What's for dinner? Was it "budget"?

making montery chicken with black beans and rice. found it on the uncle ben's rice box. its costing me $10 for a family of 4
 
Oh, I'm sorry I should have told you I've never done it in the crockpot before. I have frozen it before and it is good. I just add a bit more broth when reheating it!~!~!~!~!


It was all me. :upsidedow My idea of a shortcut. Crazy me.
 

We had gordons fish, mac and cheese and corn. Plus I made Pumpkin Fluff for desert, its a weight watcher desert very good for only 2 pts..

We had salad: lettuce (bagged $1.00), onion (.25), tomato (.25), cucumber (.50), croutons (free), fat free ranch dressing (1/2 bottle .50) : total: 2.50

Entree: Asparagus stir fry with other assorted veggies (bagged 2.00), three grilled chicken breasts (3.00) Total: 5.00

Dessert: Jello parfaits: .50 (box jello), whipped cream (.50 1/2 tub), mandarin oranges (.50): Total: 1.50

Grand total for appetizer, main entree and dessert for 2 adults, small child: 9.00!!
 
We had Rachael Ray's Pretzel Crusted Chicken with cheesy mustard sauce, Barilla Plus pasta and broccoli. It came out really well (dh was very impressed ;)). I already had everything to make the meal and I have lots of leftovers.

I also cooked up the last of my thick steaks that I got on sale a while back. I just browned it and then cooked it in a pot with some leftover pizza sauce, beef broth and a few other things for flavor. I slow cooked it for 2 hours and it's now very tender. We'll use the meat for sandwiches and the "broth" for some soup (I'll probably add veggies, pasta and beans).
 
Tonight was hot ham/cheese sandwiches and turkey soup, and homemade applesauce..

Enough leftovers for 3 sandwiches, 1 soup, and applesauce...
 
We didn't have meatball subs last night. I changed my mind again! We had steak, steak fries, and baked beans. It was good. :) Yesterday, I bought a bunch of steak that was a good price. So we had leftover steak from last night. I found a good recipe in Kraft's Food and Family cook booklet they send out (for free!) every month. I love those books! Do you guys get them too?

Anyway, the recipe I'm using is:

Beef Noodle Bowl
Prep: 10 min Total: 30 min

8 oz linguine, uncooked
3 cups broccoli florets
3 carrots, peeled, sliced (about 2 cups)
1 lb. beef sirloin steak, cut into strips
1/4 cup Kraft Asian Toasted Sesame Dressing
1 Tsp. teriyaki sauce

Cook pasta as directed on package, adding vegetables to the boiling water for the last 2 min. of the pasta cooking time.

Meanwhile, heat oil in large nonstick skillet. Add meat; cook 4min. or until browned on all sides, stirring occasionally. Stir in dressing and teriyaki sauce; cook 2 min. or until sauce is thickened, stirring occasionally.

Drain pasta mixture; place in large serving bowl. Add meat mixture; toss to coat.

Makes 3 servings, 2 cups each.

Low cal and I got the low sodium Teriyaki sauce. I'll let you guys know how it turns out! :)
 
Tonight Dh and I will have sandwiches with the steak I cooked yesterday and leftover hamburger/hotdog buns from last week. We'll have a salad with it.

The kids will have chicken nuggets and leftover pasta and carrots.

so for the price of bread and fixings for on top of the soup I've got a quick supper!!:cool1:

tomorrow is dinner on the fly....picked up a coupon book for Papa John's for $10 on Saturday and the first coupon is a free large pizza so we will eat that on the way to the sneek peek of Penelope:yay: that I won. Of course I will get popcorn and pop there so that negates any savings but can't have a movie without those 2.

I make this all the time. It is so good. Did you like it? I don't add the carrots. It makes good work lunch leftovers too.
 
Tonight's it's chicken dumplings from Costco over rice w/chinese vegatables.

Dumplings 1/4 of whole package which was 9.97 so roughly 3.00.
Rice - had already
toasted sesame seeds - just bought a whole jar for 2.39 but only use a couple of tablespoons
chinese vegetables - 1.25.

I get those booklets too! I remember looking at this recipe and thinking it looked really good; you'll have to let me know how it turns out.

Tonight we are having pot roast in the crockpot with cream of mushroom soup. Long grain wild rice on the side, and a as-of-yet-undetermined veggie. :)
 
Tonight is my lazy night and we ordered pizza, we were short handed today and I ran my butt off at work. 26.00 with tip for 2 pizzas and a 2 liter of pop from Pizza Hut..
 
Tuna steaks (frozen and donated to us by gparents so free!) with wasabi butter sauce, bob evans mashed potatoes (2.50) and steamed asian veggies (1.50). Yep, pretty budget.
 
Tbrenk and Sorsha the Beef Noodle Bowl was great! We really loved it. I knew we'd want more sauce than it called for so I made double. That's the only change I made. It's on the keeper list!

For dessert I made peanut butter cookie bars. It sounds better than it looked. Luckily it tasted fine. :upsidedow I just made a batch of Duncan Hines peanut butter cookies and covered the bottom of an 8" pan with the batter, then sprinkled some chocolate chips on top.
 
I roasted a big chicken yesterday, and there was still a lot of meat left on it, so I took all the meat off the bones, and stir fried it in olive oil, with rice and frozen veggies with soy sauce. My family loved it, and didn't realize it was left-over chicken! My first budget-conscious meal, and it feels great!

For dessert/snack later, I'll be cutting up a bag of apples and put them on a plate with whipped cream on top. So much fruit gets wasted in my house, but if I present it nicely, my family will eat it.
