How do ya'll plan for this? I'm assuming from what I've read on here that this is a hard time of year to get ressies. Is this event always on set days?

No - but most DVC are there for 4 to 7 days if not more and MVMCP will be on at least one - if not more.
 
The past few years, MVMCP has been scheduled for Sundays, Tuesdays, Thursdays and Fridays during the early part of December. The last one has usually been about a week before Christmas and the first one kind of depends on when Thanksgiving falls. Unless they reduce the number of parties this year, my guessfor this year (based on historical patterns) is:

11/30
12/2, 12/4, 12/5, 12/7, 12/9, 12/11, 12/12
12/14, 12/16, 12/18 and maybe 12/19


As spiceycat posted, if your stay is for more than a few days during early December, you're bound to hit at least one.
 

Yes, it can get difficult to get DVC reservations for this time of year. You need less points and the parks and resorts are beautiful, which makes this a very, very popular time for DVC. Book as early as you can.
 
Usually only Fridays sellout. We go on Sunday or Tuesday, I usually wait until we get there to make sure the weather is OK. Last year there was alot of rain in December and some parties were in a downpour with the parade cancelled. We went on Tuesday Dec 10 last year, it wasn't crowded at all.
