Another alternative if you don't want to deal with getting the GCs is to apply for a Rogers World Elite MC. They still charge you the 2.5% foreign exchange fee, but you get 4% cashback on purchases made using a foreign currency, so you're netting 1.5% cashback.

We did a combination of GCs, American Express Cobalt (5% on food & drink), and the Rogers card on our last trip.

I don't believe so, but if you're staying on property, you can change things to your magic band, then pay for it using GCs at the front desk. That's what we did last time we were down there.
