What’s for dinner?

Tonight just a simple kind of "southwestern bowl". Sautéed chicken, peppers and onions...seasoned with paprika, chili pepper and cumin. I'll add some black beans to that and a bit of cheese....over brown rice.

I'm excited about our Super Bowl dinner. Making Buccatini all'Amatriciana. My butcher ordered some guanciale (cured pork cheek) for me and that's the real deal.....the way I've always had this dish in Italy. First time making this....it's a pretty simple dish, so hopefully it will be good.
 

A smoked sausage and rice casserole recipe that I fast-track on the stove top in a skillet, with tossed salad from a bag, buns and fruit on the side. I got home a little late and then took it easy for an hour so we're just sitting down to it now.
 
Forgot to add that I love this thread. After cooking a massive amount of meals over 56 years of marriage, I love simple, quick recipes and love getting fun ideas. Especially this year when I've gone back to making numerous home meals so as to avoid going out or picking up often.

Make Ahead Unstuffed Shells - you make this 24 hours in advance. I’m serving it with garlic knots. Since I’m working until 6:00 tonight my DD can put this in the oven so we can eat as soon as I come home:thumbsup2

Tonight is taco bowls with rice, guacamole, black beans, pick de Gallo, etc.
 
We tried chicken wings and French fries in our new air fryer. Neither were much of a success.

It takes a bit of a learning curve but trial and error ends up with great results. We had a crappy air fryer then got a hood one snd it made a huge difference!!!

I got one for Christmas and didn't even take it out of the box, just returned it straight away. Practice may make perfect but I've already got a great convection oven that I know how to work really well. :laughing: When I researched the air fryer it seemed like figuring out what to make in it and then doing it successfully would take more work than I'm regularly doing now. No thanks.
 
We just finished shrimp scampi over linguine, tossed salad and homemade Cheddar Bay-type biscuits. I'm trying to get up the gumption to make something that can just be heated up tomorrow because I've got a thing Monday nights and need a supper that goes on the table really fast.
