The What's For Dinner Thread - March '11 (recipe index in OP)

Vickie- Hope you get a good sleep, hospital trips are always draining. Hope you boy is feeling better soon.

Kathy- One of my favorite things about Disney it watching the ways my kiddo enjoys it at different ages, I'm glad you are still getting to enjoy that too!

Ellen- I'm back to work on Saturday. I'm looking foward to it, I love my job and most of the people I work with. The only downside is my husband and I don't have any of the same days off. We do this so the kiddo can be in her own home as much as possible during the summer but it's a little stinky. But then again, it's only a couple of months and she has so much fun with her dad.

Nancy- We've had similiar things happen, but it's with work trucks. One time the govener was broken on one of the trucks, on a one lane highway in the middle of summer. The truck wouldn't go over 40! The highway is one lane for 13 miles.

Aimee- I use sriracha chili sauce in my pad thai. I think 1 chipolte is a lot for 1/2 pound of noodles. It looks really tasty even if it was hot.

Tonight we are having "refrigerator chicken" and mashed potatoes. Need to go find a veg.
 
I'm not sure if I posted this before or not but we love it (It's from Tasty Kitchen):

Butter Chicken

Ingredients

4 pieces Boneless Skinless Chicken Breasts (cut Into Bite Sized Pieces)
5 cloves Garlic, Minced
1 teaspoon Salt
½ teaspoons Black Pepper
½ teaspoons Cayenne Pepper
¼ teaspoons Ground Coriander
¼ teaspoons Cumin
¼ teaspoons Cardamom
1 whole Lime, Juiced
1 whole Onion, Diced
¼ cups Butter
1 can (14.5 Oz. Can) Tomato Sauce
1 can (14.5 Oz. Can) Petite Diced Tomatoes
1 pint Whipping Cream
1 bunch Chopped Cilantro, to taste
2 cups Basmati Rice (or However Much You Want)

Preparation Instructions

Combine first 9 ingredients and marinate overnight.

Saute the onion in the butter until soft. Add marinated chicken and cook about 10 minutes. Add the tomato sauce and diced tomatoes. Cook for 30 minutes over medium-low heat with the lid on. Add the whipping cream (I have used light cream or half-and-half also) and cilantro just before serving over Basmati rice.

Note: this is a little spicy, but you can cut back on the cayenne if you want.
 
Well, to those who worry about the habaneros, you can certainly cut them out or down. It won't really affect the flavor, just the heat level. My wife doesn't like it that hot, but my kids do. And my wife rarely eats chili. So I don't really worry about the heat level.

One time - no kidding - my then 6 year old daughter had ordered buffalo wings at a restaurant. The waiter had the sauce put on the side because he thought the sauce was too hot for her. She asked him not to put it on the side, but he did.... Wait til you hear this.......

She looked at the waiter and said "Watch this!"....... and then she picked up the cup of hot sauce and drank it straight down! :rotfl::rotfl:

The waiter damn near fainted!

So, he took the wings back to the kitchen and put the sauce on the wings, and was shaking his head as he put them on the table in front of her.

Now, that wasn't habanero heat back then.... more along the lines of tabasco heat. Now she can eat habanero wings.... Both of my kids can, actually.

:rotfl: My oldest DN who is 10 loves spicy stuff, her little sister, who is 7, doesn't. When she was 3 and 4 anything that had the least little bit of spice, not hot, just slightly strong flavor, was too spicy for her. :sad2:

The boy hurt his foot bad at fitbaw but still made it too school.
After lunch he had a sharp ear ache which made him feel dizzy and nauseous.
I was at the hospital with ma nephew ( i posted on FB ) so my MIL took the call.
They took him up to you doctors and he has an infection.

He is ok,I gave him some calpol and he is sleepin sound...poor wee scone....both ends are aching.

Im hittin ma bed,the hospital trip was emotional and Im deid in ma feet.

Vic Wishing all of your family a good sleep. It didn't sound like it was a good day for you all.

I still have not decided on dinner. My day was busy and mostly playing catch up so needless to say not much got done.

My husband has a really nice truck that is just a couple of years old, but he really misses his big old not starting junking unsafe red ford with barely working seatbelts.
:laughing: At least you had AAA. I know that stretch of road on the Cape. I imagine there were many unhappy people. My parents always did the same thing with my mom and dad working different hours. I am sure it was hard on them, but it was good for us.

Liam Parker (I thought of you right away) and if it's a girl (which I so hope it is) she will be named after my Momma (Delores Jean) - Lola Jean.

Love the names! I was really hoping for a girl the second time around, but I think my parents, especially my dad, were more excited than I was when I got the ultrasound results. I'm glad Matthew is liking his internship.

Vickie -- I hope your boy is feeling better and you were able to get some sleep.

Laura- I am so glad that Liam is enjoying the season! How are you enjoying it? ;)

I enjoy watching the games, although I would prefer it to be warmer and less wet. I've been a lot better about calming my nerves when Liam pitches too. I think the first time, I was shaking the entire bleachers. I blamed it on the cold. ;) Your story about Marisa and Buddy had me laughing.

:rotfl: That is awesome! My son loves pepper. He would get along great with the Duchess from Alice in Wonderland. He likes some spice as well, but I put a chipotle in his black beans for his quesadilla last week and he couldn't eat it. Jalapeno...no problem. I just didn't have one.

Dinner tonight was pasta with red sauce and arugula salad. The kids also had some of Auntie Becky's homemade bread.

But a chipotle is nothing but a dried, smoked jalapeno, that usually just gets put in adobo sauce, which isn't hot by itself....

Thing is, what some people don't realize, is that some peppers can just be hotter than other peppers of the same type. They even grow a non spicy red jalapeno now..... it tastes just like a regular green one but without much heat at all.

HELP I bought jasmine rice thinking that was the kind of rice for making risotto but I think I am wrong. Will it still turn out ok or do I now have more rice to buy?
 
Janice- If it's not to late, I think jasmine rice tastes like tea. It has such a strong flavor it could ruin your rissotto. Keep in mind I hate jasmine rice, it's right up there with celery and cilantro- yuck.

You really need a short grain rice for risotto. I've never tried it with jasmine rice, so I don't know what will happen. Maybe Becky or Laura would know.
 
Chicken Stroganoff

Place 4 to 6 chicken breast halves in the bottom of a crock pot. In a small bowl, mix up 12 ounces of sour cream, one can of cream of mushroom soup, and an envelope of onion soup mix. Pour over chicken. Cook on low for 4-6 hours. At the end of the cooking time, cook wide egg noodles according to package directions. Shred the chicken with 2 forks and mix well with the sauce. Serve over the hot noodles.

:headache::mad: I just have to vent! I bought a new watch this past weekend and left it in the pocket of my pants. My DM washed it! :headache: When I said something about checking the pockets, she doesn't check mine because SHE empties her own pockets on the dining table. :confused3

In case I haven't told you all this I am not "allowed" to do my own laundry. :sad2: She "needs" my clothes to make a full load. Even though we specifically bought the washer we have because it has differant water levels. :sad2:

I didn't. Of course, my chicken was frozen, so there was a bit of ice. Just make sure that you know how fast your crock pot cooks. My low setting cooks about an hour and a half faster than most recipes call for, so I have to adjust my times.

Dinner was a jumble from the fridge. My Bunn coffeemaker is leaking but I was too cheap to buy another until it quit but this mornign I saw a brand new one on Craigslist for $35 so when the guy was able to meet me all bets were off.

i had just gotten home from shopping for Debbies induction into Vermont State Police next week. My mom the medal girl is not here to buy them so lets jus say that Debbie will have St Michael looking after her no matter which way she turns. I did have to put my foot down when Gail suggested a St Michael Tie pin. Buddy wants to get her something special from him and I know she wants an ankle holster. I need to find out if seh got one yet and if not if buddy can get one for her. I have no idea how the gun laws apply to gifts:confused3
 
Ellen - Thanks for worrying about me, but no, we are not in any danger of the floods. We are high up and away from the flood plain. We will be filling sandbags, though, as a service project with our church. It's hard work, but good for the kids.

Jasmine rice does not have the high starch content that you'll need for risotto....you can still use it, if the jasmine taste is okay with you; but it won't have that gluggy consistency that a traditional risotto has.

I have to tell you a little secret - Elizabeth and Jay have picked out names already (they have had 4 years to do this :lmao:) if it is a boy it will be Liam Parker (I thought of you right away) and if it's a girl (which I so hope it is) she will be named after my Momma (Delores Jean) - Lola Jean.

I love the names....are they going to find out whether the baby is a boy or girl beforehand?



WFDT - I have no idea. I've had two long days at work and am feeling really lazy today. Maybe we'll go to our favourite Middle Eastern shop down the road and get falafels and shwarmas for dinner.
 
Nancy I am not sure I understand what your question is about gun laws? Are you wondering if you need a FOID card to buy a holster?
 
Another grey, rainy day here. Did I mention that for 15 minutes yesterday we got SNOW! Yup. It fell, fast and furious, for 15 minutes, and then was done, but it was yucky!!! I'm hoping that it won't do that today, but will be content to stay as rain.

Aimee, what stands out to me in that pad thai recipe is the chipotle. Chipotle pepper is not typically used for Thai food. I can see why it would be too hot. Next time you make it, I suggest leaving out the chipotle and adding in some chili-garlic sauce and/or sliced jalepeno or serrano pepper. It looks beautiful though!

Yeah, the blogger that posted it said they really like smoky flavors so she subbed a chipotle for the serrano and since I had frozen chipotle peppers in the freezer, I thought I'd go with it... now regretting it :laughing:

I always wish I could tolerate spice more than I can. I've gotten better over the years but am still really sensitive to it. I had a prof tell me once that that means I have more taste buds but who knows if there is any truth to that.

Well hopefully I am all caught up. Thanks so much for all of your well wishes for Elizabeth. I am so excited, but somewhat holding my breath also. Ethan is 6 - will be 7 in June. They have been trying for 4 years, they have had 3 miscarriages and when she was preg. with Ethan Pre Eclampsia(sp) really terrible. They ended up taking Ethan 4 weeks early. She has been told to not risk it again but HERE WE ARE!!

This week is killing me - I've been running all over creation and clocking very few hours actually at my desk at work. I think my assistant may lose her mind before me, though :laughing:
