El Señor in Knightdale--- great lunch menu so maybe we will venture a little futher down 64 to check out Salsarita.
 
We are having chili dogs with cheese & fries tonight. I will be going for the rolaids lol

Hey NC Belle!! Salsarita's is actually in RTP...well...I classify it as RTP. It's in the Brier Creek Shopping Center off of Glenwood Ave (very close to the Airport exit).

WFD tonight? Tonight we are going to one of my favorite restaurants for dinner- The Macaroni Grill. MMM!! :)

We are grilling some strip steaks and having potato wedges and sweet corn on the side :sunny:
 
Not sure yet--have to fix something,though--DH is starting night shifts tonight so he'll need something before he goes in--that also means dinner needs to be ready around 4:30!
 
Tonight we are doing a huge antipasto meal. BIL, Dsis and the kids are staying over our place tonight, and we are also eating with my parents and a good friend. We are having a cheese plate, salumi, arancini (fried risotto balls with cheese inside), bruschetta, fritatta, olives, a roast vegetable plate with artichokes, onions, eggplant, and mushrooms, a white bean salad, arugula salad with walnuts and parmesean, and maybe a few other things if I am feeling ambitious. I guess I should get off the DIS and start cooking!! :)

Edit to add: and chianti, of course!
 
Morning! It's a bitter 27 degrees here this morning :cold:

I am making my husband's numer 3 favorite :) It's a Rachael Ray recipe. It's Spaghetti and Meatball Stoup (I keep the "stoup" in there because it really is thicker than soup, thinner that stew). I am serving it with garlic bread. Here's the recipe:

1 carrot, diced
1 medium yellow onion, chopped
3 garlic cloves, chopped
1 (14 oz.). and 1 (8 oz.) can of tomato sauce
3 cups chicken stock
1 package portobellini mushrooms, thinly sliced
1 pound ground beef or turkey
½ cup Italian bread crumbs
½ cup grated cheese
1 large egg, beaten
2 T. chopped parsley leaves
½ lb. spaghetti, broken in half
1 cup basil, torn or shredded


1. Combine beef/turkey, cheese, bread crumbs, egg and parsley. Roll into 1½ inch balls. Set aside.


2. Heat a medium soup pot over medium heat. Add EVOO. Sauté carrots, onion, garlic, and mushrooms for 5 minutes. Add tomato sauce and stock and cover pot. Turn up heat and bring to a fast boil. Cook for about 5 minutes.


3. Remove lid and slide meatballs in soup. Bring back to a boil and add noodles. Reduce the heat and simmer soup for 10 minutes or until meatballs are done and spaghetti is tender. Stir in basil and remove from stove. Serve with bread and cheese.

I'm either going to make creamed chicken over biscuits or my creamy chicken curry. I'm in the mood for something creamy. :)
 
Lindsay, I also love Rachel's stoup. I think I am going to have ham steaks with some roasted sweet potatoes. I am going to try my hand with some 7 grain whole wheat bread and honey butter. Now this is going to be a trial run, because my yeast defeats along with my pie crust frisbees are legendary in the family. :goodvibes
 
Right now I think it going to be some kind of pasta and garlic bread!
 
We ate already--dinner is early on Sundays. I tried to replicate the cod dish we had out on Friday, so we had oven roasted cod and tomatoes with olives, and garlic pasta, arugula salad with walnuts and parmesean, and crusty bread with rosemary dipping oil. The pasta was a little too oily (I think I should have added some stock to the sauce) but otherwise it was allright. Maybe the fish could have used a minute less in the oven.

Lindsay, your stoup sounds tasty. I might make it this week. Questions: How many servings do you get from that recipe? Is the tomato sauce you mention seasoned like spaghetti sauce would be, is it or just the plain pureed tomatoes from the canned aisle? Also, what's your garlic bread recipe? I have been having pretty consistent failures on the garlic bread front lately. Thanks.

Thanks. NC Beast works about 15 minutes away from Brier Creek.
