Another alternative if you don't want to deal with getting the GCs is to apply for a Rogers World Elite MC. They still charge you the 2.5% foreign exchange fee, but you get 4% cashback on purchases made using a foreign currency, so you're netting 1.5% cashback.
We did a combination of GCs, American Express Cobalt (5% on food & drink), and the Rogers card on our last trip.
