Just finished the menu for the week...

Tonight - Chicken Parm sandwiches
Tuesday - Tuna Casserole
Wednesday - Roast Chicken
Thursday - Turkey Kielbasa One Skillet Dinner
Friday - Meatloaf
Saturday - Shrimp and Linguine
Sunday - Stuffed Peppers

Not very inspirational but I am in comfort food mode I think. I will also be baking an apple crisp and chocolate chip/toffee cookies.
Can you post the recipes for these two dishes?

I'm vegan, so these meals may not appeal to you, but...

Monday: Large salad of greens and veggies topped with Crispy Fried Tofu

Tuesday: Moroccan Tangine (chickpeas, veggies in a spicy sauce)

Wednesday: Baked sweet potatoes with hummus and salsa, salad with veggies and fruit

Thursday: Falafel with salad

Friday: Black bean soup with salad

I just made up my grocery/menu list, which should take us through two weeks. I'll just stop at the store after a week for fresh veggies and more milk.

broccoli chicken pasta with asiago(DIS recipe)
steak and twice baked potatoes
salmon, tortellini

grilled cheese sandwiches and tomato soup

french toast w bacon
pancakes w sausage
egg mcmuffins w hash browns

I just keep a list of possible meals on the fridge and cross off the ones we've already used. I don't plan what day. I have Sticky Chicken in the crock pot for tonight. We're having it with cornbread and a salad.
 

Monday..we eat at my moms
Tuesday...sloppy joes, pierogies, cucumber slices
Wednesday...Seasoned pork chop bake made with bow tie noodles, broccoli on the side
Thursday...Meatloaf, potatoes, green beans
friday...we eat out.

DD8 swims Mon, Tues, Thurs, Fri from 5-6:30 so it is hard to make a decent meal those days!
 
WICKED CHICKEN

1 box or can of prepared stuffing mix
1 package frozen peas
2 small cans of mushrooms
1 can cream of chicken soup
2/3 soup can of milk
3 cups cooked chunked chicken. (package of 3 half breasts)


Grease a 2 qt casserole. Layer dry stuffing mix in the bottom, just enough to cover the bottom of the casserole. Layer in one package of defrosted peas, the mushrooms and chicken (I use a small package of boneless skinless chicken breasts – 3 half breasts. I cut them into bite size pieces and stir fry them). Mix a can of cream of chicken soup with 2/3 soup can of milk and pour over the top. Make stuffing mix according to the directions (either the rest of a box or if you use a big can – 6 servings). Bake at 350° for 30 minutes.

I’ve used leftover turkey in place of the chicken and either cream of mushroom or cream of celery soup and it still came out good. I’ve also used other vegetables but my family likes the peas the best.

MEXICAN CHICKEN

1.5-2 lbs boneless skinless chicken
1 can (14.5 oz) black beans
1 can (14.5 oz) diced tomatoes w/mild green chilis
1 jar salsa con queso (I use mild, but you can use what you like)

Put chicken, beans and tomatoes in crock pot and cook on high for 4 hours or low for 8. Remove chicken and shred. Drain off excess liquid (I save it for soup- makes a great soup base). Return chicken to crock pot and add salsa con queso.

I serve it with tortillas, shredded lettuce and sour cream. DD likes to eat it with tortilla chips, like a dip. I also serve a side salad.

Wed. - Green curry thai chicken and brown rice
Thursday - Chai Sui pork over glass noodles w cucumber salad
Friday - grilled tarragon chicken with arugula salad and orzo for the carb lovers
Sat - Tangy chicken and lemon risotto
 
I'm pretty boring...

Tonight - baked chicken, rice, broccoli
Tomorrow - pork chops, green beans, leftover rice (seasoned)
Wednesday - spaghetti, green salad
Thursday - Meatloaf, mashed potatoes, peas
Friday - Late meeting, catch-as-catch-can
Saturday - Ditto
Sunday - Pumpkin black bean chili
 
Monday - pot roast, potatoes, carrots
Tuesday - butter noodles and garlic bread
Wed - chicken legs, mash potatoes, corn
Thurs-lasagna roll ups
Friday - pizza
 
Mon: Isaly's BBQ ham sandwiches and warmed up leftover clam chowder from our clambake
Tues: Steak Kabobs
Wed: Calypso Pasta with Shrimp (Bahama Breeze recipe)
Thurs: Survivor night Pizza and wings
Fri: Marching Band night so it's YoYo night (you're on your own)

I know they will all complain no matter what I make...sometimes they act like I put poison on their plates.
 
We're Chinese-American, so this may be somewhat exotic to you...

Monday: Stir fried shrimp and scallop with snow peas, served with rice and leftover chicken soup
Tuesday: Chinese sausage fried rice (using left over rice)
Wednesday: Pork dumplings and napa cabbage soup
Thursday: School band concert, probably picking up a pizza for afterwards
Friday: Sesame noodles and teriyaki chicken
Saturday: Korean seafood pancakes and grilled galbi (Korean short ribs), served with rice
Sunday: Homemade chicken dumplings, steamed and pan-fried

That all sounds soooo good. Care to share your recipe for the sesame noodles and the Chinese sausage Fried Rice? I actually have some Chinese sausage in the freezer and have no idea what to do with it...
 
We are a low carb family by necessity. My husband is a type 1 and my son was just recently diagnosed. So if you could share info on this I would appreciate it.

Do you buy low carb crusts or do you make it?

If you make it, could you share your recipe? If you buy what brand?

No problem! I make it myself using George Stella's recipe. If you don't have any cookbooks by him, I HIGHLY recommend them! It has completely changed our low carb universe. We can have cheesecake, cookies, brownies, mousse, pizza, fried chicken, just about anything we could have before but just done a different way. One of the things I love about both of these recipes is that I can find all of the ingredients in any regular grocery store except Food Lion who never has anything we're looking for :rolleyes:

Here are the recipes we use for bread and for Pizza crust:

Pizza crust (of course you can use whatever low carb toppings you want, these toppings listed are George's recipe)

Ingredients
Crust:
1 1/2 cups soy flour
3 eggs
3/4 cup heavy cream
1/3 cup club soda
1 teaspoon salt
Sauce:
1 tablespoon olive oil
1/8 cup diced red onion
1 teaspoon chopped garlic
3 large Roma tomatoes, diced
8 ounces no sugar added tomato sauce
1/4 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano (may substitute Italian seasoning for dried herbs)
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
Toppings:
24 ounces shredded mozzarella cheese
8 ounces pepperoni slices
1/2 cup crumbled Italian sausage, cooked
1/2 cup diced Parma ham
1/3 cup julienned red bell peppers
1/3 cup julienned green bell peppers
1/3 cup julienned red onion
2 portobello mushroom caps, sliced
2 tablespoons extra-virgin olive oil
Pinch dried oregano
Directions
Preheat oven to 375 degrees F.

Make the crust: Generously spray 2 (12-inch) pizza pans with nonstick vegetable oil cooking spray. In a medium bowl, stir together all of the crust ingredients to make a smooth, thick, pancake-like batter. Using a rubber spatula, spread the batter as thin and evenly as possible over the 2 pans.

Place pizza crusts on center racks of the oven and bake for about 12 to 15 minutes, or until lightly golden brown and firm to touch.

Remove crusts from oven and increase the oven temperature to 400 degrees F.

Meanwhile, make the sauce: In a saucepan over medium heat, heat olive oil and then sweat onions and garlic in oil, cooking just until softened and translucent. Add diced tomatoes and the remaining ingredients and simmer for about 2 minutes.

Compile the pizzas: Spread the tomato sauce and then the mozzarella cheese evenly over both crusts. Top 1 pizza with pepperoni, sausage, and ham, and top the other with the bell pepper strips, onions, and mushrooms. Lightly sprinkle 1 tablespoon olive oil over each pizza, and sprinkle each with a dash of dried oregano.

Place the pizzas back in the oven to bake for another 10 to 12 minutes, or until the cheese melts and starts to brown. Cut each pizza into 8 slices.


Nearly Zero Carb Bread

Ingredients:
•2 cups flax seed meal
•1 Tablespoon baking powder
•1 teaspoon salt
•1-2 Tablespoons sweetening power from artificial sweetener
•5 beaten eggs
•1/2 cup water
•1/3 cup oil
Preparation:
Preheat oven to 350 F. Prepare pan (a 10X15 pan with sides works best) with oiled parchment paper or a silicone mat.

1) Mix dry ingredients well -- a whisk works well.

2) Add wet to dry, and combine well. Make sure there aren't obvious strings of egg white hanging out in the batter.

3) Let batter set for 2 to 3 minutes to thicken up some (leave it too long and it gets past the point where it's easy to spread.)

4) Pour batter onto pan. Because it's going to tend to mound in the middle, you'll get a more even thickness if you spread it away from the center somewhat, in roughly a rectangle an inch or two from the sides of the pan (you can go all the way to the edge, but it will be thinner).

5) Bake for about 20 minutes, until it springs back when you touch the top and/or is visibly browning even more than flax already is.

6) Cool and cut into whatever size slices you want. You don't need a sharp knife; I usually just cut it with a spatula.

Wednesday - Grilled pork chops/steamed rice and veggies
Thursday - Burgers and Fries
Friday - Left overs - Fend for yourself (cereal, toast, can o soup...whatever)
Saturday - Homemade Chicken Noodle Soup with Grilled cheese on sourdough
 
Here's the plan for the week unless something comes up.

Mon- Tacos
Tuesday- Pork chops and oven roasted potatoes
Wednesday- Ziti and meatballs
Thursday- grilled chicken breasts and brown rice
Friday- Pizza
Sat- dinner out :thumbsup2
Sun- Beef stew
 
Monday: Grilled chicken, rice and salad.
Tuesday: Chili and cornbread!
Wednesday: Chicken Fajitas, rice, chips & salsa.
Thursday: Leftover chili with Frito's and onions.
Friday:Leftovers of whatever is left in our fridge! If nothing, we'll go out.
Saturday & Sunday:WDW! :banana:
 
Monday (tonight): Leftover chicken and dumplings
Tuesday: Hamburgers, gravy, egg noodles and a veggie
Wednesday: Stuffed chicken breast (ricotta and spinach)
Thursday: Pizza night
Friday: Leftover pizza
 
Today: I'm making Cous cous Marrakesh and the Mushroom soup from Boma :lovestruc. Whatever else my parents feel like making as well.

Tomorrow: Again, whatever my parents are planning, or, if I take over the whole meal for the day, I think I'll make some masala lentils, vegetable rice, and masala green beans. Some masala potatoes would be nice, with a yogurt gravy. Can it be tomorrow already? :)

Wednesday - Sunday: Visiting relatives. They always cook deliciously and have a really tantalizing array of restaurants nearby.
 
Tonight - home made vegetarian chili (leftover from yesterday)
Tuesday - oriental chicken, brown rice, broccoli
Wednesday - we have a wake to go to so it will be something easy. Soup and sandwiches, probably
Thursday - spaghetti/marinara sauce for the boys, spaghetti/butter for me, veggies,
Friday - payday, so probably grab pizza or something easy

Not a stellar week. Kind of crazy - a close friend of the family died and DH has school/bowling this week, so things are topsy turvy.

Tues~ Maple Chicken Dijon in the crockpot with rice
Wed~ I'll pick up some fresh fish...maybe potatoes or sweet potatoes on the side

3 of these are new recipes. I am having the same problem as you, Tina. I am reaaalllly bored with the same old same old, so I made sure to plan meals this week. Not to mention I need to make food that the kids will eat and make it weight watchers friendly.:headache:

Nothing inspiring at all - especially when you're cooking for "one" - LOL..

Right now I have a large batch of my homemade macaroni and cheese in the oven.. I will have that with french style green beans (seasoned with garlic salt) - and then all leftovers will be put in containers and frozen for other days..

I will probably have soup at least twice this week - vegetarian vegetable and cream of mushroom..

One night will be grilled cheese sandwich with tomato soup..

One night will be a breakfast-type food - probably french toast or waffles..

Haven't thought much beyond that.. I'm trying to use up whatever foods I have here before I pack up and leave for the season in 2 weeks or so..:goodvibes
