What's on your menu for this week? New Week 11/8

I love all the new ideas for dinners on this thread.

My Menu is

Monday-Grilled Pork Chops with Roasted Potatoes and Homemade Applesauce
Tuesday- German Pancakes with Sausage and Fruit
Wednesday- Chicken Stir fry
Thursday- Homemade Mac and Cheese
Friday- Steak Fajitas and Spanish Rice
Saturday- Pot Roast


Charming: Do you put ham and veggies (or something) in your homemade Mac and Cheese?
I never considered Mac and Cheese a meal. More like something you eat with a meal (aka a side dish)????

P.S.- I LOVE German Potato pancakes
 
Anyone want to share what they are making this week for dinner?

Yesterday was whatever we could find.

Monday--sticky chicken with brocolli and brown rice
Tuesday--chili mac made with leftover chili from Saturday with squash and cheese bread
Wednesday--Jambalya with shrimp and sausage, salad and corn bread
Thursday--either leftovers or florentine pizza with fruit salad
Friday--homemade turkey burgers and fries
Saturday--dinner out
 
Did some major shopping today and tomorrow I have to cut, julienne and freeze 4 grocery bags of green pepper and red peppers, so you will see a pepper trend in upcoming menus...

I still have bell peppers from my garden in the freezer. I have found that I prefer freezing them whole. I just wash them and put a bunch in a gallon freezer bag. I don't get that pepper smell throughout my freezer that way. When I get ready to use one or more, I just take out what I need and run it under some hot water to thaw enough to cut.


Sorry, I hate when I forget about a thread:headache:. I went to the local farmer who sets up on a Main street around me. I offered him $6.00 for all the peppers he had left on the table. He accepted and threw in some squash. I only had $6.00 on me at the time, so he knew I couldn't haggle price with him. It took me almost the whole day to do the peppers. I have them stored at my house and my mom's.
 
Monday - Pork Roast with onions & potatoes

Tuesday - chicken (how, I'm not sure)

Wed. - chicken, again? hmmmm...help!

Thu. - crockpot pork posole and brown rice (we're going out of town, this is for Mom & Sis)

Fri - not sure what they'll be having at home, but it's dinner out with younger DS & DDIL

Sat - dinner out with friends

Sun - hmmm...what take-out can we get on our way back home, that's not too salty?
 

yesterday we had Turkey meatballs and spaghetti with garlic bread and have planned leftovers

Mon- sausage and pepper heros with fries(Ball game night!)

Tues- London broil, mashed potatoes salad

Wed. Lasagna with leftover sauce/balls from Sunday

Thurs. Pork in a mojo sauce roasted baby reds and some green beans

Fri And Indian Chicken/Garham Masala dish with rice

Sat. Ribs! or leftover steak sandwiches if I have london broil leftover!
 
I am going to try again this week.. Last week the kids changed their plans more than their undies and dinner was a bust... I hate it when that happens...


Monday: Mock Lasagna - this will not change, already started it.
Tuesday: Spicy cheesy chicken and fresh veggies.
Wednesday: Hot ham and cheese sandwiches and hot applesauce.
Thursday: Not sure last night with DS and DH, but DD has to work....
Friday: Off to Boston with DD, does anyone have any restaurant ideas in Boston?
Saturday: Northeastern University...
Sunday: Boston tour
Monday: BU and drive Home....

Homemade desserts: Banana bread (they are ready TODAY) and before I go I will make an apple crunch pie for the boys. I try and do desserts 2-3 times per week. I can control the sugar and fat that way, and they will snack no matter if I make it or if it is bought.

I will post next week on Tuesday.

If anyone ever wants a recipe, please ask. I have created quite a few in my day. I actually have a book started for the kids for when they move out. A lot of my recipes can't be found on the internet. It will be really nice to hand them down to them. In return, I may ask for your recipes and if I do, please let me know if I can hand them down also.

Tuesday: Greek salad pita sandwiches, oven fries
Wednesday: Seared scallops with lemon sauce, shredded sauteed zucchini, couscous
Thursday: torikatsu chicken, butter-soy steamed broccoli, rice
Friday: Seared ribeye steak (for DH, I do not eat red meat), twice baked potatoes, honey-glazed carrots, green beans

I have not thought about the weekend yet.

Tinker'n'Fun, what kind of food do you like? I can recommend some Boston restaurants for you.

Wednesday: Ham & Cheese Omelets, hash browns, fruit salad and toast
Thursday: Oven fried chicken, gravy, mashed potatoes and mixed vegetables
Friday: Homemade meatball subs and salad
Saturday: Roast pork, baked potatoes, applesauce and broccoli
Sunday: Baked stuffed haddock, rice and peas.

No sure if you have any diet no-no's but here are two chicken go to's that I use quite often.

Chicken Caesar Salad

Cube chicken, season with Mrs. Dash garlic (no salt) and brown in olive oil.

Lazy part, open up a bag of Romaine lettuce and divide onto plates. Grate parm cheese on top. Place warm chicken over romaine and add dressing of your choice. Sprinkle on croutons (I make mine).


Chicken Alfredo

cube chicken and brown in olive oil. Add one jar of light alfredo sauce, then 1/2 can of milk to jar to get the rest out. Simmer.

Boil water and cook to al dente 1# of your choice of noodle (I prefer rotini)
Steam broccoli crowns in the microwave.

Add noodles and brocolli to the chicken, mix and serve.

All types of food except Indian. Mid-range price or lower. My DD16 is semi-adventurous, but loves normal teenage food and atmospheres. Thank you very much. You don't know how much this is going to help.

Tues - Skillet Chili Mac
Wed - Meatloaf, potatoes, veggie
Thursday - Chicken Enchilada Pasta
Friday - Dinner Out
Saturday - Dinner Out
Sunday - Not sure yet... :confused3
 
Monday--homemade chicken soup and homemade sour cream biscuits

Tuesday--vegetarian fajitas (tortillas, veggie refried beans, salsa, sauteed onions and peppers and a bit od shredded cheddar cheese), apple and raisin salad

Wednesday--homemade cheese pizza, big salad

Thursday--rotisserie chicken (picked up at "hanchen grill"--it's my busiest day) with rice, and whatever veggie looks best at the market

Friday--homemade mac n cheese (reasonably low fat version) with whatever veggis is good again and fresh pinapple (DS loves fresh pinapple I try to manage it once a week)

Saturday--out at my favourite Italian place

Sunday--if teh weather is nice grilled brats and turkey fillets if not vegetarian chili--either with whole grain corn muffins and salad
 
Mon - Italian Chicken, parmesean noodles, & corn on cob.
Tues - Pizza & salad
Wed - Steak, baked potatos, salad
Thurs - Spagetti, salad, french bread
Fri - Baked potato soup & bread
 
Gonna join in! I love this thread!

I will only be home 4 days this week (I spend the other nights with my boyfriend and while we cook, he does the planning lol). So, as for what I will be cooking:

Tonight: Pot Roast with potatoes, carrots and onions, and gravy
Weds: Baked Salmon with lemony mayo, rice pilaf, and asparagus
Fri: Ham and Cream Cheese stuffed chicken, salad, rolls
Sun: Baked Ziti and garlic bread

I have recently started to go though all my cookbooks and have made lists of meals in a notebook. This allows me to just open the notebook and pick some things. I try to base MOST meals off of what I already have in the freezer as we always have boneless, skinless chicken breasts, steaks, and salmon. I really have to do a list of what is in there so I can keep track, but I hate cleaning out the freezer!

Gonna actually start thinking about next week as well!
 
Working on that right now. We need to eat out of the freezer this week because I overcooked last week!

Mon - steak, broccoli, baked potato (me) or smiley fries (dd)

Tue - chicken & rice left over from last week and frozen

Wed - may try the paprika pork disykat posted

Th - leftover pot roast (50s prime time) from last week and frozen

Fr - who knows?
 
Tonight is cashew chicken and rice.
Tuesday is pizza with my daughter, step-daughter and grandson. We try to get together every few weeks when I am in southern NH.
Wednesday - away from home - scrounging ravioli and garlic bread from my brother and sister-in-law (she e-mails me her menu so I can decide what night I am coming to dinner)
Thursday - travel home - fast food on the road - usually a sandwich from Panera or a tuna sub from Amato's. Something I can eat while I drive
Friday - dinner out
Saturday - my daughter will be home for the weekend so I think we will make whatever she says she is missing most living in a college dorm.
 
I am trying to use up stuff I have in the freezer and/or pantry.

Tonight was Shrimp and parmesan pasta

The next few nights in some order will be:

Steak & twice baked potatoes & salad

pork roast and mashed potatoes and maybe apple crisp

salmon & rice

chicken enchiladas

Out on Friday
 
We have been changing the menu up so much lately that I have decided not to match meals to certain days but to just make a list of 7 for the week and cross them off as we use them.

This week's list is

German Pancakes, sausage, fruit salad
Turkey Tenderloin with garlic mashed and brussel sprouts
Steak fajitas with spanish rice
Pork souvlaki with rice pilaf and zucchini
Sticky Orange Chicken with mashed sweet potatoes and corn
