What’s for dinner?

:wave2: Time to bump this thread. Now that some of us are going into month 3 of being locked down again, meals are getting tedious. I enjoy hearing what others are having for a little inspiration.

Tonight I made a Taste of Home recipe called Milanese Chicken with ranch sauce and a quick-pickle of ribbon sliced cucumbers and radishes. It turned out well but panko-crusting and pan-frying the chicken, not to mention having to haul out the mandoline for the vegetables and mix a ton of ingredients for the sauce was a little more trouble than I felt like after work.
 

Tonight Ranch & Bacon Suddenly Salad. With my typical add-ins - celery & tomato.

Last night was leftover night - pulled chicken, sloppy joes, and mac & cheese.
 
I love hearing what other people are making for dinner too.

This is what’s for dinner at my house tonight.
I make this with some Rice A Roni Fried Rice
I love this meal!

I use my Crock Pot all the time - its my favorite kitchen item.

Last night was pesto pasta, leftover stuffed peppers for DH because he doesn't like pasta.
Tonight is breakfast food for dinner.
 
I'm getting used to a switched schedule right now with a big meal at noon before DH goes in to an odd shift. I really don't like it. We're having Aidell chicken sausage and roasted sweet potatoes with salad and some fresh strawberries.
 
Easy dinner tonight. Fried Panko breaded chicken strips, mashed potatoes, brussels sprouts. It snowed here the other day so we haven't gotten to the supermarket to refresh the stocks.
 
Tonight is NY Strip steaks with Tater Tots and Caesar salad.
That cut is usually called Striploin here and that's what I've got in the fridge too. I'll have to pan-fry it; I sure wish the weather was right to use the BBQ. We'll have it with loaded baked potatoes, some sort of green salad and garlic toast.
 
That actually looks really tasty. Serving it with veggie fried rice or plain rice and some stir fried veggies. Heck, or even just rice and broccoli. I saved it so I can plan to make it soon!

Chicken Caccitore:
Boil some chicken thighs in a can of tomato sauce (I like tuttorosso crushed) with a jar of pimento and liquid, a jar of capers and liquid and 1 tsp italian seasoning plus a few potatoes peeled and cut up into med. chunks. I let it cook over time, it boils then cools then boils the cools for a few hours, can do slow cooker or simmer too. Can put this on rice or on another whole potato when it's a leftover, can probably do a pasta sauce too. My college son has been eating this all week, it's easy & good.

I put this over leftover Riso Di Sartu from 2 nights ago, it was so yummy.

Riso Di Sartu:
first pot: cook ground beef with oil and garlic then add a can of tomato sauce (I like tuttorosso crushed) and can of peas
second pot: make rice with chicken broth if you have it, mix with more peas & uncooked srambled egg (the egg makes the rice keep it's shape as you bake)

Cover the bottom of a baking pan with oil and breadcrumb if you have it, if not no biggie. Layer rice mix and pull up the sides. Put in a layer of the tomato sauce and beef mix. Cover with the rice & bake for about 40 min around 350.
(Freeze leftover meat mix for on a potato or even for a french bread pizza night)
 
Last night we had chicken burrito bowls, made In crockpot. Tonight was jambalaya, salad and biscuits. Tomorrow is pasta & broccoli, probably.
