The What's For Dinner Thread - March '11 (recipe index in OP)

:laughing: Most of their food makes me sick; I can eat the chicken strips, chicken sandwich (that is like ChickFilA's - I think it's the southern one?), or fish sandwich without too much issue. Occasionally, I'll have their angus burger with mushrooms and swiss and it's really tasty but usually doesn't like me.

But their fries and iced coffee? Crack.

Funny! All I can handle is the chicken nuggets, fries, and (sometimes) the coffee and milk products. Today I had the two cheeseburger meal. Bad idea.

Sorry it has been a while...just so very busy. Yesterday was graduation at the college and it was quite nice, although the iffy weather forced it indoors. Now I can do Aimee's word "chill-ax" a little...although our first garden is begging to be planted...there goes my chill-axing summer... (Aimee that is fun to say)

My thoughts and prayers are with you all in the flooding areas. Nothing seems right as far as that is concerned...

Thank you for the thoughts and prayers. They are doing what they are supposed to do in a flood situation like this. They built the spillways for this reason. It's difficult to knowingly flood people, but the decision had to be made. Doesn't make it feel any better, but there is just so much water it has to go somewhere. :sad1: The media headlines of the whole "sacrificial lambs to save New Orleans" are leaving out some of the information. The decision and ramifications are much more complex than that.
 
Well I made the meatloaf but I can't say which recipe.... ;)

I liked it, my one daughter liked it and she sorta hates meatloaf, and the other who loves meatloaf hated it. :rotfl:

I did make a "sauce" for the top.

1/4 cup DB sugar
1/4 cup Ketchup
1/8 cup water
1 tsp garlic powder
1 TBS red chile flakes
1/2 TBS onion powder

Stirred it all up and put it on top before cooking the meatloaf.

BTW, one tip I do - and I bet some of you might do - is line the bottom pf the loaf pan with bread. It sucks up the grease and totally prevents the meatloaf from sticking to the bottom of the pan. Still need to spray the sides, though.

BTW, my wife is in San Fran as I mentioned. Today is our 12 year wedding anniversary. She would have loved the meatloaf and hated the sauce. :)
 
Good Morning! I promise to BBL but wanted to share that I made the Crash Hot Potatoes yesterday...OH MY GOD! :love: SO GOOD!

I also made a flank steak that I marinated and then froze. I really love the asian marinade that I have already shared with all of you but this one was really good as well! I will definitely be using it again.

When I was cooking the steak, I boiled down the marinade to make a sauce. The boys really love that.

Dinner tonight will be chicken breast that I have marinating in a soy sauce, roasted pineapple, habanero sauce. It is so good. I think I will cook it in the crock since Andrew is supposed to have practice around dinner. Rice and a vegetable will accompany.

It's a dreary day here. It's supposed to rain all week.
WFD: maybe burgers? Or else a souffle.

Aimee, the scallops have a spice rub on them that I bought in the Carribean, so I can't give you the exact recipe, but here is what I did:

combine the juice of one lime with 2 tbsp. soy sauce and 2 tbsp. olive oil. Add seasoning to taste and marinate for one hour.

Preheat a cast iron skillet on a hot grill until smoking. Dump in the scallops and their marinade and cook, turning once, until carmelized and just cooked through. My scallops were very large and they took about 4-5 minutes total.

The sauce on the scallops is a cilantro-chile butter. I make this in large batches and then roll it into logs and freeze it. Then I can just slice off a piece when I want it. Here is that recipe:

2 sticks butter, softened
1 jalepeno or serrano pepper, minced
1 bunch cilantro, finely minced
juice of one lime
1 tsp. black pepper
salt to taste.

Combine everything well and freeze. Makes enough butter for many meals.

Good morning everyone. We had a busy weekend. Kenny's Uncle from West VA came down to visit and they left late yesterday afternoon. Add running Amanda to and from a birthday party 25 minutes away on Saturday and the usual weekend craziness, laundry, cleaning, etc. and I think I was asleep as soon as my head hit the pillow last night. I even hit the snooze button twice this morning and I don't EVER do that. And even after that, Kenny had to wake me to tell me the alarm was going off.

I've read back but don't know if my stupid computer will let me respond to everything. We're having problems again this morning. Our email system is down and they have to keep rebooting the system.

However, I do want to make sure to respond to Becky's Caili story. I love that! :rotfl: I can just picture sweet, shy, Caili busting out with the Stones. :rotfl: Good for her!

Tonight's dinner is whatever strikes my fancy at the store today. I didn't pull anything out of the freezer so I hope I find some inspiration when I get there.

Good morning, everyone! I'm so sorry that I went AWOL from Friday on. My only excuse is that Alan and I have really kicked into high gear to complete a documentary for the 50th anniversary of the Utah Shakespearean Festival. It's an all-consuming project, and it has to be in showable condition by Memorial day. So, every spare minute that we are together, has us hunched over the computers working our hearts out! Thank heaven the weather has been nice and we were able to kick the kids out of the house to play!

I'm happy to report that as of this morning, Katie is no longer failing any classes. She has 4 A's, 2 B's, and 2 C's. She's hoping to bring those C's up, as well. It's much better, but not what she can really do. I think she really had a wake up call!

BCB - I'm sorry I didn't see your meatloaf request before this morning! I tried one, that I think was posted here (someone correct me if I'm wrong), that was a bacon cheeseburger meatloaf. That has become my kid's favorite! My husband's favorite is my sweet and sour meatloaf.

Bethany - I'm glad you are keeping me posted on the flooding. I don't get a chance to watch tv, so I'm relying on you to tell me where my prayers are needed! By the way, I second the Pioneer Woman cookbook. Totally cool!!

Aimee - I don't know how you could do an all-nighter like that! I'm WAY too old!!! I love the movies, but I'm afraid I would definitely fall asleep!

We have the kid's school carnival today from 4-7:30, so things will get pretty hectic around here. Luckily I wasn't volunteered to do any baking for the bake sale this year. I am volunteering to man a booth for an hour, and then the kids will want to play, so I'm sure I'll come home with a headache! It will be fun, though.

Dinner will be chicken stroganoff with steamed broccoli on the side.

I am so far behind again, that I am going to just jump back in. Love and hugs to you all. Today is a new day and yesterday is a memory. :hug:

It was a cold and rainy weekend. Last night we were under a freeze warning. At 10 pm Doug and I went out and coverd all of my flowers and plants. This morning as we were taking the sheets off there were a few with a fine dusting of frost. WTH is up? We have never had a freeze this late.

Matthew is back in Lincoln, he left yesterday around 4. The house is so quiet today. He starts his internship at the Bank this morning. He was excited and scared at the same time. I have sure thought about him this morning. I can't wait to hear how his day went. I sure hope he likes it.

Doug has golf league tonight and I have Zumba tonight so a busy and quiet night.

WFDT ~ Homemade Chicken noodle soup and a crusty loaf of cracked wheat bread that I baked yesterday.

Ellen- Your dinner sounds perfect for a day like today, like Becky said, it's pretty rainy and dreary here- but we might get some sun Friday! I hope all your plants are okay.

Glynis- At least you have a reason, I just sort of dissapeared from here for a few days. It sounds like a fun project you and Alan are working on, your dad must be proud.

Gretchen- I'm back to work soon and I already know I'm going to have computer trouble. I reported it two weeks ago, and I will be very pleasantly suprised if it's taken care of when I start.

Becky- I loved the Caili story too. She reminds me of my kiddo, very quiet but every once in a while she gets you good.

Lauren- I love the crash potatoes too, we have them way to often.

Laura- The ballet program sounds really neat, hope she had fun.

Lauren - I had never heard of Crash Hot Potatoes, so I looked them up. Guess what?! -- We are trying them tonight!!!!!!! Can't wait! We love potatoes, but get tired of the same old thing...this sounds wonderful!

Kathy -- Are you all ready for your trip?? Are you planning on using the kitchen in the DVC villa or eating out the whole trip?

Wfd is leftover roast sammie with coleslaw and fruit.

I am tired from not doing much the weekend. Today was sunny and 56 degree yesterday was in the 40's windy and crummy. I want a refund on my weekend!

Julie Glad to see you back. I warn you those crash potatoes are really good especially with a little parm sprinkled on top.

Good for you Kathy! I usually don't cook on vacation either! I do like being able to have cereal or bagels, but that's about the extent of it.
