I decided to fix mahi-mahi with grapefruit-fennel salsa for dinner. Maybe some bread on the side.

Hope all you suffering from the heat get some relief soon. It is finally cooler here. But NO more rain please. I hope Lori gets back to Indiana without any trouble they have had flooding in southern Indiana.


Oh I almost forgot we are having sloppy joes and some fruit on the side.

That is insanely high!:scared1: I've been waiting on Southwest to release the fares for November to book mine, but I looked at October's and I don't see much difference from last year which looks good!!

Southwest locked in their fuel prices a while back so they are okay for a while. I am going to wait and see if any more flights are added.We generally take a 6:05 flight and I don't see that one on the roster. I have time and booked our ADR's knowing it is easier to cancel than to get good ressies.

Dinner changed. Jeff wanted pizza so they picked up pizza for them and Buddy, a rotisserie chicken for just in case and Marisa ans I had leftovers. It is too hot to cook. Kady swam at her friends all afternoon and was so hungry Marisa ran through McDonald's for her.

We agree! I used to make a more complicated version of the same thing, but it had kid-offensive stuff like scallions and fresh garlic in it. This one is kid, husband and adult friendly. ;)

Thanks, Janice. It feels like the heat is breaking now. I am hoping tomorrow is better. Liam has Field Day at school and I am one of the volunteers. He said two kids had to be taken to the hospital from Field Day today due to heat exhaustion. :eek:

Hi All! I'm feeling a bit better, but I'm medicated to the gills.

I hope the medicine works quickly, so you will feel more yourself.

On the flight we generally take the fare jumped from just over $300 per person to close to $1500.
:scared1: Oh Nancy, I hope you find a more reasonable flight! It would be awful to have to cancel the trip. I can't blame you for not wanting to spend that much on airfare though.

It may just be a combination of the weather and all I have to get done this week. :headache: It's the last week of school here and I will be in and out of the office the rest of the week.

I haven't decided on dinner yet. Alexis was awake & talking in my face at 5:30 this morning! I was tired before the day started!

I can not figure out how they can be so awake and energetic at that time of day. Liam is like that. I don't need an alarm clock. I just tell him what time I need to be awake, and he wakes me up. He is always up first thing in the morning!

I just got takeout pizza for dinner. After Caili's little Kindergarten show (very cute, but REALLY hot...the school doesn't have AC), I had no energy to even make sandwiches. We then went and baked at Liam's baseball game. They lost again, 6-2, but Liam knocked in one of the runs. :thumbsup2

If you guys have not tried it on beef, its super yummy too! I have only had it on flank steak...and that was terrific! :thumbsup2

I am sorry that I have not kept up much today. Tom has been home from work the past two days with his ankle and I had a meltdown today. I guess I just got overwelmed. After a pill ;) and shopping, I feel better!

Oh, more excitement in the life of Lauren...My darling hubby decides to reconnect some of the fire alarms etc. that have been disconnected due to the renovations without calling ADT!!! :scared1: Well, they tried to call us and we didn't hear the phones...well, police and fire were dispatched!!! Luckily we found out ADT was calling and only one squad car showed up and radioed all others not to come...

I am exhausted and need to go to bed but I have to finish my first Harry Potter book...I love it!

I am jealous. I LOVE mahi mahi. I can never get it here.

Here is the poached egg, green and white asparagus, wild mushroom, hollondaisse dish. I would have liked it better in February.

Hey all---I promise to go back and check in on how everyone is doing....I hope that nothing major is going on unless it is happy things.....Kathy--you have my reg email please email me if I have missed something important on someone. (not that it isn't all important, but illness or such, tks hun!!)

I just have a minute as I need to go to bed....I am beat. I had to work at school today and it was an oven in there..( we have no a/c in Maine schools)
Then I took Ross to the Dr for a 3:45 appt and did not get home until 10 min before six. He needed a physical for sports next year and for summer camps...he is fine except for a capillary mole on his chest that we need to go to a specialist for to have cauterized. Yeah, that just sounds like a fun time now doesn't it?!!?

Visiting hours and the funeral were very sad, but also nice to see some members of the family we only seem to see at these occasions. I have to add that my MIL was a total a**, what a class act she ISN'T...grrrr....I will spare you all the details as I vent on her enough, but let's just say you would have thought the world owed her a thanks and that she just totally loved this women with an honest heart...Kris and I were sick to our stomach as we know the true thoughts and actions that she had towards Grandma. Let's just say I didn't have any wine at the fellowship afterwards as I was afraid it might make my tongue a bit loose. Poland Spring was my drink of choice.

Supper tonight was deli sandwiches as it was to hot and I was to late at the Dr's....we are now having a major thunderstorm so I will send this on its way before we lose power.


I will be back ASAP to catch up...I am a bit sad as only 2 more weeks with dad until Sept., but I will have him here for Fathers day!

Wendie Try to focus on the quality not quanity with your Dad. Regardging your MIL God knows there is no pulling the wool over his eyes. Sometimes when someone professes their love for someone too much noone is fooled. Many hugs :hug: I hope Ross is not too nervous about his drs visit.

Lauren husbands and electricity don't mix. You have had a week my friend Bats now the police. I don't want to ask what is next just take care your vacation is around the corner.

I am not sure about dinner yet I'm just concentrating on my coffee this morning. All this rain has really set my allergies off. I'll decide dinner later. Possiblily something grilled.

Went to my DD's (crystal) sports banquet last night, She got athlete of the month!!:thumbsup2 Dinner was leftovers we had in the fridge. I did not get a chance to mix up Lauren's Famous Marinade, so I guess I am going to have to wait another night.:(
Tonight is going to be sausage, onions & peppers on the grill. Supposed to be alot cooler today, but boy it is still muggie here.

I am still sleeping and will check back later...Andrew had us up between 1 - 2 am with a bad headache. He has had this headache since yesterday am...I think its sinuses...He slept about 3 hours when he got home from school yesterday too.

Tonight is Kathy's Cajun Pork Roast on the grill, rice pilaf, asparagus for me and corn for the guys. May make a small chopped salad.

Hi my loopy friend...:hug: I sure hope you start feeling better soon. Do you have a recipe for the potato & onion casserole?

It isn't a recipe, really. And they are more like scalloped or au gratin, but Kenny calls anything that comes out of a 9 x 13 a casserole. Anyway, this is really versatile.

Potato & Onion (and mystery cheese) casserole:
potatoes, washed and sliced very thin (I do 1/16th on my mandoline)
onions, sliced thin (about 1/2 as much as the potatoes - hope that makes sense)
salt
pepper
shredded or grated cheese

Spray a 9 x 13 with cooking spray. Layer 1/3 of potatoes, 1/3 of onions (ring them as you put them on top), salt, pepper, and 1/3 of cheese. Repeat, but leave cheese off top layer and reserve that cheese for the end. Bake covered, for about 45 minutes in a 400 degree oven. Then remove foil and add reserved cheese to top. Bake an additional 15 to 20 minutes until cheese is melted and potatoes are done.

I have used swiss cheese and put in bacon between the layers, I have used parmesean and seasoned with oregano, and last night I was in a sharp cheddar kind of mood, so I seasoned with cayenne instead of black pepper. I have been thinking of trying it with melted cream cheese/sour cream mixed. Anyway, like I said, not really a recipe.


And, have you posted the oven fried chops recipe?

I have to complain a little. I priced out airfare a while back but we were not set on our dates. I checked back this morning and was shocked down to my socks! There are only 5 seats left on this flight unless you count the preferred rows. How can tickets go up over 4 times the original amount so fast????????? My Ca tickets were only about $320.

Holy Cow!!! I hope those prices drop soon! Keep checking, I'd hate for Kady to miss out on staying at Lilo and Stich's hotel.

Laura, I hope the heat is tolerable today. Like Kathy, it is kind of hard for me to wrap my mind around no a/c in a school, but it is hot here for most of the year. Congrats again to Liam on his second hit!

Do you grill the steak after marinating? Or do you broil it in the oven. I've never made a flank steak because I was worried it would be tough.

And you have had quite a week. Bats, police, Tom not feeling well, Andrew up in the middle of the night. This is all to make you appreciate your vacation. ;) Or at least that's how my life seems to be just before any vacation I have planned.

I'm heading to the doctor this morning. I'm not really better and Kenny is worried that I may have a sinus infection. So we'll see what the doctor has to say today. I'll catch up with all of you later on.

Today is my turn to go see a school play without AC, but today doesn't seem as uncomfortable as yesterday. Yesterday was a field trip to the zoo, in Boston or just outside- I don't know, but I'm sure that was quite toasty. I'm glad I had to work so I couldn't chaperone.
I just started working full time on Sunday, so dinner's have not been great lately. Though we had hot dogs for the first time in a long time last night and they tasted pretty good. Today and tommorow are my days off so I'll try and come up with something better for dinner- the natives are getting restless. I just haven't gotten my time organized just yet.
Lauren- add me to the list, we'll be having your marinade soon. I still want to try the korean marinade from a week or 2 ago also.
Well I'm off, I'll try to check in here and there, you have all provided me with great company (and recipes), I'll be back in September when my job finishes.
