The All-New What's For Dinner Thread!!(recipe index in OP)

That sounds really good! I hope your Dr. visit goes well, please check in later and let us know. As for the oven pork recipe::laughing:

zatarains.jpg

wow, I use the same recipe!:lmao:

Feeling much better today. :thumbsup2

I went home last night, ate dinner and fell asleep on the couch. Slept from sometime after 8 until 1:30, got up, got my jammies on, got in bed and less than 15 minutes later went back to sleep. Thought I would be up for hours.

Today is looking pretty good, as of right now I don't have to go out to work in a program this afternoon. :woohoo:

Tonight we are having cheesy chicken pasta and extra-special kitty bread :)

What is extra-special kitty bread?

Morning all,

Went to my DD's (crystal) sports banquet last night, She got athlete of the month!!:thumbsup2 Dinner was leftovers we had in the fridge. I did not get a chance to mix up Lauren's Famous Marinade, so I guess I am going to have to wait another night.:(
Tonight is going to be sausage, onions & peppers on the grill. Supposed to be alot cooler today, but boy it is still muggie here.
have a great day

Congrats to your daughter!

I am having sausage and pepper sub also. John's at a client dinner tonight and I have all of these plant stands to assemble after work so I want something easy!

It seems so odd to me down here in NOLA the fact that the schools don't have a/c. I guess it's like that with cars too????

 The cars have AC...however, if they are like mine, it doesn't always work.

Laurie -- Congratulations to Crystal!

Wendie -- I'm glad you get to spend Father's Day with your dad. Enjoy the time!

Lauren -- I hope Andrew feels better. It is rough on everyone when the kids don't sleep.

Rogue -- If it was Franklin Park Zoo, you are SO lucky you weren't a chaperone. That place is a scorcher. Have a good summer.

Gretchen -- Feel better!

It is much nicer here today, so I should be able to survive Field Day. Caili has skating this afternoon, so dinner will be something after that. I think I'll have the curried chicken salad I didn't have yesterday, and I'm not sure about the kids yet...maybe mac and cheese.

Hey y'all here's my new baby:

So pretty!!

I have to tell you guys about yesterday's dinner. We ended up having hamburgers and hot dogs, baked beans, chips, salad, etc. Hee hee hee, a little less than half of the ice cream cake was eaten and.........

Only one serving was left from my dump cake!!!!!!!!!!!!!

It was a hit!!!!!!

I love when that happens!

*****
Well, the bat.

We were laying in bed, getting ready to go to sleep and all of a sudden, I see this thing flying around us in circles. I start to scream, Tom was like WTH???!!! He didn't know what going on.

I pulled the covers over my head and just screamed my head off...he ran to the bathroom and wouldn't come out to help me! Sissy! I finally make my way to the bathroom and then we were like "What do we do?"

Andrew was fine. In his room door closed. We then decide to corral the animals in the bathroom and grab the laptop...couldn't find Niki the cat.

We then decide to try and find the intruder...Tom the sissy wants me to go first...I say "Hell No!". We find Niki on the coffee table meowing like something is wrong. She was telling us the furry flying rat was in the curtains!!! We get her corraled and I go open the front door to try and get the bat to fly out.

At this point, I am dry heaving and almost peeing my pants due to being a nervous wreck. Tom is trying to video tape the entire thing...I am yelling at him to get the thing out of the house...

He starts throwing things at the bat to get it to fly out...no good. Didn't budge...after a while he decides to shoot the thing with the bb gun being afraid it might be rabid, etc. He shoots, he scores. Or so he thinks.

I get the fish tank tongs and he tries to remove the thing from the curtains...the things starts chirping!!! :scared1: :scared1: So needless to say, the thing is a goner, there is a small hole in the wall and some mess I need to clean.

I have no idea why, but why does trouble/excitement seem to follow me? Am I just a drama queen?

:scared1: :rotfl2: :rotfl2:

I just got a call from school, they are having half days today and tomorrow due to excessive heat. We are supposed to get to 105 today.

Not having AC in schools is such a foreign concept to me. That's nuts!

I just checked Delta, we like them. Southwest has not posted flights for December yet. I will shop around but I am not going to pay more for airfare than the entire trip! Maybe as we get a little closer things will settle down and prices will level out. Now some airlines are charging for bags and others are talking about weighing people. I don't know how people will be able to travel if this is going to be the norm.

I was about ready to cancel our Nov trip due to airfare when I came across the AirTran deal around Mother's Day. Got both of our tickets in reserved seats, roundtrip non-stops for $230 total. I couldn't find anything for one person less than $300!!! Just keep watching for another great deal since you have time.

I am flying in and out - hope I didn't miss anything major. We got in last night from the 5th grade trip around 11:15 and I have mini camp this weekend and summer classes starting tonight so VERY busy and tired.

The trip was great; did cool things like kayaking and ziplining. When I get some pics I'll post one of me flying through the trees :yay: It was SOOOOOOO fun.

I'm only home 1 night this week and DH won't be home that night so we won't be cooking.

That sounds really good! I hope your Dr. visit goes well, please check in later and let us know. As for the oven pork recipe::laughing:

wow, I use the same recipe!:lmao:

Well, it must be good if that is the recipe you both use. ;) I may have to try it, although Kenny prefers his pork chops to come with some type of gravy. For the rice. Which he expects at most every meal.

Feeling much better today. :thumbsup2

It must have been the heat. It will drain you like that and take away your appetite, although it has been close to 100 here and my appetite hasn't suffered at all. But I have air conditioning at work.

It is much nicer here today, so I should be able to survive Field Day. Caili has skating this afternoon, so dinner will be something after that. I think I'll have the curried chicken salad I didn't have yesterday, and I'm not sure about the kids yet...maybe mac and cheese.

I hope you survive Field Day with no heat exhaustion. I would also wish it to be headache free, but I think that may be asking for too much.

The trip was great; did cool things like kayaking and ziplining. When I get some pics I'll post one of me flying through the trees :yay: It was SOOOOOOO fun.

I'm only home 1 night this week and DH won't be home that night so we won't be cooking.

I can't wait to see the pics. I'm really interested in the ziplining ones. Hailey had a zipline in the back yard that she really enjoyed and I've been curious how the canopy tours worked. I've been toying with the idea of trying one with her. Are you strapped in really good? Were you sore from the harnesses? Did you have to hang on at all? Sorry for so many rambling questions. I'm still on too much cold medication.

Well, I have returned from a completely useless trip to the doctor's office. My regular doctor was not in so I had to see the nurse practitioner. She recommended Mucinex and saline. I've tried that, last week and it didn't do any good at all. I've left a message in my doctor's voice mail and I hope he will call me back.

Anyway, I do have some good news. We got Patrick's report card in the mail and he passed. :cool1: I never thought I would see the day that I would celebrate any grade lower than an A, but I'm so glad that child is moving on to the 7th grade. And he passed all of his final exams. He hated both Kenny and I for making him study for them, but he passed them all.

And for all who may be curious, my roof is finally near completion. We think it may be done this Saturday. Which will of course, cause the drought to resume in coastal SC. ;)

Also, I meant to ask, has anyone ever frozen hot dogs? The Publix near me has the Hebrew National franks on sale BOGO and I don't think we would eat two packs before they went bad.

What is extra-special kitty bread?

It's bread my goofball husband named :lmao:I take a couple of cloves of garlic and mince them to almost nothing and add them to half a stick of room temperature butter. Spread on bread of your choice and bake for 15 minutes at 375.

Extra-special Kitty Bread :)

I had multi-quoted everyone, get ready to hit submit, and google earth pops up in the window & everything I wrote went kaput! :(

Wendie, I hope you have an uneventful couple of weeks & just enjoy your time with your Dad!

Lauren, I hope A feels better. And that you have NO MORE DRAMA in your house today!!!

LaurieG, Congrats to your DD!!!:cool1:

Gretchen, Hope the dr can get you well really fast!! :wizard:

Laura, Hope you have a cooler day!

I hope all of you in that heat wave, get a break really soon! I can't even imagine schools without AC. :faint:

I am jealous. I LOVE mahi mahi. I can never get it here.

Here is the poached egg, green and white asparagus, wild mushroom, hollondaisse dish. I would have liked it better in February.

2568723813_086856c4b1.jpg

Becky, That looks really delicious! :thumbsup2 But it definitely looks like you slaved over the stove for that one! :faint: But I'm game, do you have a recipe for the asparagus/mushrooms?

Becky, Here's a pic of the mahi. It was the Whole Foods brand of frozen mahi. The fresh they had was well, not looking so fresh! So I decided to save a few bucks & went with the frozen. It was very good, but of course still not the same as good fresh fish! The grapefruit fennel salsa was once again a winner. Since I was already squeezing & segmenting grapefruit, we had to have grapefruit limoncello margaritas. Which made everything taste better!

IMG_0628a.jpg

Tonight we are having coq au vin & braised leeks! No I'm not sweating over the stove to fix it. Alexis's Mom, my Dear Sweeet SIL made it over the weekend & brought me a large container full! :cool1: She said she used a cross between Julia Child's recipe & Emeril's. She took the time to peel all those little pearl onions too! She's a good SIL/Godchild isn't she!:goodvibes

Well, I have returned from a completely useless trip to the doctor's office.

Anyway, I do have some good news. We got Patrick's report card in the mail and he passed. :cool1:

Don't you just hate a useless trip to the Dr!!! Hopefully when you hear from him he'll have something helpful to suggest.

I'm so happy that Patrick passed:yay: , I know how stressed out you & Kenny were!

Also, I meant to ask, has anyone ever frozen hot dogs? The Publix near me has the Hebrew National franks on sale BOGO and I don't think we would eat two packs before they went bad.

I do it all the time, they freeze well!

I completely missed your post earlier! Sorry about the dr's visit!! I hope he calls you!

I'm so happy for you that Patrick passed! :goodvibes

I freeze hotdogs too, I have 2 packs of Hebrews in there now.

It is to me too!

And for some strange reason I want to try ziplining. I am scared of heights but I guess watching Paula Dean do it just makes me want to try. :confused3

Also, I meant to ask, has anyone ever frozen hot dogs? The Publix near me has the Hebrew National franks on sale BOGO and I don't think we would eat two packs before they went bad.

I know my Mom freezes them all the time! I freeze sausage, it's kind of the same thing, right?

Becky, That looks really delicious! :thumbsup2 But it definitely looks like you slaved over the stove for that one! :faint: But I'm game, do you have a recipe for the asparagus/mushrooms?

Becky, Here's a pic of the mahi.

That mahi looks delicious! Very nice presentation. The cocktails sound yummy too.

The mushroom/egg dish was actually not too time consuming. For the veggies, I just trimmed the asparagus and sliced the mushrooms (the mushrooms were morels, bluefoot, and trumpet, but you could use whatever kind you want). I simmered the asparagus--5 minutes for the white, three minutes for the green. Then I put them in ice water to cool. For the mushrooms, I rendered two slices of bacon, set them aside for garnish, then cooked the mushrooms in the reserved bacon fat with one minced shallot until they were nicely browned--maybe 6 minutes. I stirred the asparagus in to the mushrooms at the end to reheat it, and seasoned with salt and pepper. That's it!

The hollandaise sauce was easy too because I made a blender version rather than doing the whole double boiler thing. It took less than three minutes and as you can see it whipped up really thick. The only problem is that I have a ton of sauce left. I'm not sure what exactly I am going to do with it. But, it is butter, so I am sure I will think of something!

Lindsay, thanks for the explanation on the bread. I make something similar, though I often add mozzarella cheese to the top. You know, to make it healthier. ;)

Hey All! Trying to catch up here. I am trying to get things done before we go away and I always get side tracked. Got 5 bags of clothes and 3 boxes getting ready to go in the car to the thrift shop though.

I also started packing. Got my Community Coffee packed too!!! :thumbsup2

I picked up A from school early he was not feeling too great. The nurse gave him Motrin and that seems to be working better...

Here is the poached egg, green and white asparagus, wild mushroom, hollondaisse dish. I would have liked it better in February.

Yummy!

Then I took Ross to the Dr for a 3:45 appt and did not get home until 10 min before six. He needed a physical for sports next year and for summer camps...he is fine except for a capillary mole on his chest that we need to go to a specialist for to have cauterized. Yeah, that just sounds like a fun time now doesn't it?!!?

   for Ross. I am sorry your MIL has been a pain...some people are just clueless.

Enjoy your time with your Dad!

Lauren husbands and electricity don't mix. You have had a week my friend Bats now the police. I don't want to ask what is next just take care your vacation is around the corner.

::yes:: It cannot come soon enough. Did you start getting things together yet?

Went to my DD's (crystal) sports banquet last night, She got athlete of the month!!:thumbsup2

Congratulations!!! :thumbsup2

It seems so odd to me down here in NOLA the fact that the schools don't have a/c. I guess it's like that with cars too???? Anyhoo, I really feel for y'all, tray and stay cool....:grouphug:

Can you give Andrew something for this that won't make him drowsy? Hope he's feeling better and you got some rest.

Andrew has one of the few classrooms with a window air conditioner so he was lucky but its wierd right? I guess cuz we do not get that many hot hot days before school is out.

I am going to give him some Motrin and Sudafed later. I used to get really bad sinus headaches as a kid...I hope that is not what he is starting. I remember my head feeling like it was about to explode...

Lauren- add me to the list, we'll be having your marinade soon. I still want to try the korean marinade from a week or 2 ago also.
Well I'm off, I'll try to check in here and there, you have all provided me with great company (and recipes), I'll be back in September when my job finishes.

I hope you like the marinade...good luck at work and please be sure to check back in!!!

Feeling much better today. :thumbsup2

Glad you are feeling better~

Hope you all had fun today. Sorry about Liam's loss last night but congrats on the RBI!

The trip was great; did cool things like kayaking and ziplining. When I get some pics I'll post one of me flying through the trees :yay: It was SOOOOOOO fun.

Glad you had a blast! Any more news on DH?

Sorry you aren't feeling great. It seems to be a bad year for sinus/allergy problems.

Glad Patrick passed! :thumbsup2 Yeah for the roof!

I freeze hot dogs too...you can cook them without being defrosted too.

Becky, Here's a pic of the mahi. It was the Whole Foods brand of frozen mahi.

Looks great!

And for some strange reason I want to try ziplining. I am scared of heights but I guess watching Paula Dean do it just makes me want to try. :confused3

I love that episode!

*********
I am sorry that I have not kept up much today. Tom has been home from work the past two days with his ankle and I had a meltdown today. I guess I just got overwelmed. After a pill ;) and shopping, I feel better!

Oh, more excitement in the life of Lauren...

I am exhausted and need to go to bed but I have to finish my first Harry Potter book...I love it!

Hugs to all!

Oh, my you have an exciting life :lmao::lmao::lmao:

I should not chuckle at your expense but between the bat, your DH and the alarm......:rotfl2::rotfl2:

I do hope that Tom is better soon.

Then I took Ross to the Dr for a 3:45 appt and did not get home until 10 min before six. I have to add that my MIL was a total a**, what a class act she ISN'T...grrrr....Kris and I were sick to our stomach as we know the true thoughts and actions that she had towards Grandma.

I am a bit sad as only 2 more weeks with dad until Sept., but I will have him here for Fathers day!
Hugs to you all!!

Poor Ross!

Wendie- your MIL did not fool anyone, just herself :sad2: Now you do not need to deal with her unless you want to.

Enjoy the time with your Dad. September is a ways away but this trip was the first of many. As Gretchen said, we'll see you when you have more time so never worry about us.

Morning all,

Went to my DD's (crystal) sports banquet last night, She got athlete of the month!!:thumbsup2

:cool1: You have go to be one proud Mom. Congrats to her!

Holy Cow!!! I hope those prices drop soon! Keep checking, I'd hate for Kady to miss out on staying at Lilo and Stich's hotel.

I'm heading to the doctor this morning. I'm not really better and Kenny is worried that I may have a sinus infection. So we'll see what the doctor has to say today. I'll catch up with all of you later on.

Gretchen- I saw that you had one wasted trip to the Dr. I hope that you are feeling better soon, there is not too many things more frustrating than finally going to the Dr and then there is nothing that was accomplished.

I just started working full time on Sunday, so dinner's have not been great lately. Though we had hot dogs for the first time in a long time last night and they tasted pretty good. Today and tommorow are my days off so I'll try and come up with something better for dinner- the natives are getting restless. I just haven't gotten my time organized just yet.

Ann- I don't worry about dinner if I am busy. As long as there is food in the house no one will starve. When I first went back to work we lived on soup that I made and burgers that Buddy burned. We lived. And hot dogs taste so good when you haven't had them in a while. I am hoping to get a hot dog sauce from a neighbor She does not share it but will with me. I will share it with you all.

Aimee- don;t get all burned out this soon into the summer!

Marisa checked for airfare and found some that were reasonable but they were not for the times I like to use. We are going to keep checking but she thinks we may need to leave the night before we planned. This would not be bad but I have not been able to convince Buddy to take the week out of work yet so adding a day is not going to fly too well. Then I saw that the Poly was booked for the Friday night before we arrive. :headache:

Kenny prefers his pork chops to come with some type of gravy. For the rice. Which he expects at most every meal.

Buddy needs gravy with pork chops as well. He actually wants gravy with everything and would drink it if he could :dance3:

Congratulations to Patrick! I don't care what his grades were, he came a long way from where he was a little while ago so this really is a victory. My Donny is brilliant. Not smart..he is brilliant. Gretchen, there were a few years when I thought that I would kill him. His grades were terrible. He was flunking just about everything and had to go to summer school That was not one fun summer for me. I did not care one bit how it was for him and when he graduated I thought that I should share that diploma. Some kids just do not do well for a while and yet they bloom later. give him some time and things will change. Donny is still alive....but I confess that Buddy sometimes wonders how that is..........

Now,what is ziplining?

She's a good SIL/Godchild isn't she!:goodvibes

She sure is! And she gave you Alexis to love too so that trumps all of those other nice qualities!

Feeling much better today. :thumbsup2

It had to be the heat that drained you. Good to know you are better today.

I started posting and now I'm just lurking since I started NutriSystem.

You ladies really make some wonderful dinners for your family!

I was wondering if anyone had a strictly veggie dish that I could use leeks.....I bought a bunch and now have no idea what to do with them.

TIA:)

Bacon fat & butter! Can't go wrong with that!! :thumbsup2 Thanks for the instructions!

I forgot to post dinner. We have a man moving the oil tank around for us so dinner needs to be on the fly. Lazy man's golumpki. I used barley instead of the brown rice.

I have a question. I bought long grained brown rice and I don't really like it. The Chinese restaurant uses a shorter grain. Does anyone know what kind that would be. I saw a short grain arborio style and a long grained basmati rice in the grocery store.

She sure is! And she gave you Alexis to love too so that trumps all of those other nice qualities!

Nancy, You are right about that! Coq au vin or not, she's a keeper!

Lauren, Girlfriend it sounds like this will be a much needed vacation! All three of you sound like y'all really need some R&R!!!
