I do not like it Sam I am. I grew up in a large family, 6 kids 5 of which were boys and not a lot of money. Mama was great at making food that was not expensive but tasty, except meatloaf. She made it alot because it was cheap to make and would feed everyone. I never liked it so on meatloaf night I had smashed potatoes and a salad. We were the kind of family you ate what was on the table or you didn't eat. There was almost always a salad and a side vegetable with every supper since lettuce and fresh vegetables (back then) were fairly inexpensive. If no fresh vegetables could be had, they shopped at the dented canned goods store (yes it was a thing). Thankfully, smashed potatoes are a meal for me and I always love a salad. Didn't eat it then, don't eat it now.

It was on the What's for Dinner tonight thread

A-1derful Meatlaof

1 1/2 pounds ground beef
1/2 cup dry bread crumbs
1/3 cup finely minced onion
1/3 cup chopped green bell pepper
8 ounces tomato sauce
3 tablespoons A-1® Steak Sauce
1 egg
1 teaspoon garlic salt
3/4 teaspoon oregano
3/4 teaspoon basil
1/4 cup provolone OR jack cheese, shredded

Combine all ingredients except cheese.
Lightly pack in a 9x5" loaf pan.
Bake at 350 degrees for 50 minutes. Drain. Top with cheese.
Bake 5 minutes. Let set for 5 minutes.

Note: I do use oatmeal for the binder.
Thank you Nancy!!
I really appreciate it! :goodvibes
I like A-1, but I never think to use it in any recipes.
I'm going to copy this and make it sometime soon :thumbsup2

I have a great meatloaf recipe-uses ritz crackers crushed instead of breadcrumbs and it has a topping of ketchup and brown sugar.Delicious.

....I like meatloaf, but I never did when I was a kid. My mom used to make it with CHUNKS of green peppers and onions - and boy did I mean chunks! BLECCHH! I mix in salt, pepper, garlic powder, bread crumbs, 1 egg, and some ketchup and make a rectangle with it. Then I add a layer of mozzarella cheese and a layer of low-salt ham. Finally, I roll it up like a giant Yodel and bake it. YUMMMMM!!

Ugh, I am a vegetarian these days, but one thing I crave is my mom's meatloaf. So simple, so delicious. I make it for my family a few times a year and I just....want some. Basic - hamburger, onion, ketchup, breadcrumbs, salt and pepper, lots of Worcestershire. Top with sliced onions covered in ketchup, bake until onions are almost blackened. Then eat with a ton of Worcestershire and ketchup on it. Staple of my childhood that probably would make a lot of people revolt, but true comfort food!

We have a 2 pound thing of hamburger meat in the freezer right now. I think we might turn that into a meatloaf tomorrow. Got to figure out how to safely thaw it out though, as we've never frozen meat before it's cooked.

I only make meatloaf a few times per year now. It used to be maybe once per month.

Mainly I make the recipe that uses dry Lipton (Knorr) onion or mushroom-onion soup mix.

I ordered meatloaf in a restaurant ONCE, maybe 50 years ago. It was bad, much too moist and covered with a thick congealing gravy. :crazy2: I only took a few bites. Even my father, who’d eat practically anything, didn’t want to take the remains home. I’ve been afraid to order it in a restaurant ever since.

Can't remember the last time I had meatloaf - maybe at 50's Prime Time 15 years ago? Not something I make or generally think about eating.

You said your DD requested it - my DS every year requests I make him a beef pot pie when he is home for the holidays. I cook a beef roast and cut up the leftovers with carrots, cream of potato soup, and a homemade biscuit crust. It's a childhood memory of his.

I'm impressed there was a salad. My mom (from Ireland) made mashed potatoes every night, but I never remember a green salad growing up. I do remember sitting at the dinner table for hours because I wouldn't eat whatever vegetable was served. (I won that battle)

I don't like or eat meat loaf. I am anti-loaf anything. Anytime I did eat it it always felt like a cannon ball in by stomach.
That reminds me of something DH told me about his mother’s meatballs. When growing up, he and his sibling jokingly called them cannon balls because they could shatter a window if you threw them.

LOL. Me too. Then I thought of Rocky Horror Picture Show:

Oooh, thanks for providing great memories of shouting “meatloaf AGAIN??” while watching RHPS back in the late 70s/early 80s.

I hate it. Y’all are crazy 😂 Just this looking over this thread is making me queasy 😜

Same! There are only a handful of foods that turn my stomach when I think about them, and meatloaf is probably second on the list (Pizza Hut pizza is the first.) I don't want to see it, smell it, or taste it. I did eat it a bit when I was a kid but I never enjoyed it. I'm also very picky about meatballs.

I just realized I have only ever had my MIL's meatloaf and only ever made her recipe. To me was a thing from TV shows (like tuna casserole) before I met DH and his mom put meatloaf in front of me for dinner once. I liked it well enough and it makes DH smile so make it once every month or so, Lipton Souperior Meatloaf.

I couldn't eat my mother's meatloaf hot but enjoyed it cold as a sandwich. I get you on the 'eat what's served' childhood. the rule I grew up with was 'try one bite-if you don't like it we won't ask you to eat it again but you can only have what's being served' so thankfully there was always a veggie/starch and usually bread or rolls so it was fine.
I’ve been afraid to order it in a restaurant ever since.

I only order it at what appear to be more traditional diner type places, generaly never at a chain restaurant though black bear diner does it really well. we have one nicer restaurant in town that does a bison meatloaf that is to DIE FOR.
