Morning all! Can you believe tomorrow is April 1?! Where has this year gone?!

Tonight we are going to Subway for dinner. I somehow planned a lot of meals with cheese in them this week and um, uh, I'm starting to feel it. So we decided to go get sandwiches tonight and go get our groceries. :)

So what are you having for dinner tonight? :)

Tonight will be marinated, grilled, chicken breasts and fresh steamed brussel sprouts and spinach salad. (We're currently cutting out the potatoes, rice and pasta dishes at DH's request)
 
Not cooking again today. The girls and I will eat at the mall in between shopping and DH will have to grab something for himself after work. :sunny:
 

Tonight I am making grilled bajun chicken with avocado salsa, fried plantains, and corn sauteed with jalepenos and cumin.

It is so nice out today! Tonight will be the first night we've fired up the grill this year.
 
We're having chicken parm with angel hair and a salad.
Haven't decided if I'll be good and bake the chicken, or bad(but tastes so much better) and fry the chicken before popping it in the oven with the sauce and cheese..

I'm thinking we're being taken out for dinner tonight. My SIL blogged about all the great food she's been finding in Lakeland and how we'd love it when they take us out. A phone call is in order. Subtle hint on her part? In any case, I'll take her up on it!

WFD tonight? My BILs b-day is Tuesday and he is in town so we are going to the Macaroni Grill. Locally, it's my favorite restuarant. :)

Just leftovers for us tonite. i promised DH that I would help him in the greenhouse this weekwend if he would just relax for a few evenings. Soooooo I am disinfecting trays and filling them with soil. I think he has enough to grow 150000 plants. :crazy: What was I thinking????????
 
We're going to DM's house for dinner. She's having a 'happy engagement' dinner for DB and future SIL. I think we'll be having Chicken on the Can. I'm taking a Peanut Butter Cup pie.
 
Today we're going to grill a couple of ribeyes and cook up some corn on the cob (first batch of the season :teeth: ) ~ I'll probably make a batch of cole slaw to go with it.

I make two, one is creamy, and the other is chunky.

Creamy Avocado Salsa:

2 avocados, pitted
6 scallions, chopped
handful of cilantro
2 tbsp red wine vinegar
2 tbsp. olive oil
1 cup sour cream
salt and pepper to taste

Combine everything in a food processor and blend til smooth. Serve chilled.

Chunky Avocado Salsa:

1 avocado, pitted and chopped
1 mango, pitted and chopped
1/2 red onion, finely chopped (soak in ice water for a while if it is really spicy)
1 red chile, seeded and chopped
1 tbsp lime juice
1 tbsp red wine vinegar
2 tbsp olive oil
handful of cilantro, chopped
salt, pepper, and hot sauce to taste.

Combine all ingredients and serve chilled or at room temperature.
 
I'm making home made chicken strips for DS's Birthday party today
 
For tonight's dinner, I am grilling salmon with a maple-soy glaze, and serving with green beans with almonds, steamed broccoli, and from scratch macaroni and cheese. DH still isn't feeling great, so hopefully he will be able to eat it.
 
Shrimp Scampi, a crab leg cluster for youngest and creamed spinach.

Youngest wants to know how to cook. Two weeks ago, we made crab cakes. Now he wants to know how to make scampi. He's 6 and I think he's already got plans on opening a restaurant someday!

We are going to a b-day cookout at my in-laws. My MIL is not the best cook but you really have to try to screw up hamburgers and hot dogs. Know what I mean??
