The What's For Dinner Thread - November '09(recipe index in OP)

Good morning! It's another crazy Wednesday around here. Good news is that I sent an email to my business manager, filling her in on the health stuff so she would know why I'm a little anxious about ins stuff, and she replied back that an email from the ins company WITH our policy number attached came in at the exact same time as my email to her! So, I have something now to get in the door. Card will get here in a week or two but with the number, we're good.

I called the GI and told his assistant to go ahead and make the appt with the surgeon. :sad2:

Dinner (and lunch for that matter) is :confused3 I'm stuck here until 9pm.
 
I totally understand. I still have a tv antenae the kind that goes on the roof in my basement. It came down in a storm and my ex put in the basement. Must be so the basement fairies can fix it. WELL I am still waiting! Plus the darned thing is too heavy for me to lift and drag it to the curb pirate:

I have several items like that in our shed. Kenny must think there is a shed fairy. :confused3


Gretchen - I know it's not funny but just the fact that he's working on what may be his final resting place is killing me!:rotfl2: Seriously...:hug:

I agree with Kathy. Maybe you can "convince" him to check out if its working from the inside.

OMG, it is just too easy to picture Kenny leaning into the freezer & getting a little shove into it!

Men, can't live with them and you really can't store them in the freezer!

I'm not laughing at you or your frustration. I am laughing because Kenny's gift sure didn't get him out of the freezer for long.

Gretchen, geez, when it rains, it pours, doesn't it? Sorry about the freezer. I think I have to get a new dishwasher. Mine runs for hours and doesn't clean well. Oh, and my faucet is draining water under my kitchen sink. I am ignoring both of these things for now.

Wow, you win. At least I was able to save most of the food in the freezer by cramming most of it in the small freezer and sending the rest to Kenny's Mom. I HATE to wash dishes. And I hate having to clean out under my sink even more. When the idiot who replaced my counter tops failed to attach the sink like he was supposed to, we had a disaster. I had boiled some shrimp and poured them into the colander in the sink. I heard a loud POP and then I heard the water gushing out under the sink. I thought we would never get the shrimp smell out. :eek: So, moral to the story - don't ignore the leak for too long. :)

Aimee, I'm so glad you are going ahead with the surgery. I hope it comes quickly for you and that it does everything the surgeon thinks it will. :hug:

Well I'm pretty pleased with myself, you all will be sick of my pictures soon.

Gretchen- Husbands certainly have a unique perspective on things. I remember one Easter my husband helped me get the house ready...by pruning the oak trees. Really, who was going to notice if they were a little thick. At least when he's twenty feet in the air he's out of my way. Good luck with the freezer.

Aimee- I'm glad you are going to get the surgery done with, once it's done you can stop worrying about the actual surgery. My sister in law delayed getting her gallbladder out and all that time she spent worrying when she could have been healing.

Laura- I dropped my car off for an inspection and I needed new brakes, front and back. Now every year when I go for an inspection I get nervous.

Marilyn- I'm so glad you found your camera, I'd be so upset if I lost my pictures.

Janice- I had to laugh at your milk and cheese for the storm. I went to the store the other day to by gallons of bottled water for my husband. He works outside, so he needs it that way. Anyway, we had a little snow coming, all the water was gone. Everyone preparing for the weather bought it all.

Off to get some work done, chuckwagon casserole and a spinach salad for dinner.
 

I have a question. Has anyone tried any of the recipes out of Eating Well magazine? How did they taste? I am thinking about doing the 28 day diet.

The recipes sounds like something I would eat and uses food I already buy.

It is miserable here today. Snowing with winds gusting to 30+ MPH. In other words a real ground blizzard. It is suppose to stop snowing soon but the wind is to still blow. They are saying -30 WC. Burrrrrrr!

I am finally off work and home trying to get everything ready and packed. We feel if we can get about 100 miles to the west we should be ok. I talked to the people we are renting from in Colorado and the sun is shining there. Cold but ok. If we can just get out of here, we should be just fine the further west we get.

They also said the there is no internet, except dial up in the Condo, so I might not be back on again until I get back on Monday.

You all stay warm, play nice and eat good. I know we will. I don't have to cook for the next 5 days. YEA!! I'm outa here - I hope!!

Hey y'all,

I'm still in my cold funk. Woke up with a sinus headache, turned on the tv while drinking coffee & ended up sitting to watch P.S I Love You. I'm a romantic movie sap. So I've accomplished a whole lot of nothing so far! I did cook again last night, Chris was working late & I knew A wouldn't eat either one of the soups. So I made a healthy spaghetti, with turkey italian sausage, barilla pasta & lots of veggies in the tomato sauce. Sorry I forgot to take pics.

Dinner last night was yummy! I'll post the recipes for the fish and asparagus, if anyone wants them!

Nothing on tap for today. This is a good thing, since I'm having a "that time of the month" headache, and just feel really blah! I'm hoping to squeeze in a nap at some point!

Dinner tonight will be cabbage roll soup. If I feel up to it, I'll make some biscuits to go along with it.

Some of the Wii games come with extra remotes, so you might be able to get a game plus a remote. I think we have three or four. The kids like to play with their friends.

Thanks I didn't realize that. One of my Nola friends also mentioned renting games, so I might check that out, before buying them. This Wii that DH got a deal on, looks like it could be a very expensive proposition, that I'm sure he didn't think through!

Janice, Sorry I haven't tried Eating Well.

I won't be cooking tonight. I've been eating the veggie soup for lunch, we'll have the lentil soup for dinner. A will probably eat the rest of the pasta for a snack or early dinner. She has been an eating machine lately & really growing! She's complaining that her school jacket elastic band is hurting her wrist, her shoes are too tight etc. I haven't measured her, but Chris weighed her & she's up to 45 lbs. That's 3 in about 2-2 1/2 months quite a growth spurt for her.

:lmao::rotfl: We spend usually between $35-$60 on a normal week at the supermarket. I've been shopping primarily at Walmart and Winn-Dixie. W-D has some great sales! :cool1:

I am feeling substantially better today compared to yesterday. Still not great, but far better than before! Thanks; I am hoping it gets resolved soon.

Bethany, I had 6 pages of those stickers that I kept forgetting at home. Now they aren't doing the promo any longer. Grrr, I'm really annoyed now that I know it's such a hot item.

Robin, If I didn't do anything when the temps rose above 80, we'd really be in trouble! We could literally freeze this week & have the temps pushing 80 by next week. We rarely see long term cold snaps like we're getting now.

I wish it would push 80 next week. I am beginning to wonder about this weather. Last month we set records for how much rain we got, this month we are setting records for the cold. What luck I came just in time for all this! :lmao:

I'm with Robin. I hate the heat. If it's cold, I can always put on another sweater or make something that takes a long time in the oven, but I hate being hot and I don't like air conditioning.

Well, when it's hot you can always take off another ...errr, maybe not. :rolleyes1 I don't like being in extreme cold because I shiver and I end up tensing up my whole body...then I ache from all the tension. My back, my jaw, my shoulders...gah. I find extreme cold (Like, below +20 :rotfl:) to be actually painful. :confused3

Lock and lock...I have never heard of it. Is this some kind of tupperware thing? I am always losing parts of tupperware...I have bins full of lids without boxes and boxes without lids. I think they go hide with the missing socks somewhere.

Yes, Lock and Lock is plastic bins. They are called Lock and Lock because they have multiple clasps to hold the lids on the bins. I actually find them a little annoying, but they are nice. They have the rubber strip around the edge of the lid so they are airtight.

Well, I live within 30 minutes of some of the best skiing in all the country, and I have never been skiing in my life! I figure I can break my leg just fine on my own without strapping strips of wood onto my feet and pointing myself down a mountain!

Had a good dinner tonight, made pork chops with onions and roasted potatoes.

My poor skin is sooooo dry because of this cold weather! I took a shower tonight and slathered on the lotion and I am still dry. If I drink any more water I am going to float away! And have a larger water bill because of the toilet flushing! :rotfl:

MINE TOO. It's dry and itchy. My problem is I don't know if it's from the weather or from the antibiotic. :sad2:

Smart woman. Me, I don't like cold. So, winter sports will never be my thing. Skiing :scared1: never gonna happen :rotfl:. I have ice skated a few times, though.

I'm dealing with the dry itchy skin, too, thanks to the cold. finally found a face moisturizer that works but still haven't found a body moisturizer.

WFD - Beef stew, rice for Johnny, noodles for Kyle and french bread.
 
Glynis, I've been skiing. I haaaaaaaaate it. I have no idea why anyone finds that to be fun :confused3 After half a day, I opted to spend the rest of my ski vacation in the lodge with a cup of hot chocolate and a good book. :thumbsup2

That's my idea of a great day, right there! I also enjoy dropping everyone else off to ski, and then going to the outlet mall nearby and shopping!
 
Here are the recipes I've used the past few days:

Almond Crusted Baked Fish

4 fish fillets - I used tilapia
1/4 C. crushed almonds - I used pecans and crushed them really fine
1/4 C. bread crumbs
1 C. buttermilk

Mix the bread crumbs and the nuts until well combined. Dip fish in buttermilk, and then dredge with the nut/crumb mixture. Place in a greased baking dish and bake at 375 degrees for 10 minutes, or until it flakes easily with a fork. Serve with lemon wedges. I think the next time, I will add some salt and pepper to the crumb mixture, as it was a little bland for me.

Roasted Asparagus

1 lb. thin asparagus
2 Tbs. olive oil
2 Tbs. balsamic vinegar
Parmesan cheese
Salt and pepper to taste

In a large baggie, place asparagus (snap the woody ends off first). Drizzle with oil and vinegar and let marinade for about an hour, turning the bag a few times to make sure they are well coated. Preheat oven to 400 degrees. Place asparagus on a cookie sheet and spread out. Cover with Parmesan cheese. Bake for 10-15 minutes, until cheese is melted and the asparagus is crisp-tender.

Cabbage Roll Soup

1 lb. lean ground beef
1/2 small onion, chopped
Salt and pepper
1/2 head of cabbage, chopped (I used half a bag of coleslaw mix)
1 14.5 oz can diced tomatoes, undrained
1/2 Tbs. Worcestershire sauce
1 Tbs. brown sugar
2 cans chicken broth
4 cloves garlic minced

Brown the ground beef with the onion and salt and pepper in a large saucepan. Drain any fat. Add the rest of the ingredients and bring to a simmer. Let it cook for about 15 minutes, until cabbage is tender. Serve with a small dollop of sour cream on top, if wanted.


This soup was the BEST! I was planning on leftovers for lunch today, but they ate it all!!! Leslie wasn't too sure about it, but once she tried it, she couldn't stop eating it. Even Timothy loved it. Next time I make it (and there will be a next time), I will double or even triple the recipe! I made some whole wheat biscuits to go with it, and it was a very satisfying meal!

I have no idea what I'll do for dinner tonight. I'm thinking apple cider chicken. I'll bbl to let you know what I decide!
