Wendie, I am sorry that you are finding yourself in such a stressful situation. I hope everything works out for you.

Glynis, that meal sounds tasty. If it is good please post the fish recipe.

I ended up changing last night's meal from chicken stew to chicken pounded thin and crusted in mustard and crumbs, then topped with a shredded ceasar salad and tomatoes. It was very tasty. I have photos but have not uploaded yet.

I can't remember what I wrote on the menu for tonight's dinner. It's either New Orleans style BBQ shrimp and brown rice or spaghetti with oven roasted tomato sauce.
 

I thought I would give you an update on my DB...he is still not doing well. I was told he has good days and bad but he is still on a respirator, not 100%, but he is still on in and the docs were hoping for more improvement by now. I have a feeling the brain swelling did a lot of damage since it was not treated for a week. :sad1:

When I told DH that we ate the last meal I had bought for, he informed me it was a Taco Tuesday day. I swear, I should just fold and make it a weekly thing it makes him so happy :laughing: I can't really complain - I can't cook for as cheap as it is ($3 for 3 tacos, beans, and rice)...

You may have seen on FB that I was up until after 530 this morning thanks to the damn steroids. I did get some work done but I know I'll be dragging later. And it's not doing a bit of good but I feel like I should give it a fair chance. I really wish I had insurance info; I'm ready to schedule that surgery today. I'm really not comfortable.

Ann, I've been looking at the Polish stoneware.....some of the patterns are really pretty. Right now my addiction is LOCK & LOCK!!!! We need to have QVC removed from out t.v.:headache:

Dinner turned out really well last night. Greg loved it but no matter how I wrap the chicken breast the cheese always ends up in the pan.

Tonight is a crap shoot I didn't take anything out of the freezer. Greg is on Atkin's again so a quick pasta is out of the question.

Here is the recipe from last night

Salsa Chicken

1 T oil
4 chicken breasts
salt and pepper
Frozen corn- use as much as you would like
1 can Cuban style black beans
1 jar favorite salsa


Season chicken with salt and pepper. Brown in a large skillet in the oil, remove. Saute corn until nicely caramalized, if you want. (I forgot) :sad2: Add beans, mix well and return chicken to pan. Pour salsa over all, put a lid on the pan and simmer for about 15-20 minutes until the chicken is cooked through.

You can add cheese to it if you want, just cook for a few minutes more until the cheese is melted. Serve over rice. You can also have it with sour cream, lettuce, tomato and avocado.

I ate it over rice with a little sour cream for dinner and with cheese, lettuce, tomato and avocado for lunch today.


Not sure about dinner tonight, I was a little to into Farm Frenzy last night and didn't take anything out of the freezer. :sad2:

Ellen- I usually just play on Webkinz, and occasionally Bewjeweled on FB, and have a tendancy to play off and on. I was bored one night and decided to try this one out and now I am hooked.

Glynis, what play are the kids doing?

It's a play written specifically for elementary age students. It's called "Choc-A-Block" and it's a kind of a melodrama that revolves around a club filled with candy lovers. The kids are enjoying it, and they are getting a lot of exercise with all the dancing that's involved. As long as they are happy, I'm happy.

Katie is in the Jr. High production of "Metamorphoses". It's a collection of Greek myths. She is in several of them, and is having a ball! Guess I have a family of drama geeks on my hands! Hooray!!!!

Hey y'all,

I have to say that I just HATE this cold weather! I could never move from the Deep South! It's taken away any drive to do anything except sleep & cook. I should start taking the decorations down but I just don't feel like it. I don't know how you all manage getting anything done. I don't know what I'd do if we also had ice & snow outside!

Laura, I did have to take aleve last night for my neck! That worked, but I with A back in school at least I won't be spending the whole day on Wii.

Ellen, I don't have any Wii games yet, just the sports ones that came with the package DH bought me. He also gave me a $50 gift certificate to get more. I don't know what I'm going to use it on, it looks like the 1st purchase should probably be more remotes.

Robin, That looks yummy! :thumbsup2 I will have to try Flickr again. I had put a pic on there but couldn't figure out the rest. Photobucket is slow & continues to give me trouble with pic size.

Becky, You always make eggs look so delicious!:thumbsup2

I don't think I'll be cooking today. I have 2 soups in the fridge. The lentil one I made yesterday & a beef vegetable soup I made over the weekend. Although if I cook something DH probably won't ask why the decorations haven't started coming down! ;)

Aimee - I hope you get your insurance straightened soon and can have that surgery.

Maria - hugs to you and Greg. That really sucks and I wish I could do more than say I'm sorry and offer prayers.

Ellen - I'm sorry about your friend/family. I'm grateful they are all safe, but know how difficult it is to lose everything. Prayers coming for them all. I hope you have a great trip!

Wendie - sorry that you are in a difficult spot. I hope things work out and you get to go see your Dad.

Glynis - that's wonderful that you and DH are both back at school and continuing your education. Good luck with this class. Sounds like the kids are having fun in school!

We picked up all of the Christmas stuff this weekend, glad to have that done. Dinner has been hit or miss lately, but tonight I'm making split pea soup. Something warm. I think warm foods will be the theme this week! It is very very cold down here. I live north of N.O. and it will be in the low 20's all week in the evenings, and in the teens this weekend. And they keep talking on the weather about "wintery mix" for Thursday. Yuk!!

For those on Facebook, there are now pics of Emma & Christmas. DH is off today and fixed the printer and downloaded some pics for me.

Having washer machine troubles...repairman is downstairs now.

Hey y'all, don't worry if I'm not posting much. Extremely bust at work, busiest time of the year for me so it carries over to home. Having cable and garage door opener problems to boot! Good thing Kyle is home until the 19th to be available when the repair folks show up.;)
 
Ann- I don't think our washer is much longer for this world, but it's to old to be worth repairing. I'm secretly excited, I'd love a new front loader. My husband's cloths get so dirty and now we have a california king bed, the sheets barely fit. I hope yours is a cheap fix though.

Sheryl- I'm the exact opposite! Once summer hits, I shut down. Anything over 80 and I'm done. I could never leave the northeast. Enjoy your wii, we have two controllers and it's perfect for the three of us. We rarely pay full price for a game, the $20 ones are still new to us. Have fun playing.

Maria- The last thing in this world I need is more lock and lock! My parents just gave me two huge sets for Christmas. They are sitting on the counter waiting to be washed and then I don't know what to do with them. Two years ago the kids at my daughters lunch table were crushing her snacks that were in a plastic bag, so we tried lock and lock and the little brats couldn't ruin her lunch, but my lock and lock addiction started. I bet I have at least a hundred pieces, I better not count.

Becky- I get wasabi mayo at trader joe's, that makes a good chicken coating too.

Aimee- There really isn't a recipe for the cod, just take a portion size, wrap it in a piece of proscuitto and broil it for about 10 minutes. That's it.

Off to clean up the mess I made in the kitchen.

I forgot to say that the Cuban beans actually had garlic, spices and green pepper added and were really flavorfull so hopefully you can get them.

We're used to some cold here but this has been downright frigid! They are calling for flurries several days this week, we even had some this morning. I came out of the house to go to work and there was a small amount falling, not enough to lay anywhere. The funny thing is there really weren't any clouds over my house.

It was in my work bag, no idea how it ended up in there! Only thing I can think is when I got home I went to put it in to my purse, wasn't paying attention and put it in that bag instead. They were right next to each other on the bench in the hall.
 
RObin- love the food porn! I would love some Lck and Lock, I only have the pieces I have confiscated from Erica ;)


My washer is acting up a little but I want the thing to hang on. The set I want is expensive so the longer this one lasts the more I will be able to justify the one I want. I wish I knew why the dryer never quits, the washer .....oh well. I want one big enough tot handle king size comforters. I don't like a laundymat so I buy thin coverlets but I know that they beat the heck out of the washer anyway.
Kat- Not to worry!Don't overdue!

Nola was not herself today. SHe just wanted to sit on my lap and read. Ii loved it but that is not the usual little spitfire. She took a nap for her Mom and asked to pee on the toilet. Welby said she will not push her but she did pick up a seat for her. She will nto sit on her potty that Welby has had in the bathroom.

Leftovers for dinner tonight.

Don't laugh I went to the store for Milk, bread and cheese. We are supposed to be getting a snow storm starting tomorrow on top of this cold temps.

To all make me laugh about your addiction to QVC. Since I had the satelite installed I have no idea what channel it is on :rotfl2: I have bought my share of stuff from them in the past. At the height of the Beanie baby craze I had them on speed dial.:rolleyes1

Marilyn I am glad you found the camera. I hate when I lose something which is just about everyday.
