What's for dinner? Was it "budget"?

We're having a ham steak, baked beans, and steamed broccoli. I have some ready to bake cookies for dessert. :)
 
Ok, this might sound kind of weird, but I'm in the process of making Chicken Vegetable Peanut Butter Soup. I got the recipe off of Allrecipes, and it got 4 stars from over 100 some-odd people. The reviews were pretty unanimous that this is a great soup! It has a lot of veggies in it, which I like...and I bought them at the farm market so they weren't too pricey. I'll let you know how it turns out. (it's supposedly got a Thai taste to it...from the p.b.)
 
I'm doing pot roast in the crock pot.

roast $4.60
maui onion $.50
4 lg organic carrots (from huge bag from costco, friend gave them to me) $0salt/pepper/seasonings $0
mashed red potatoes $1.20 (3.60 for whole bag, only using 1/3 of it)
butter

Total $6.30 and it's about 5 servings

Kids are drinking milk, I'm having water or iced green tea. (it's brewing right now)

Not sure about dessert.
 
creamed chipped beef on toast tonight! Pretty darn cheap.:thumbsup2 Hopefully I have some taters so I can make home fries too.
 

Tonight is salad night, I am going to cook some chicken breast and then add salad mix, cucumbers, tomatoes, chez and hard noodles.. Yummy the kids love salad night:lovestruc
 
Tonight and tomorrow night we are having Rachel Ray's chicken chili. It is awesome. It is her green chicken chili and my family's favorite meal. It is posted on her show's website. So happy I found it.
 
I have no idea....again...what we are having. We ended up having sloppy joes last night.

I am feeling my husband's sickness...why oh why did he have to share that???

Yesterday was taco night so we had tortillas and tacos made with ground turkey breast and all the fixings.

Tonight is pasta night so we had lasagna and veggies.

Tomorrow I am going to make chili in my crockpot.
 
not feeling to great so i wanted some 'comfy' food tonite..

made chicken pie filling in the crockpot (2 chicken breasts, frozen carrots & frozen peas with a can of cream of chicken soup)..simmered it all day..just scooped it into a baking dish, made the crust out of a tube of crescent rolls for the top. easy..yummy...

and i am baking some Archer Farms Triple Berry Blossoms from Target. If you haven't tried them I HIGHLY recommend them..they are to die for!:lovestruc
also off topic, I tried the Archer Farms Tiramisu over the weekend and I swear it may have been one of the BEST Tiramsu I have ever eaten anywhere, every..(and I have eaten a lot :rolleyes1 )
 
Chicken Stir Fry with rice. I had the two chicken breasts, bought the bag of frozen stir fry mix and rice. Should be within budget.
 
Two homemade pizzas...1.5 sausage, .5 anchovy. Homemade crust, I guess about $1 for two...sauce, under $1 for two, cheese...$7 for two...sausage, $2.50, 1 can anchovies ??? So $13 and will feed two for dinner, two breakfasts, and one lunch at least. Not bad, but I could have saved money by just using cheese, or using cheaper cheese...but it could also be worse...I could have added olives, mushrooms, artichoke hearts, chopped green onions...I'm on a clean out the pantry and freezer kick though, so am not buying anything I don't have to.
 
Mojo Chicken (Chicken $3.00 and Goya Mojo $0.50), rice ($0.25), salad for me ($0.50), drinks ($0.50) = $4.25 total for four adult servings (2 dinners, 2 lunches, so $1.06 a serving)
 
Tonight for us is Taco Soup ! Yumm

Brown your ground beef and poor it into the crockpot with following

V8 Hot and Spicy (entire thing)
Taco seasoning Mix
Kidney Beans
Black Beans
Corn
Diced Tomato

We've never tried it before so I hope it's yummy.
 
We had frozen chicken breast baked in salsa, wild rice, and carrots. All from freezer and pantry. Wow is the pantry still full

We love Taco Soup here. I have a recipe that's different than yours but I just kinda dump things in, even if I follow a recipe.

Usually
Ground turkey (or beef)
Onion and garlic
Saute the three in the pan (with a little evoo if necessary)

Then add
Diced tomatos or Ro*tel
2 or more cans of beans
Tomato juice /v8
1 pkt dry ranch dressing
1 pkt taco seasoning
corn


You really can make it 100 different ways though. Sometimes I put a can of diced chilis in, etc. We've never had a bad batch. We serve it with Tortilla Scoops and a bit of cheddar cheese. I've wanted to put sour cream on the top, but haven't yet!
 
Tonight I'm fixing something easy. I made a variation of Panda Express Orange Chicken last night. (not exactly healthy, but GOOD)

I am thinking beef/bean burritos or tacos.
 
Last night was beef fajitas.. yumm.. was hopign to have some leftovers for lunch and hubby took them to work lol

Tonight is boneless pork chops.. just need a good idea.. was thinking about in the crock pot
 
last night ended up being upside down night a night early:

only cost was for the 2 eggs and the syrup the other items were given to us. Best part was I didn't have to cook. :cool1:

We will probably have hamburger helper tonight as I am actually getting worse and just couldn't stomach looking at the chicken and bbq sauce I planned on doing in the crockpot.

I would love the sickies to leave!!!
