I would think any employee would certainly be confused when asked for this type of salad without the lettuce. At most places that would leave a few carrot curls,maybe a slice of tomato or onion, croutons, and dressing - hardly enough to make it worth ordering!
Actually the only place I really try to do this is Subway. They seem to have a problem comprehending salad without lettuce. Salad bars are no problem at all. If we get a salad off the menu at any other place, I eat the veggies and DH eats the lettuce. Jack Sprat and his wife!
