BCB - My guys don't like chili so I never get to have it...that looks sooooo good!!!!
 
Hey All! I have Andrew home sick today...I think its a normal cold but he was really feeling awful this morning. I will catch up tonight or tomorrow...:goodvibes

Dinner is the beef enchiladas, rice and salad. I made the enchiladas last night so its easy peasy!
 
I forgot to post about this earlier, but since we are all talking about the crash hot potatoes lately, I wanted to let you know that last time I made them I cooked the potatoes and let them cool before crashing them--I boiled them the day before, in fact. They stayed together much better than the times I have crashed them while they are hot. Just a little tip.

BCB, 5 habaneros? Wow, I thought I liked spicy food!

Speaking of dinner, here is a picture of last night's. Salad, bread, and a bacon-leek souffle. The souffle had cream cheese in it and was very light and tender:

Nancy - I really NEED to be buried with sorting and filing papers... I let it go this semester since I was teaching 5 credits....Bad idea... The mess is a place!! :rotfl:

BCB - Looks yummy, even without the beans... My guys like it stuffed full of meat and beans...I don't get to make it very spicy... I love it over rice...

BCB I may have to make that chili but minus the 5 habaneros I will use something less :firefight. I don't want to test the response time of our local fire dept.;)

Tonight was a sandwich for the boy and greek salad for me.

I hate the end of the school year the kids always get overloaded with homework. If it was anyone but my A I would think they put off the assignments to the last second but A is really strange about doing thing right away. He is soo not his father and I.

Off to watch the final of Dancing with ? Stars is very questionable.
 
Dinner was good but SOOOOOOOOOOOOOOOOOOO hot and spicy. DH was literally sweating and his lips went numb. We aren't real fans of really hot stuff so it wasn't a plus for us but the recipe was still a winner; I'd just leave out the pepper next time, or half it. Or something.

Pad Thai
1/2 lb. dried flat rice noodles, 1/4-in. wide
1 chipotle in adobo
1 shallots, chopped
3 cloves garlic, chopped
1 lb. shrimp, peeled and deveined
1/4 c. fish sauce
3 TBSP tomato paste
1 TBSP dark soy sauce
2 TBSP dark brown sugar
3 TBSP fresh lime juice
2 TBSP canola oil
1 1/4 c. mung bean sprouts, divided
1/2 c. low-sodium chicken broth
2 eggs
4 TBSP unsalted peanuts, toasted and chopped
Chopped fresh cilantro, for garnish
One lime, quartered

Place the noodles in a large bowl and cover with warm water. Let soak for 30 minutes to rehydrate. Drain and set aside.

While the noodles are soaking, combine the chipotle, shallots, and garlic in a mini food processor and process into a paste. Set aside.

Chop the shrimp into 1/2-inch pieces and set aisde.

In a measuring cup, combine fish sauce, brown sugar, tomato paste, soy sauce, and lime juice. Whisk to help melt the sugar.

In a wok or large, deep saute pan over high heat, crack the two eggs into the pan and quickly scramble. When finished, set aside. Add the oil to the pan and heat until very hot. Add the chipotle paste and stir fry for several seconds until fragrant. Add the fish sauce mixture and stir to combine. Add the shrimp and stir fry until the turn opaque, approximately three minutes.

Stir in the noodles, one cup bean sprouts, and the broth. Continue to cook, tossing occasionally with tongs, until noodles are tender and have absorbed all the liquid, five to seven minutes.

When noodles have absorbed all the liquid, transfer to a large platter or four individual dishes. Top with egg garnish, remaining bean sprouts, peanuts, and cilantro. Place lime wedges alongside. Serve immediately.

Princess- Do you really work in a salt mine or is that an expression? My dad went down in one once and decided it wasn't something he needs to do again.

Hmmmm... I'm currently working in a mining company; so the salt mine expression probably is a good fit.

But it was also a reference because:
a) I owe, I owe...so it's off to work I go. It's not quite a diamond mine because if it were, I wouldn't be owing....so it's salt (on the wound) instead!
b) Some of my coW-workers (of which I'm one of the heifers :rolleyes1) that I work with are Grumpy, Happy and Dopey. In case anyone was wondering, I'm Sleepy.

Well my dear friends I have BIG news and you are the first I have told -

:yay: I am going to be a Grandma again :cool1:

Elizabeth and Jay and of course Ethan came walking into the house last night looking like they swallowed a canary. Ethan walks up to me and says "Read my shirt Nanny" It said - I am going to be a big brother - Finally!!

We are thrilled beyond words. She is 8 weeks and due on January 2nd. I do ask for prayers please as she had so much trouble with Ethan and even getting preg. So we are holding our breath, but she has been to the doctor and all is good. :woohoo: :dance3: WooHoo!! I am going to be a Grandma again!!! :banana::cool1:

I will be back later to post dinner and catch up. I just couldn't wait any longer to tell y'all. WooHoo I am going to be a Nanny again!!!!!


Ellen - Congratulations! I'll be thinking and praying for all of you. Looking forward to numerous updates up to January and waaaay beyond!

Another grey, rainy day here. Did I mention that for 15 minutes yesterday we got SNOW! Yup. It fell, fast and furious, for 15 minutes, and then was done, but it was yucky!!! I'm hoping that it won't do that today, but will be content to stay as rain.

Janice and Princess - You are killing me this morning. I really needed the laugh!

Dinner tonight will either be tuna casserole or some kind of soup. Depends on what I have on hand so I don't have to run out to the store!

Robin- I don't get the the devotion to that old iron. Marisa was so mad one day. She was in a long line of cars one afternoon, crawling along.....crawling along.....and finally as one by one of the cars in front of her managed to pass the slowmoving vehicle in gront of her she saw the "hold up" was Buddy...........getting towed home by his friends old heap:rotfl2:Now he hauled that 1979 rusting bucket of bolts to teh garage and had it fixed............after teh mechanic told him once again that it was not worth it. When it finally died the last time he had inched it into a mall parking lot. I cannot tell you how many calls we got within one hour of the folks who saw the poor old gal :rotfl: II told his friend who was picking it up to take it straight to the junk yard........do not pass home, the garage, the farm.........

Bear- Holy Habanero!!!!!!!!!!!!!!!!!!!!!!!! That sounds spicy! I remember when my Mom made chili and asked my DOnny to try it. He was dying....it seems she found a slew of "little" pepers in teh fridge and decided to use them all up :rotfl:

Aimee, what stands out to me in that pad thai recipe is the chipotle. Chipotle pepper is not typically used for Thai food. I can see why it would be too hot. Next time you make it, I suggest leaving out the chipotle and adding in some chili-garlic sauce and/or sliced jalepeno or serrano pepper. It looks beautiful though!

WFD: baked black beans, guacamole, pico de gallo, and quesadillas.
 
Well, to those who worry about the habaneros, you can certainly cut them out or down. It won't really affect the flavor, just the heat level. My wife doesn't like it that hot, but my kids do. And my wife rarely eats chili. So I don't really worry about the heat level.

One time - no kidding - my then 6 year old daughter had ordered buffalo wings at a restaurant. The waiter had the sauce put on the side because he thought the sauce was too hot for her. She asked him not to put it on the side, but he did.... Wait til you hear this.......

She looked at the waiter and said "Watch this!"....... and then she picked up the cup of hot sauce and drank it straight down! :rotfl::rotfl:

The waiter damn near fainted!

So, he took the wings back to the kitchen and put the sauce on the wings, and was shaking his head as he put them on the table in front of her.

Now, that wasn't habanero heat back then.... more along the lines of tabasco heat. Now she can eat habanero wings.... Both of my kids can, actually.
 
Ellen- I am beyond thrilled for you! A new grandchild to love! :cloud9: Of course Elizabeth is in my prayers, you did not even need to ask. Now promise not to laugh....I used to clean houses and most of my customers were elderly or infirm. I used to talk about all of them to my Mom so she always felt like she knew them and whenever there was a problem she just added tehm to her prayer list. I still talk to her and I still tell her everything so I imagine Elizabeth is already on her list. It is better now though, I think she is our own personal Angel so she has clout:goodvibes

Well hopefully I am all caught up. Thanks so much for all of your well wishes for Elizabeth. I am so excited, but somewhat holding my breath also. Ethan is 6 - will be 7 in June. They have been trying for 4 years, they have had 3 miscarriages and when she was preg. with Ethan Pre Eclampsia(sp) really terrible. They ended up taking Ethan 4 weeks early. She has been told to not risk it again but HERE WE ARE!!

The Lord really does have everything under control. We just need to learn to trust him more. She has been to the doctor and all levels are really good and so far she has no morning sickness. Another really good sign. She was sick 24/7 at 4 weeks.

I will be so glad once they see a heartbeat and a few more weeks into it. But all in all we are THRILLED.

Matthew is loving his internship. He did a deposit yesterday over $100,000 and balanced the vault so he felt good. He will do a 2 week rotation, telling, loan dept, appraisals, real estate and etc. so he will know all aspects. So far he loves it. Thank God as he graduates next year in this field. ;):lmao:

Ok I need to close this book :rotfl2: see this is what happens when you get behind.

Ellen - Thanks for worrying about me, but no, we are not in any danger of the floods. We are high up and away from the flood plain. We will be filling sandbags, though, as a service project with our church. It's hard work, but good for the kids. My SIL is really concerned, though. There was a fire on the mountain in her backyard about 6 or 7 years ago. If the flooding gets as bad as they are projecting, she could be in for some mudslides. Yikes!!!

Dinner plans changed. I had to run to the store for diapers, so I decided to try a new coconut chicken curry recipe from the Tasty Kitchen website. It cooks in the crock pot, so it sounds right up my alley!

Ellen – I don’t think I’ve ever been more ready for a trip than I am for this one. I’m really looking forward to seeing the world with my boy again, it’s been almost 4 years! I'm so happy that Matthew is enjoying his internship! Continued prayers for Elizabeth.:hug:
 
Holy bejesus its been a looooooong day.


The boy hurt his foot bad at fitbaw but still made it too school.
After lunch he had a sharp ear ache which made him feel dizzy and nauseous.
I was at the hospital with ma nephew ( i posted on FB ) so my MIL took the call.
They took him up to you doctors and he has an infection.

He is ok,I gave him some calpol and he is sleepin sound...poor wee scone....both ends are aching.

Im hittin ma bed,the hospital trip was emotional and Im deid in ma feet.
