What's for dinner? Was it "budget"?

Last night:

$9.00 total :)

Tonight:

Steak strips $4.69 (steaks were B1G1 free)
Marinade $0.50
Oven fries w/ olive oil and seasonings $1.50
Green beans $0.79

I don't know what I feel like for dinner. I've been thinking meatball subs. Maybe pancakes. I have a headache and no appetite. :upsidedow I wish the lack of appetite would show up on the scales! That's not happening!
 
Tonight we are having a pre-marinated Tri-tip beef roast from Costco, DH will throw it on the grill when he gets home from work. Those things are a little spendy (about $13, but that feeds all 5 of us) but SOOOO yummy, especially on the BBQ.
With it I will serve a couple of boxes of that new "All Natural" Rice-a-Roni (the Parmesan one). I actually looked at the ingredients on these, and they are pretty good!
I also have a squash that I bought pre-cut-up from the produce department. I will bake it, with butter and seasonings.

Sounds yummy! And its Survivor night, too! :cheer2:

Big hugs to everyone suffering with the Ickies. :hug: My house has been sick more often than not the last month or so, I feel for ya. :sad2: Hope everyone is better soon!
 
Chicken Pot Pie

2 chicken breasts $1.57 (on sale for .99 lb)
2 cans of condensed soup .50 ea
2 cans of mixed veggies .25 ea
1 can of corn - cause I like corn. lol .25
bisquick?
cheese .50?
milk?

roughly $4 - $4.50 and it made two pies and DH had enough to take for dinner tonight, plus took a serving down to his Mom AND we still had one pot pie left over.
 

I'm debating... Either grilled cheese sandwiches with leftover lentil soup or Eggs in a hole with something on the side. You all remember those from your childhood, right? You tear the middle out of bread, butter both sides, and fry an egg in the middle?

hum.. Im using 4 frozen kirkland chicken breast and making montery chicken. I already have cheese, BBQ sauce, bacon to top it. I have 2 BPs for dh and I. kraft mac and cheese for the kids, along with broccoli. everything I have had so its a put together tonight.. ;)
 
Navy beans with leftover cubed ham and warm cornbread. Can't get much more budget than that.
 
Not sure if I spelled that right, AKA Beans and Franks.... 1 pack red hot dogs - YUM O - a can of Busches baked beans (on sale last week for $1) and bread N butter for DH & DSs. Less than 6 dollars for our family. Not so bad! ;)
 
Tonight wasn't too budgety. I did a butterball boneless turkey breast. I get it at Sam's Club and it is wonderful. I season it up and do it in a cooking bag. I made stuffing (1.00), fresh corn on the cob (1.50), and bisquits (0.75). So it was about 16.50. But, my dh loves the stuff. I do it about once a month. We will have lunches on it and then I will pull some pecans out of the freezer and make turkey salad with the rest so I guess we will get dinner, lunch tomorrow, and a couple more for me out of it. DH is gone tomorrow night at a tractor pull, so we will eat Spaghettios, Ramen, or a frozen meal. Maybe chili dogs. It will just be me and the kids, so it will be cheap to counteract tonight.

I did get a good buy today. Our grocery had thick cut New York Strips for 5.99lb. I got about $25.00 worth. 8 steaks total. DH's b-day is March 1st and I will cook dinner for us, his parents, and my mom and step-dad. By the time I do the steaks, potatoes, and 7-layer salad it will be about 40.00. That will feed 8 people a great meal for the price of one meal out for 4 of us. Sometimes 40.00 doesn't cut if the men get ribs or steak. I might really splurge and do a DQ ice cream cake. DH loves those.

Sat night for us will be either out or frozen pizza. Will be gone all day to an archery tournament. Might do some fried taters and fish (Meijer had Gortons BOGOF). Have some hush puppy mix in there too.

salad ....this one I am going to get on my DH about...he left the blue cheese dressing out all night:scared: that's my favorite dressing!!


this weekend is such a whirlwind I will probably do beef stroganoff Saturday and a roast or leftovers Sunday.

Tonight was a great budget night! We were supposed to have chili tonight, which also would have been budget, but as I was walking out of the grocery store there was a charity for one of the grocery store's employees whose mom has died. They were selling our very favorite kind of pizza (normally above $10.00) for $5.00 as the pizza place had donated a bunch of them. So I fed my family fo $5.00 on our favorite pizza & helped out a poor girl.

Great dinner!
 
The kids and I are still eating the leftover Rachel Ray chili tonight, but my husband is working overtime tonight and has to feed an additional 8 people (whoever works overtime brings in the food). So, what I did was I browned 2 ground turkey meats ($4 total), added 2 cans of diced tomatoes ($1), 3 jars of spaghetti sauce ($3.50), and 3 bags of random small pasta around the house ($1.50). Mixed it together with a bag of italian cheese ($1.50) and put it in a big crockpot to keep warm. He is picking up 2 loaves of french bread at Albertson's on the way to work that I had free coupons for and some spreadable butter ($1.50). So, I am feeding 9 people tonight (plus my son had some for lunch) for $13. I am so excited, it sure beats buying $40 worth of sandwiches at Albertson's!
 
We're having pizza tonight! Yea! :) I'm trying a different Red Barron, meat lovers. Looks good. I'll give the kids a banana or some grapes afterwards.

I just got back from the doctors and getting some prescriptions filled. :sick: I think I'm ready for Spring! Ugh. Hoping the coughing and sneezing will disappear soon.

I'm going to soak some black beans overnight.Planning to make a black bean soup tomorrow. A friend of mine makes the best black bean soup. I've got the recipe, but it's a little more involved than what I'm up to. I'm going to look around for a quick, easy, tasty recipe. Does anyone have a recipe like that for black bean soup? (I'd like to use chicken broth with it.) TIA!
 
Spaghetti here. About 4.00 for enough food for 6 portions. Pretty good!
 
Black Bean & Rice Burritos - I don't know exactly, but under $4.00

We eat our "main" meal at noon as DH works nights. This made enough for DH and I at lunch, plus enough for him to take to work and me to finish it off at dinner. Plus DS ate some of the rice, tortillas and cheese.

8 servings, 1 cup each1 medium onion, chopped (about 2/3 cup) 4 cloves garlic, minced 1 Tbsp. ground cumin 2 Tbsp. oil 3 cans (16 oz. each) black beans, undrained, divided 1 can (14-1/2 oz.) chicken broth, divided 1 jar (16 oz.) TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream COOK and stir onion, garlic and cumin in oil over medium heat in large saucepan 3 min.

PLACE 1 can of the undrained beans and half of the broth in blender or food processor container; cover. Blend until pureed. Add to ingredients in saucepan. Repeat with second can of undrained beans and remaining broth. Add remaining can of beans and salsa to saucepan mixture; mix well.

BRING to a boil on medium-high heat. Reduce heat to low; simmer 15 min., stirring occasionally. Ladle soup into serving bowls. Drizzle each serving with 1 Tbsp. sour cream.
 
tonight was a beef stew in the crock pot. Yummy.
I used a frozen london broil, had a packet of beef stew mix, add spices, water, cornstarch. Added corn, carrots, and onion. Made pack of egg noodles when I got home. Have plenty leftover for probably 3-4 lunches.
Everything was in the house already.
